My hubby came home tonight craving dessert or chocolate, so rather than watching him eat something I didn’t want to have whilst I’m on this 8 week summer body challenge, I made some 90% Lindt, almond butter and coconut oil chocolates. So good!!! And we both felt like it was a treat!

Keto Lasagne! I love love this! So tasty and full of flavors! I use @peaceloveandlowcarb recipe for the pasta replacement and then the rest of the recipe is how I like to cook it. See below 😋 . .peace love and low carbs lasagne layer; (make this first..you could make anytime and keep in the fridge) 2 large eggs 4 oz cream cheese, softened 1/4 cup Parmesan cheese, grated 1 1/4 cup mozzarella cheese, shredded 1/4 tsp Italian seasoning 1/4 tsp garlic powder 1/4 tsp onion powder Method: Preheat oven to 375° Line a 9×13 baking dish with parchment paper In a large mixing bowl, using a hand mixer, cream together cream cheese and eggs. Next, add Parmesan cheese, Italian seasoning, garlic powder, and onion powder. Mix until all ingredients are well combined. Using a rubber spatula, fold in mozzarella cheese and mix until well incorporated. Spread the mixture into the baking dish, forming a nice even layer. Bake on the middle rack for 20-25 minutes. (Put in fridge to cool) . . The mince ; I used beef grass fed mince cooked with garlic and zucchini, added some fresh herbs, added 2 cups of my roasted tomato and roast capsicum sauce (you can use whatever you usually use or see my recipe in saved stories) I then added 1 tablespoon of @meadowmarrowbonebroth to a cup of hot water and poured this in with the sauce, let it simmer then once cooked add a layer to the bottom of your lasagne dish. Place the above made cheese layer on top. I then add a coconut cream and Parmesan cheese and 1 tablespoon of Dijon mustard) just cooked on stove top). I just drizzle this over the top. Then sprinkle a little mozzarella and rosemary. Into oven and yum yum in your tum!!! . I only make one layer with it as it’s very filling.

I can’t even believe this was me now that I look at this. This was a couple of weeks before I decided it was time to do something about my unhealthy lifestyle. Almost 2 years ago!!! . . At the end of the day it’s all down to you, you can sit and feel sorry for yourself or you can put on the boxing gloves and take charge!

Chicken breast stuffed with bocconcini, sundried tomatoes and spinach then rolled in a chili, paprika and garlic salt mix. Into the oven for 20/25 min. The chicken is sitting on an avocado and sour cream purée. The veg has a drizzle of keto hollandaise over the top. So good 😋 #8weeksummerbodychallenge

Lunch today breaking my fast at 1.30pm that’s a 19.5 hour fast today. I took the boys out to dinosaur world and of course forgot to pa k any lunch for myself so I’ve held out. . . Crispy cheese roll ups filled with avocado. Celery and Almonds.

We have family over for dinner tonight so I made zucchini noodles spaghetti bol with a roast tomato home made sauce and some @meadowmarrowbonebroth. Also a fathead cheesy garlic bread. #8weeksummerbodychallenge

I don’t know how my story will end, but nowhere in my text will it ever read ..... “I gave up” . . 8 weeks today since I broke my heel and in 3 days I get to take this moon boot off and start focusing on building my strength back up! Bring it on!!! I will be running by December!!!! Just try and stop me 🥊

All eyes on the Almond butter waffles 🤣 served with some lemon cream and strawberries 🍓 . . Blend 2 eggs and 2 tablespoons of almond butter together. Add a tablespoon of MCT oil, quick stir then into the waffle maker. Delish.

Cloud bread mini pizzas! I made some cloud bread (swipe to see) and recipe below. I added low carb tomato sauce on top, mozzarella and bocconcini, a little bacon and rosemary. Delicious and very light. . . Cloud Bread * 3 eggs, separated * 3 Tablespoons cream cheese * ¼ teaspoon baking powder (or cream of tarter) * Optional: ½ teaspoon Rosemary seasoning * Optional: ½ teaspoon sea salt * Optional: ¼ teaspoon pepper Instructions 1. Preheat the oven to 350 degrees Fahrenheit 2. Separate the egg yolks from the egg whites. 3. In the egg yolks bowl, add the cream cheese and mix it with a hand mixer until it's fully blended. 4. In the egg whites bowl, add the baking powder 5. Whisk egg whites until they are fluffy and hold a peak 6. Gently fold the egg yolk mix into the white fluffy egg whites. Don’t over fold or they will go runny again. 7. Spoon the mixture into size portions on a baking tray with parchment paper and sprinkle fresh herbs or sesame seeds on top. 8. Into the oven for 15-20 min or until golden brown on top and bottom.

10 days into the 8 week summer challenge. so far going great! . . . I am 1.2kg down. my goal is to lose 3kg . . * I am no longer craving snacks . . . * I am feeling really motivated each day to be good and hit my targets . . . * I have stopped having almond or coconut milk in my coffee the last few days because I’ve realized the coffee I enjoy the most is my morning espresso with MCT oil. So I just have 2 of those. . . . * I’m doing weights, push ups, sit ups everyday and some days boxing.....this will hopefully also include reformed Pilates again and running once this moon boot comes off . . . * I have taken up meditation in the last 10 days and I am loving it. It has really helped me think about my moods, how I feel at the start of each day, how I react to situations and how to control my stress. . . . It’s not too late to join this challenge with @fatforweightloss It helps to do these challenges when you are with a group 😊

(Swipe to see Macros for today) . . one of my favorite recipes for dinner tonight. Creamy lemon and garlic chicken with cauliflower purée. . . Creamy Lemon and garlic Chicken Pre heat oven to 180 degrees Place chicken breasts into an oven dish Drizzle olive oil or avocado oil over the top Sprinkle some lemon zest, lemon thyme and rosemary over the top then into the oven for approx 20 min or until chicken is cooked. Creamy sauce: in a saucepan add a cup of cream, the juice of a lemon, a teaspoon of @meadowmarrowbonebroth the lemon and herb and a teaspoon of lemon rind, a pinch of garlic salt or some crushed garlic (not too much or it will take away that lemon flavor) and a 1/4 cup of shaved Parmesan. Let the sauce simmer and whisk it every now and then. It will thicken a little. Let it sit for a few min to thicken more. Then spoon over the top of your cooked chicken on your plate. . . #8weeksummerbodychallenge

I just made these amazing crunchy keto almond butter cookies with the kids. I am being good so I only had a bite but the boys are loving these!! . The recipe belongs to @ketochix which are keto peanut butter cookies but I swapped to almond butter and I only used a tablespoon of stevia. Delicious recipe. Check out her page to find this “crunchy” delicious dairy free and flour free cookie!!

I look back at different obstacles I have overcome in my life and I know that’s why I feel as strong as I do today. I was so shy, low in confidence, never really spoke up about what I believed, always had a problem with my body and I really don’t think I appreciated my life like I do today. . Maybe some of that comes with age but it’s thanks to the challenges I have gone through I am who I am today. . I’m feeling stronger, healthier, confident and appreciative of my life. . Look at each obstacle thrown your way as a lesson and smash it down. Once you get over that you are going to feel so much stronger and ready for the next. ❤️

Steamed Zucchini chips coated in a coconut crumb with a herb mayo to dip them in or an avocado and sour cream dip is great too. . . I really couldn’t figure out what I felt like for dinner, I think I’m just not too hungry (this fat Adapted stuff is great 🤣) so some of these for the kids and some for me. . . Just steam zucchini sticks, coat them in coconut flour then egg then shredded coconut and Parmesan, fry in coconut oil .
