These are on the messy side to make but wow they taste incredible. Rich, smooth and totally decadent these chocolate coffee truffles are just the sort of treat that are perfect for the festive season. Better yet there’s no added sugar and they are really easy to make:
400g good-quality dark chocolate
3 tbsp Harpoon cold brew concentrate
1/3 cup cocoa powder
1 cup heavy cream
1 tbsp unsalted butter
Careful melt the chocolate in your microwave, then set aside. Next combine the cream, butter and Harpoon in a medium saucepan and heat until the mixture just starts to bubble. Remove from the heat and carefully pour over the melted chocolate a bit at a time, mixing as you go. Add the salt and stir until smooth. Refrigerate for at least 3 to 4 hours.
Using 2 teaspoons, scoop balls of chocolate and roll them between your hands to form uniform balls about 5cm in diameter. Roll each ball in the cocoa mixture until completely coated. Store in the refrigerator in an airtight container. Yum!
