Different roasting times and temperatures bring out different flavours in cacao. 🍃 We roast our beans at a low temperature so that each bean can acquire a signature aroma. This is when the magic happens: the Maillard reaction. One of the hardest things we want to share with you is the true taste of chocolate to let you know that we’ve kept the original cacao flavour. So we’ve been showing you what it takes to make chocolate from scratch... After we grow, we harvest, ferment, the next step is drying.... 🍃Drying is a critical step in the chocolate making process, it allows the slow evaporation of the acids produced during fermentation and dries the beans to stabilized humidity.
