Smokey scrambled eggs 🙌 Sick of normal eggs? Then add some @mingleseasoning Smokey flavor (i am slightly obsessed in this blend from @keto_eats_australia ) I also added some grated Parmesan cheese, 1/2 teaspoon of Dijon mustard, chopped parsley, 2 tablespoons of heavy cream and 2 eggs. Whisk it all together with a fork and cook in a fry pan some butter. So delicious 😋 especially next to some avocado and bacon.

Early dinner tonight so I can get in a longer fast tomorrow. Sausage stir fry. Yum yum.

2018 has been about showing these boys what you can achieve if you stay positive and set goals. I hope I have shown them that life can throw curve balls but you are always in control of how you approach it, you are the one who decides how it will affect you and how you will get through it. I want to teach them how to live a healthy and adventurous life. . I am so excited for the new year ahead, new goals, new adventures and new friends to make. I have a bit of a challenge ahead to get to that October marathon but I know in my heart that I will get there.

Morning recovery walk done. I’m really enjoying waking up and heading straight out into the fresh air. It’s a great start to the day and although I would prefer to be running it is a step in the right direction, it’s forward and it’s more than I could do a month ago 😍

Chicken meatballs on a avocado and basil purée with broccoli and asparagus. . . Chicken meatballs 500 grams chicken mince 1 strip of middle bacon Fresh herbs of your choice (I used sage, lemon thyme and parsley) Spices of your choice ( I used paprika, ground cumin and a little chilli) 1 teaspoon of Dijon mustard Salt and pepper pinch of both 1 cup of grated Parmesan 1 egg 1/2 cup of almonds ground . . Set the oven to 200 degrees Celsius 1️⃣Cook your bacon in a pan 2️⃣Meanwhile add all ingredients into a large bowl and mix together well. 3️⃣Once bacon is cooked chop it into small pieces and add to the mix. 4️⃣lightly wet your hands - this helps roll the chicken. Roll then into your desired meatball size. 5️⃣ lightly fry them in some coconut oil and butter ....just to seal them and then add them into an oven dish and into the oven for 15 min. . . Avocado purée - half an avocado, 5 basil leaves and a teaspoon of lemon juice. Mix together with a stick blender.

They are a group of amazing women and I am so proud to be a part of this group. Everyone has your back, they are so supportive and when you turn up at a race you head over to any rma you see (usually wearing the tops or hats) and say hello and you have an instant new friend. (You will be cheered on from the sidelines or high fived during the run. There is also a private Facebook group where we can all chat running and seek advice from fellow runners. There are over 35 thousand supportive women on there who have been a massive support for me during my injury. Don’t worry if you are not a Mum....there are pet mums on there, and “one day mums”. . . At the start of October I was still in a moon boot with a broken heel so I pledged I would walk a minimum 5km to help raise awareness and raise much needed funds for @sharethedignityaustralia alongside @runningmumsaustralia . I’m excited to say I managed to walk 10km throughout October without a moon boot on and still recovering. . Share the dignity provides personal care products to homeless, at risk and women and children experiencing domestic violence. . .

Breaking today’s fast with one of my favorites...crispy cheese omelette, filled with bacon and asparagus. Served with spinach and avocado. I also sprinkled some @mingleseasoning Smokey spice blend from @keto_eats_australia inside the omelette and wow the flavors are amazing!!!

Day 12 : 12 Days of Keto Christmas . Keto Custard - recipe by @havebutterwilltravel . I can’t believe it took me over 2 years to make some keto custard! I think I was scared it would just not live up to the custard I grew up with ....ooooh I’m so happy to say this keto custard is amazing! It’s creamy and smooth and the perfect vanilla flavor! I found their recipe on Pinterest but check out their Instagram page too, they have amazing recipes. . This custard works beautifully just like this with a few strawberries and walnuts or you could make a Christmas trifle or custard over a keto cake or crumble. Whatever you desire this custard will not disappoint. . #12daysofketochristmas

Keto Ice Cream!!!! 🍦 🍦 Choc Hazelnut keto ice cream 🍦 I was so excited to use my new ice cream maker from @aldiaustralia and it did not disappoint. I used @martinaslajerova recipe for keto creamy chocolate chip ice cream (found on Pinterest) instead of choc chips I used hazelnuts and I used @temple_nutrition MCT Oil....who knew that could replace vodka in ice cream!! I also used the ingredients I got from @keto_eats_australia today. (Swipe through the pics to see ingredients) and search @martinaslajerova for the recipe. . . I’m so excited thinking about all the other flavors I can make 🤣😍
