My daughter's naptime is during lunch, so it's my time to practice 'self-love' and what better way than making myself a delicious, nourishing lunch packed with real, whole food ingredients like this panini. It's so quick and simple to make too, so I still have plenty of 'me time' during her nap.
I used to mindlessly eat my food while scrolling through emails or talking on the phone, but for over a year now have been practicing mindful eating and actually focusing on the delicious, nourishing food while I eat it. This makes me enjoy my food more and allows me to focus on when I'm feeling full without being distracted. It keeps me more in tune with my body.
How to make this panini: turn on panini maker and spray it with avocado oil spray. Next add @lovebeets mild vinegar beets, goat cheese, avocado and spinach in between 2 slices of sprouted whole wheat bread and press it in the panini maker until perfectly crispy. These beet paninis are a delicious lunch (and a great way to sneak in lots of veggies)!
