Shakshuka baby 😍.
Okay, I’ve never had Shakshuka before, it looks SO delicious, but eggs in tomato sauce? I dunno. But I decided to give it a go and guys, it was amazing 🤤. Most Shakshuka is Mediterranean or Middle Eastern, but something about an Italian twist just felt right. I have no clue if it’s legit Shakshuka, but it’s delicious.
🍳🍅 Italian Shakshuka
• 1/4 C chopped onion
• 1 t minced garlic
• 1/2 C chopped spinach
• 1 can Italian diced tomatoes
• 2 t @feastmodeflavors Italian Fusion seasoning
• 2 eggs
• Parsley and green onions for garnish
In a pan or cast iron skillet, spray lightly with nonstick spray. Sauté onions until soft and translucent. Add garlic to the pan and cook until fragrant. Add spinach and cook until wilted. Add tomatoes and seasoning and simmer until heated through. Stir periodically and smash tomatoes as they cook. Once sauce is bubbling, make little spaces and crack eggs into them, being careful to not break the yellow. Cover and cook for 5-7 minutes until whites are set and yolk is runny. Remove from heat and leave covered for another few minutes. Garnish and enjoy the whole thing!
For those on the 5&1, you can do this for your lean and green. Just skip the onions, measure your tomatoes out, and add 4 egg whites to complete your lean. If you aren’t on the 5&1, I HIGHLY recommend serving with some crusty bread 🥖😍.
