It’s been a while but I had to post a video :) TORTILLA SOUP AND POTATO TAQUITOS!!! 🌱💕 This is hands down the best tortilla soup ever. It's a soup to impress people. I made it a little thick, but you can add more veggie broth and make it more soupy. Ingredients for the soup: -10 Roma tomatoes -1 Chopped Yellow Onion -1 Bunch of Chopped Cilantro -1 Bunch of Green Onions Chopped -3 Corn Tortillas -3 cups of Veggie broth (or more) -Salt -Pepper -1tsp Dried Oregano -Olive Oil Instructions: Cut the tomatoes into 4 pieces, add olive oil, salt, and pepper and mix it all together. Do the same with the chopped yellow onion. Place them on separate pans on medium high heat and let them caramelize. The secret is not stirring it so much. let them sit. Make sure you cook the tomato until it becomes like a paste. (See video) In a large pot add the cartelized onion, tomato, cilantro, green onion, veggie broth, and dried oregano. Bring it to a boil Take your tortillas and warm them up over fire til it gets a couple of brown spots, chop them and add them to the soup and continue to boil. Once the soup is boiling, you may remove from heat and blend all the ingredients together. Garnish it with some tortilla strips and avocado. ----- Potato Taquitos Ingredients: -1 Large Potato -Corn Tortillas -Salt & Pepper Instructions: Boil your potato, and mash it. Add salt and pepper. Warm up your tortillas so that they are easy to fold, then add a little bit of the mashed potato and roll it like a taquito. Place it in a hot pan with some oil until all sides are crispy. Once served, you can dip the taquitos in the tortilla soup and you will know what heaven tastes like :) I hope you try and enjoy this recipe, its definitely one of my favorites. @veganvideos @veganvids @vegan_videos @veganvideoshare #veganvideos

Vegan meal prep!! 🌱💕 one of my best friends has decided to go vegan, and we decided to get together once a week and I can help him meal prep! We did a few different combinations of foods: 1. Brown rice, with a tomato sauce with: onion, chopped mushrooms, tofu, and tomato sauce, with a side of veggies. 2. Same sauce with whole wheat pasta. And 3. Black beans with corn and cilantro, baked sweet potatoes, baked red onion, and some brocollini sautéed with some light soy sauce. Hands down my favorite smoothie bowl, I eat it all the time. The smoothie in this one is the best because I add: frozen pineapple, frozen blueberries, and chocolate almond milk. Have been craving Sundubu Jjigae (Korean tofu stew) for so long so I decided to make it and it was ridiculously easy! It’s also perfect for cold weather and perfect if you like spicy food 💕Inspired by @cheaplazyvegan 1. In a large pot heat up some sesame oil on medium heat, and add 1 onion and 2-3 cloves of garlic(minced) 2. Then add red chili pepper (yes it’s spicy but delish) 3. Then add 3 chopped zucchini’s and 3 chopped king oyster mushrooms. 4. Stir for a bit and then add veggie broth (but only enough to barely cover all the veggies), you don’t want it too soupy. 5. Bring it to a boil. 6. Once it’s boiling add 2 blocks of soft tofu and crumble it. 7. Stir and let it boil for a few more minutes, add salt to taste if needed. 8. Serve with rice and garnish with green onions! This is a Persian salad/dip named “Mast-o-Khiar” which literally means yogurt and cucumber. Of course I made it with vegan yogurt from @foragerproject I used their plain and unsweetened one. All you do is take a cucumber and grate it, then add the vegan plain unsweetened yogurt, and salt. It is typically garnished with dried mint and I also added a little bit of dill to make it look prettier. YOU HAVE TO TRY THIS! It’s fantastic 💕🌱 . Today’s lunch. Go big or go home! This sandwich was so fun to make and it was fantastic. . Here’s what I added: . Layer 1: @followyourheart Chipotle Veganaise gourmet . Layer 2: Avocado . Layer 3: tomato (and a pinch of salt) . Layer 4: crispy tofu (I pan fried it with sesame oil til the outside is crispy, it’s amazing this way trust me :) . Layer 5: red onion . Layer 6: pickled red cabbage (I just chopped red cabbage placed it in a jar with some vinegar and salt, let it sit in the fridge for a few hours) . Layer 7: grilled asparagus . Is taco Sunday a thing? These tofu tacos are amazinggg!! The tacos include corn tortillas, crispy tofu, kale, pickled red cabbage, cilantro, and an amazing chipotle half @followyourheart mayo half sour cream. Here’s how I made it. Tofu: Pan fried with sesame oil until crispy (it’s the absolute best way to do it) Pickled cabbage: Chop red cabbage and place into a jar with vinegar and salt. Leave it in the fridge for a few hours and it turns this amazing pink color and tastes fantastic. Chipotle Mayo/Sour Cream: In a blender add jar chipotle peppers, a spoonful of mayo, and a handful of cashews. Blend together and it will blow your mind. The secret to the tortillas: You have to warm them up over fire! A gas stove is perfect to make them. Just let them sit on the fire for a few seconds and flip. It’s best when you get a few small dark spots! If you give this recipe a try you have to tag me. Tofu scramble!!!! I’ve been craving it for weeks and I finally made it! I used firm tofu for this one and blended it with a little almond milk and added: turmeric, paprika, garlic salt, onion salt, salt and pepper. Then in my cast iron pan I started cooking onions, garlic, tomatoes, and asparagus. Once softened I added the tofu and continue to mix and stir until it became this beautiful scramble!
