Choc Chip Pumpkin Cookies || - Kids / Adult Snack - . . - 1 & 1/4 cups pumpkin purée - 1.5 cups rolled oats - 1/4 cup honey - 1tsp cinnamon - 1tsp vanilla extract - dark choc chips (I didn’t measure) . . - Preheat oven to 180deg. - In a large bowl mix the pumpkin with the rolled oats. - Add the cinnamon, vanilla extract and honey, stir to combine. - Once everything is mixed through stir in some dark chocolate chips (as many or as few as you like). - Spoon tablespoonfuls onto a lined baking tray. - Bake at 180deg for 8-12 mins or until set. - Store in an airtight container in the fridge. . . #snack #snacks #cookies #pumpkin #lunchbox #lunchboxideas #lunchboxforkids #kidsfood #kidsnacks #glutenfree #vegetarian #foodblog #foodblogger #fuelmyfamily

Chicken & Vegetable Stir Fry || . . . - Chicken breast, sliced into 1cm strips - Broccoli (including stem), chopped - Carrots, cut into matchsticks - Capsicum, sliced - 1tsp crushed garlic - 1tsp crushed ginger - 2tbs soy sauce / tamari - 1tbs fish sauce - 1tbs sesame oil - Low cal noodles, drained & rinsed - Fried onions - Dried chilli flakes - Black Pepper . . . - Heat wok over high heat. - Season raw chicken strips with cracked black pepper. - Add oil to wok, heat, add chicken strips and stir fry for about 2-3 mins. - Add garlic & ginger, stir fry for 1 minute. - Add carrot, capsicum & broccoli, stir fry for 2 mins. - Add noodles, stir fry until noodles are warm. - Pour in soy sauce & fish sauce, stir to coat everything. - Remove from heat, serve in a bowl topped with the fried onion and dried chilli flakes. . . . #dinner #meal #fastfood #stirfry #chicken #vegetable #protein #lowcarb #lchf #paleo #glutenfree #grainfree #keto #foodblogger #foodblog #healthy #nutrition #fuelmyfamily
