Welcome to Lauren’s almond milk latte tour around the world! ☕️🌎 . I learned very quickly that Las Vegas doesn’t care about good coffee. I also paid $9.20 for a Starbucks drink. So DON’T do that and instead explore around the giant hotel and casinos! I found a tiny coffee place tucked away in the old style decorated corners of the New York, New York casino. And okay, I cheated a little and got a Nutella flavored almond milk latte because well...when in Vegas right?! Oh and iced. It was 112 degrees. 8/10 on this! I think I was tagged a LOT in the “what’s in your coffee” post that was going around a few days ago thanks to @watchkittyshrink ! Which is fair, I love my coffee. 😻☕️ . If you’ve ever watched my stories on a Wednesday, you already know how I make my coffee. But for everyone else: •1 cup (8oz) homemade coldbrew concentrate - heated up in the microwave 😉 •1 cup (8 oz) soy milk •A bunch of non-dairy creamer, preferably hazelnut •Sea salt! . This week I made cold brew with some super dark roast German coffee (World Cup themed none the less!) that the incredible @foodieturnedsleevie sent me! I like using soy milk because it’s 8g of protein but I don’t need to drink a nasty protein shake to get some “profee” (sorry to all the shake lovers out there 🤪). I’ve been trying every brand of non-dairy creamer under the sun as I’m fairly newly vegan. Let me know if you have any suggestions below! . Spinach Artichoke Dip Pizza!🍕 🌱Vegetarian and Vegan Friendly🌱 . Ingredients: - 1 pizza crust (pre-made, or 1 lb of pizza dough) - 8 oz artichoke hearts, drained and chopped - 4 cups baby spinach - 2-3 cloves garlic, minced - 4 oz cream cheese (I used vegan) - ¼ cup (2 oz) mayo (I used vegan) - 4 oz mozzarella (I used vegan) - Olive oil - Salt, Pepper, Garlic Powder . Directions: 1. In a skillet over medium heat, add 2-3 tsp of olive oil. Sautee minced garlic for ~1 minute, until fragrant. 2. Add chopped artichoke hearts to pan along with 4 cups of baby spinach. Cook until spinach had reduced down, about 4-5 minutes. 3. Turn heat to low and add 4 oz cream cheese, ¼ cup mayo and lots of seasonings (salt, pepper, garlic). Cook until bubbling slightly, 4-5 minutes. 4. Remove from heat and spread onto pre-baked pizza crust. Top with 4 oz (1 cup) of mozzarella cheese. 5. Bake in pre-heated oven (Mine was 400F) according to the instructions on your pizza crust package. 10-15 minutes, until the cheese is melty and delicious! . Makes 8 slices of TO DIE FOR pizza! . Nutrition (per 1 slice-vegan version): 210 calories 14 g fat 18 g carbs (total) 4 g fiber 5 g protein 248 mg sodium . This is an easy, 20-30 minute dinner option (if you use pre-made crust) and it is hands-down one of the most delicious variations on pizza I’ve ever made! I make no claims that it’s “healthy” but it’s incredible and filling, and can easily be made vegan. I can find vegan substitutes for cream cheese, mayo, and mozz cheese at ANY grocery store- I promise you can too (check the area near the tofu/wonton wrappers)! Also, if you choose to make it with the dairy versions, it will have significantly more protein. This one is a must try either way! Joe and the Juice is just a few blocks from both Times Square and Central Park, and I figured I couldn’t go wrong with a coffee shop that had a pink logo! . I waited in a long line to grab my 16 oz latte ($4.40) and was tickled pink (wait for it) by the fact that it was in a PINK cup! My love for pink aside, this was the worst latte I’ve ever had the displeasure of drinking. Very watery and it was so hot I couldn’t even sip it for an hour! 2/10. I don’t even think I finished it. So to add as much hipster value to the trip that I could, I rode my bike there! 🚴🏻‍♀️ . I procured my medium latte ($4.50) and had a blast meeting and chatting with the new baristas. The coffee was delicious! 🍝🍠Roasted Butternut Squash “Cheesy” Lentil Mac 🌱Vegetarian and Vegan Friendly!🌱 Ingredients: - 12 oz butternut squash, cubed - ½ white onion, chunked - Lots of garlic salt! (or garlic powder + salt) - ½ tbsp olive oil - 1/3 cup vegetable stock (I used no chicken better than bullion to make mine) - 8 oz (1/2 lb) lentil pasta (whatever shape you like) - ½ cup nutritional yeast - ½ tsp dried mustard powder - ½ cup panko breadcrumbs - ½ tbsp vegan butter (I used Miyoko’s cultured butter) Directions: 1. Preheat the oven to 400. Mix your cubes of squash and onion on a baking pan with the olive oil and lots of garlic salt and pepper. Roast for 30 minutes. 2. While veggies are roasting, cook the lentil pasta according to the package instructions. Don’t forget to heavily salt your water!! Drain and set aside. 