It was a rainy Friday afternoon and I was craving Pei Wei lettuce cups. I don't live anywhere near a Pei Wei so I made these pork stir-fry lettuce cups. This was a very long day. I've been looking forward to this taco salad all day and especially the ranch dressing. The older my kids get, the more night activities we have. The more night activities, the quicker dinner has to be. This was ready in about twenty minutes. Score! And it was liked by three out of four eaters. Make it ➡➡ Steam some jasmine rice. Heat some ghee in a pan over medium heat. Add a bag of coleslaw mix, three sliced green onions and a handful of cilantro. When cooked down, add a tbsp on coconut aminos and a few dashes of fish sauce. My son is taking acting classes on Tuesday nights so dinner had to be fast, healthy (of course!) and eaten by everyone. 30 minute chicken fajita tostadas tick all those boxes. Make it ➡➡ Thinly slice an onion and a handful of baby bell peppers (one big pepper would be fine). Take 1.25 lbs (this was 6 thighs) and lay them flat on a parchment lined sheet pan. Scatter the peppers and onions around the chicken. Sprinkle it all liberally with @balancedbites taco and fajita blend. Put some oil on the veggies and toss. Turn on the broiler and cook the chicken 18 minutes, flipping halfway through. It's still ridiculously hot and humid but this rainy weather had me craving spaghetti and meat sauce. Make it ➡➡ for the spaghetti squash, I cut it in half and spooned out the seeds. Drizzle each half with olive oil and bake cut sides down on a sheet pan for 40 minutes. For the sauce, I chopped up two celery stalks, 2 carrots and half an onion. I added the veggies and 1/2 tsp each of salt and pepper to 1 tbsp of butter in a Dutch oven. After the veggies are softened, I added in 1 lb of @moinkbox grass-fed beef. When the beef is done and in one 28 oz can of crushed tomatoes. Season with salt and pepper to taste. I woke up this morning dreaming of coconut curry. And this evening I made my dreams come true. Make it ➡➡I took 1.25 lbs of chicken thighs and cut them up in bite sized pieces. I sprinkled them with 2 tsp curry powder, 1/2 tsp each salt and pepper and 1/4 tsp each cumin and chili powder. I rubbed that mixture into the chicken and let it chill in the fridge for about an hour. When ready to cook I heated up a skillet with ghee (about 1 tbsp). To the pan, I added 1/2 a chopped onion and 4 minced garlic cloves. When the onion is translucent, I added in the chicken. Cook until almost done. Then I whisked together a can of coconut milk and 1 tbsp arrowroot starch. Pour this over the chicken and let it come to a simmer. Lastly, add in a couple of handfuls of spinach (or arugula). Still need a side dish for the holiday weekend? I've got ya covered. My cauli-rice salad will be a favorite. Make it ➡➡ I took one bag of @traderjoes riced cauliflower and cooked it over medium-low heat in 1 tbsp of olive oil. Season with salt and pepper. When cooked, scrape it onto a sheet pan and put in the fridge to cool. Then, quarter and chop three Persian cucumbers, slice two green onions and chop 1/3 cup of parsley. Whisk together 2 tbsp of olive oil and 2 tbsp of lemon juice and add 1/4 tsp each of salt and pepper. Add the veggies and dressing to the rice in a mixing bowl. Crumble 2-3 tbsp of goat cheese over the top and toss.
