What’s your favorite fall salad toppings? I love the combo of goat cheese and pomegranates. This salad was delicious BUT I really wanted a comice pear. The apple was a fine stand-in, though. Spaghetti Squash! Are you a fan? We love it with butter, garlic, parmesan and parsley. Make it ➡️➡️ First microwave the squash on half power for about three minutes. This will make it much easier to cut in half. Scoop out the seeds and drizzle with olive oil. Bake at 375 for 40 minutes. Use a fork to break up the strands of squash. In a large skillet, add two tbsps of @kerrygoldusa butter. When melted add two minced garlic cloves. Then add in the squash, parsley and salt and pepper to taste. Sprinkle on some @sartoricheese parmesan and @mccormickspice red pepper flakes. It’s so good. When did you learn to cook? I taught myself how about 10 years ago. We lived aways out of town and I figured we might die if I didn’t learn to cook. Truth. So I binge watched cooking shows, including my favorite program Sam @thecookingguy. His shoe was funny and relatable, something other cooking shows almost always lack. Confession: tonight is the first time that I’ve ever cooked with leeks. 😬 Frankly, alllll the washing turned me off. Lame, I know. But I saw them at the store and decided to try them out. Sooooo worth all the washing. I cooked the sliced leeks in ghee and olive oil and added parsley, lemon zest and lemon juice after they cooked down. I tossed that mixture with gluten free linguini, meatballs (ingredients in my stories) and a little cheese. Delicious!! Egg Roll in a Bowl can even happen with very limited veggie options and a grocery store trip isn’t going to happen. I seriously was giddy that this turned out. I cooked some ground pork and ,when done, I added a bag of cole slaw, one grated carrot, two very sad baby bok choy and a small shallot chopped. I cooked the veggies for a few minutes on med/high heat until soft. For the sauce, I mixed up 1/4 cup coconut aminos, 1/2 tsp each of ground ginger, garlic powder and hot sauce. I poured the sauce over the stir fry and served it with rice noodles. Dinner in 10 minutes, maaaaaaybe 15. And there’s even leftovers for my lunch tomorrow! Dinner for one tonight and I was pretty darn excited about it. I love my family BUT cooking what I wanted to eat while listening to a podcast and not having to push pause AT ALL was pure bliss. Now for an epsom salt bath and some baseball after this delicious broccoli and anchovy fusilli. Make it ➡️➡️ I boiled broccoli for about 4 minutes and then added in the @taste_republic fusilli for three minutes. Scoop out some pasta water and then drain the pasta. In a skillet, melt two tbsp @tinstarfoods ghee and 2 tbsp @caoliveranch olive oil. Then add 4 chopped @bellinospecialtyfoods anchovies and 3 minced garlic gloves. Add the broccoli, pasta and a little pasta water to make a sauce. Grain-free Pumpkin Pancakes!!!! And yes, all those exclamation points are necessary. They are that good. Make them ➡️➡️ 2 tablespoons of melted @tinstarfoods ghee, 1 tbl maple syrup ,3 eggs, 1/4 cup pumpkin purée, 1 tsp @primalpalate Pumpkin Pie Spice, 1 teaspoon vanilla ,1/4 cup of @malkorganics milk, 1/4 cup @bobsredmill coconut flour , 1/4 tsp cream of tartar, 1/4 tsp baking soda and 1/4 tsp salt. Whisk the ghee and syrup together. Then add one egg at a time to the mixture, whisking in between. Add the milk, vanilla and pumpkin. Add the flour, cream of tartar, soda ,salt and the pumpkin spice. Fold in all the dry ingredients just enough that it's mixed in. Too much mixing will give you flat cakes and nobody wants that. Warm some ghee in pan on medium heat. Drop in the batter (it's thick). Make the pancakes about three inches wide (about 1 tbsp of batter) or you will have a big mess. Flip carefully after a couple of minutes. They need about one minute on the second side.