3. Add roasted veggies to a blender or food processed with nutritional yeast, mustard powder, and ½ of the veggie stock. Blend well. Add additional stock until smooth, but still thick consistency is achieved. Taste for salt and pepper, add if needed. 4. Toss with the pasta and transfer to a small casserole dish. 5. Melt butter in the microwave for 20 seconds. Toss with the panko breadcrumbs. Use the mixture to cover the entire top of the lentil bake! 6. Bake at 400 for an additional 10-15 minutes, or until the topping is golden brown and delicious. This recipe makes 4 servings (166g or 5.5 oz each) Nutrition per serving: - 256 calories - 1.5 g fat - 43 g carbs (total) - 8 g fiber - 17 g protein I Frankensteined this recipe together after being inspired by @thatswhatsheeats version. I knew I wanted to make mine cheesy, and I had never used nutritional yeast before, so I figured why not! I am happy to report it is in fact incredibly delicious, and the sauce reminds me of a cheesy tuna casserole! I absolutely loved this and will certainly be making it again in the future. I’ve spent the last month trying out @orangetheory fitness! I’ve done the hour long workouts twice a week, every week for 30 days. So I’m using this #transformationtuesday to celebrate! . I think the workouts are enjoyable (except on heavy rowing days 🤮) and I feel that I’ve gained more endurance with running AND muscle strength from the weights! I highly suggest giving it a shot if you’ve never tried it - your first class is free! . I get a lot of questions about exercise, and I want to take another minute to reiterate that of course it’s important! But nutrition is much more so. I work out twice a week and make sure to stay active (whether that’s a walk to the grocery store or dancing while cooking dinner) on the other days, and feel fantastic! 🐷🌱BBQ Pulled “Pork”!🌱🐷 Vegetarian and Vegan Friendly! Ingredients: - 1 -20 oz can of green jackfruit in brine/water - ½ onion, diced - 1 clove garlic, minced - ½ tbsp coconut sugar (or brown sugar) - 1 tsp chili powder (add 1 tsp more if you want spicy!) - 1 tsp BBQ seasoning (or replace with 1 tsp chili powder) - ½ tsp cumin - ½ tsp smoked paprika - ½ cup of your favorite BBQ sauce - ¼ cup water - salt and pepper! . Directions: 1. Open the canned jackfruit and place in colander/strainer and rinse well. Use your fingers to break apart the biggest chunks the best you can. 2. Heat a pan over medium-high heat with some olive oil. Add diced onion and jackfruit. Salt and pepper WELL. Sautee and allow to caramelize for 5-8 minutes! 3. Reduce heat to medium. Add sugar and seasonings and stir to combine. Add BBQ sauce and water, scraping bottom of pan to deglaze. 4. Once mixture bubbles, turn heat all the way down to low and cover pan with a lid. Allow to gently simmer for as long as you have time for, but no less than 20 minutes. Every 5-10 minutes, add a splash of water (about a tbsp each time) to prevent everything from drying out. 5. Before serving, use a fork to smash/shred up any remaining chunks of jack fruit. Enjoy! . Nutritional Information Above recipe makes 3 - 1/3 cup servings. 🥕🥟Veggie Dumplings🥟🥕 Vegetarian and Vegan Friendly! . Ingredients: - ½ yellow onion, diced - 1 tbsp olive oil, divided - 2 cloves garlic, minced - 1 can sliced mushrooms (drained) - 1 cup frozen, shelled edamame - 3 oz carrots, chopped or shredded - 6 oz (1 cup) shredded cabbage - ½ tsp ground ginger - 1 tbsp soy sauce (low sodium) - 1 tsp sesame oil - Salt and pepper - 25 wonton/dumpling wrappers - Dipping Sauce: - ¼ cup soy sauce - 1-2 tbsp rice vinegar (I used 1 tbsp) - Optional: sprinkle red pepper flakes for spicy sauce! . Directions: 1. Finely dice ½ of an onion. To a large sauce pan, add 1 tsp of the oil. Over medium heat, sautee the onions and mushrooms until browned and translucent Salt and pepper well. (6-7 minutes) 2. Add the garlic, shredded/sliced carrots, edamame, cabbage, soy sauce (1 tbsp) and ground ginger to this mixture. Salt and pepper well. Continue to cook over medium heat until cabbage softens. (~5 mins) 3. Remove from heat and stir in sesame oil. Allow to cool for 5 minutes. 4. Assemble the dumplings! To the center of the wrapper, add no more than a spoonful of filling. Use your finger to wet the edges with water and seal in anyway you see fit. 5. Over medium heat, add the 2 tsp of additional olive oil. Add filled and closed dumplings to the pan. Allow to fry for 2 minutes. Then, add ¼ cup water to the pan and place a tight fitting lid, allowing the dumplings to steam for 4 additional minutes. 