Day one of the #lowfodmapdiet, looking to ease my (admittedly mild) IBS symptoms. I felt like rubbish but managed to keep this down: overnight oats soaked in coconut milk, with a little yoghurt (I think 2tbsp is ok?), toasted Brazil nuts and kiwifruit. . Easy weekday meal, perfect for day two: defrosted pollock poached in coconut milk, lemon juice, coconut aminos and garlic, served on top of cabbage cooked in anchovies, lemon juice, garlic and cumin seeds, with spinach and parsley and tahini mayonnaise and marinated onion. . This morning I was quite worried about the likelihood of a day two hangover onset, but it hasn’t eventuated. Today I start #whole30 number 7. I’m hoping to gain a few things from this reset, including better functioning of my digestive system, and better fitting of my clothes! . Started the process with a standard breakfast: a sort of frittata including scrambled eggs, cabbage, spinach, and potato, topped with kkakdugi (daikon kimchi, seasoned with coconut aminos) and tahini mayonnaise 😋 . And yes..I eat it straight out of the skillet.
