2 tablespoons peanut oil, divided
1 small red onion, peeled and thinly-sliced
1 red bell pepper, cored and thinly-sliced
florets from 1 small head of broccoli, cut into bite-sized pieces
optional: 3-5 Thai bird chiles*, thinly-sliced
6 cloves garlic, peeled and minced
leaves from 1 bunch of Thai basil (about 2 cups, lightly-packed)
1 pound boneless skinless chicken breasts, thinly-sliced into bite-sized pieces
1 batch simple soy marinade (see below)
Simple Soy Marinade-
1 tablespoon dark soy sauce
1 tablespoon light soy sauce
1 tablespoon fish sauce
freshly-cracked black pepper

Slow Cooked Balsamic Pot Roast is perfect for an easy weekday or weekend dinner! Fall apart-tender beef is slow cooked in a garlic balsamic sauce, along with potatoes and carrots to complete your meal!

1 tablespoon olive oil
4 pounds (2 kg) chuck roast or blade roast, boneless and trimmed of excess fat
2 yellow onions chopped
8 cloves garlic smashed with the back of a spoon (or 2 tablespoons minced garlic)
1 pound (500 grams) baby potatoes, white or Yukon gold, (you may need to halve them if they are too large)
4 large carrots, cut into 2-inch pieces
2 stalks celery, cut into 1-inch pieces
1 cup reduced-sodium beef broth
1/4 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon brown sugar
2 teaspoons dried thyme
1-2 teaspoons vegetable stock powder or bullion powder
1 teaspoon salt, or to taste
1/2 teaspoon freshly ground black pepper, or to taste
2-4 tablespoons cornstarch (optional)
2 tablespoons fresh chopped parsley, to serve

@Regranned from @wensdelight - Jjimdak (Korean braised chicken) for dinner! Cooked this easy and hearty one pot dish by using my handy Tefal ClipsoMinut Duo 2in1 pressure cooker which shorten the cooking process so much. Preparation starts at 6.30pm and by 7.30pm, we were enjoying our delicious dinner already. Who say is tough to cook on working weekdays? 😂 Yum yum!

Ingredients: (serve 4)
1 medium size chicken (chopped to small parts)
1 large potato
1 medium carrot
1 medium onion
6 nos fresh shitake mushroom
100g Korean glass noodle (soaked in warm water till soften, drain)
4 cloves garlic (chopped)
1 tsp ground ginger
6 nos dried red chilli
2 nos green chilli (sliced)
1 no red chilli (sliced)
2 stalks spring onion
450 ml water
1/4 cup Korean soy sauce
2 tbsp premium oyster sauce
1 tsp dark soy sauce
2 tbsp mirin/rice wine
1 tbsp brown sugar
1/2 tsp black pepper
To add later:
1-2 tsp honey or more if u prefer the sauce to be sweeter.
1 tbsp Korean sesame oil
Cornstarch mixture for thickening
1. Cut up the potato, carrot and onion into bitesize chunks. Set aside.
2. Heat up pressure cooker pot with 1 tbsp oil, add dried chilli to fry till fragrant.
3. Add in chicken, stirfry for awhile till it turn white.
4. Add in chopped garlic and ginger. Fry for a min.
5. Add in potato, carrot and onion. Mix well.
6. Pour in braising sauce and cover to pressure cook for 10 mins.
7. Release pressure after 10 mins, open up and add in glass noodle, sliced red/green chilies and mushroom. Simmer for another 5 mins.
8. Add in honey and sesame oil. Mix well.
9. Thicken with cornstarch mixture if desired, top with spring onion and serve with rice.

Here’s the recipe (serve 4)
1/2 can low sodium #Spam
2 nos #Johnsonville smoked sausage
70g minced pork (lightly seasoned)
1 box firm tofu
2 tbsp baked bean
1 pc Korean ramen
8-10 pcs tteokbokki
1/2 cup aged kimchi
1 no king oyster mushroom
8 nos fresh button mushroom
1/3 no zucchini
1 stalk leek
2 stalks spring onion
1 no red chilli
1.5L homemade chicken/pork/anchovy stock or ready packed low sodium stock
1 slice processed cheese or 2 tbsp mozzarella cheese
Soup Paste: (mix together)
3 tbsp Korean chilli powder
1 tbsp Gochujang (hot pepper paste)
1 tbsp light soy sauce
2 tbsp rice wine
1 tsp fish sauce
1 tsp brown sugar
1 tsp sesame oil
1 tbsp minced garlic
1. Sliced all the ingredients according to preference.
2. Prepare a shallow pot/pan (I’m using Tefal 30cm skillet), assemble all the ingredients into the pan neatly.
3. Pour in soup stock and bring it to boil.
4. Serve over portable stove on the dining table.