6. Remove from pan and serve with tangy, salty dipping sauce (Just mix sauce ingredients together)! Enjoy! . Makes 25 dumplings. Nutrition (per dumpling): 37 calories 1g fat 6g carbs (total) 5g carbs (net) 2g protein These were so yummy! I ate about 7-8 and was very satisfied. The dipping sauce really makes this dish so don’t skip that part! I’m not going to lie, making dumplings is a pain in the butt and the assembling part takes like 20+ minutes. 🍝Deconstructed Brown Butter Walnut Ravioli🍝 Vegetarian and Keto Friendly! Ingredients: •2 cloves minced garlic •1 cup ricotta cheese •4 oz cream cheese •1 tsp lemon juice •2 tbsp salted butter •¼-1/2 tsp dried sage •¼ cup chopped walnuts •2 medium – large zucchini squash •Salt and pepper •Tomato sauce for plating (optional) Directions: 1. Wash and spiralize your zucchini into zoodles! If you don’t have a spiralizer, you can create flat zoodles with a vegetable peeler. Transfer to a plate and microwave for 5 minutes. 2. In a large frying pan over medium heat, add a splash of olive oil and your crushed garlic and cook for 1 minute. 3. Melt cream cheese and ricotta cheese in the pan with the garlic. Keep on medium low heat, and add the lemon juice, stirring well to avoid curdling. Season WELL with salt and pepper. 4. In a separate, small pan, melt the 2 tbsp of butter over medium low heat. Continue to cook until butter is bubbly brown bits start to form on the bottom (2-3 minutes). Add dried sage. Add the walnuts and toast an additional 1-2 minutes. 5. Combine the butter/walnut mixture with the cheese mixture. 6. Add the zoodles to the cheese mixture and stir to combine/coat. Season WELL with salt and pepper. (Zoodles need a good bit of salt). Keep on medium/low heat and allow to simmer for 5 or so minutes to finish cooking zoodles and allowing extra water to evaporate. 7. Optional, but tasty, serve coated zoodles over a tbsp or so of your favorite tomato sauce! Enjoy! . This recipe makes enough for 4 servings. Nutrition Per serving: 316 calories 25 g fat 7 g carbs (total) 5 g carbs (net) 12 G protein . This light and cheesy take on zoodles was so tasty! I can’t take all the credit – I adapted this recipe from @lowcarb.nancy so thank you for the inspiration. Just a quick note – I used to really dislike zoodles until I discovered cooking them in the microwave first really helps take away a lot of bitterness, so definitely try that! 🌮🌯7-Layer Dip Baked Toastadas🌯🌮 Vegetarian Friendly! Ingredients: * 4 corn tortillas (6 inch) * 16 oz can refried beans • 1 tbsp taco seasoning (I make my own) * 1/2 cup frozen corn * 1/2 cup Mexican blend cheese * 2 oz guacamole * 1/4 cup sour cream * 1/4 cup sliced black olives * 1 small Roma tomato (or salsa) . Directions: 1. Preheat oven to 400 F (205 C). Spray 4 corn tortillas with olive oil or coconut oil spray and sprinkle a bit of salt. Bake for 8-10 minutes, until crispy. 2. In a medium pan, add can of beans, corn, and taco seasoning. Heat over medium heat until everything is warm and bubbly (about 5 mins). 3. Dice tomato into small pieces. Season with salt and pepper. 4. Assembly time! Assemble in anyway you like, but here’s what I did on one Toastada base: - 1/3 cup bean/corn mixture - 2 tbsp cheese - 1 tbsp guacamole - 1 tbsp sour cream - 1 tbsp sliced olives - 1/4 chopped tomato 5. Enjoy!! Recipe makes 4 servings. One serving is one loaded up toastada. . Nutrition: (per serving) * 298 cals * 9g fat * 38g carbs (total) * 30g carbs (net) * 13g of protein . 🍛One-pot Sweet Chili Cauli Stir Fry!🍛 🥦Vegetarian and even Vegan Friendly! 🥦 . Ingredients: • 1 bag TJs cauliflower stir fry (frozen section) • 8 oz sliced seitan (or your favorite protein) • 2 cloves garlic, crushed • 6 oz frozen green beans • 1 tbsp low sodium soy sauce (or aminos) • 3-4 tbsp sweet chili sauce • salt, pepper, garlic powder to taste . Directions: 1. In a large wok/frying pan heat a few tsp of olive oil on medium high heat. Add sliced seitan. Season with salt pepper and garlic powder. Cook until browned. 2. Lower heat to medium. Add crushed garlic and cook for 1 min. 3. Add entire bag of cauli stir fry. Cook 5 minutes. 4. Add frozen green beans, cook additional 5 minutes. 5. Finally, add soy sauce and sweet chili sauce. Cook last 5 minutes or until all sauce is absorbed! . Nutrition: Makes 4 servings! • calories: 202 • fat: 4g • carbs: 25g (total) • protein: 19g . —You don’t need the TJs premade stir fry! Just use cauliflower rice and your favorite frozen veggies. Cook “rice” an additional 5-10 mins! —Seitan can be found in the refrigerated section at your grocery store, usually by the wonton wrappers. It is made from vital wheat gluten and has a chewy, meaty texture. —That being said I’ve made this dish dozens of times with pork chops so really use your favorite protein!
