This Warm Freekeh Salad is dressed to impress thanks to @fishernutsbrand and their Non-GMO Project Verified, preservative-free walnuts! #ad β˜† Are you familiar with freekeh? Pronounced β€œfree-kah,” this ancient grain is similar in texture to rice, but has a higher level of protein, vitamins and minerals, making it a great base for the salad. β˜† I took this salad to the next level by adding roasted zucchini and perfectly caramelized onions. For a sweet, crisp crunch I threw in apple slices, and finished the dish off with peppery arugula and a homemade walnut vinaigrette. β˜† I like to add a nice pile of feta cheese for a finishing touch, but you can omit it to keep it #veganfriendly. β˜† 2 tablespoons olive oil, divided 1 small sweet yellow onion, thinly sliced 2 small zucchini, quartered 1 cup freekeh 2 cups arugula, loosely packed 1 small honeycrisp apple, cored and sliced 1/2 cup feta cheese salt and pepper, to taste β˜† 1/4 cup Fisher’s Nuts walnuts 1/3 cup olive oil 2 tablespoons white wine vinegar 2 teaspoons honey 1 1/2 teaspoon dijon mustard salt, to taste β˜† In a large skillet over medium-low heat, add 1 tablespoon olive oil, followed by the onions. Stir the onions to coat, then allow to cook down until very dark and jam-like, around 60 minutes, stirring every ten minutes. β˜† Preheat oven to 425 degrees and line a baking sheet with parchment paper. Toss the zucchini with remaining tablespoon of oil and sprinkle with salt. Roast in a single layer on the baking sheet for 30 minutes, or until lightly browned. β˜† In a food processor, add the dressing ingredients and process until smooth. Transfer to a bowl and set aside. β˜† Prepare 1 cup freekeh according to package instructions. Transfer to a large bowl and stir in the arugula. Scoop the zucchini into the bowl, followed by the caramelized onion, apple, and feta.
