Wanna know what to do with leftover rice? Or maybe just want to try a new rice dish? You should try making rice porridge! It’s so freaking simple yet so freaking good 💕 Chop your favorite vegetables into very small pieces (its crucial that you chop them small). In a pot add your cooked or leftover rice, add veggie broth and water enough to cover it all the rice pretty well. Add all the veggies and bring it to a boil. As it boils you will have to add more water so it keeps the porridge consistency. Add salt to taste and done. You can garnish it with a little seaweed if you’d like. Enjoy

My dinner last night. Lettuce tacos!!!! 💕🌱 with @gardein crispy chikn and @followyourheart creamy garlic dressing. . Ingredients: Iceberg lettuce Chopped purple cabbage Pico de gallo (tomato, onion, cilantro) Gardein chikn tossed in @franksredhot sauce Guacamole Follow your heart creamy garlic dressing Topped with sliced jalapeños. . Made tacos from my leftover salad inspired by @shinewithplants Check out my latest salad post for ingredients. Truth is I was craving corn tortillas and my salad.... So salad tacos!!! 😂😂😂

The things I make with what I have at home! Baked mini potatoes, baked with olive oil and Italian seasonings at 420 degrees for 15 minutes or so. Sautéed oyster mushrooms with a splash of coconut aminos. Salad made kale, corn, green onions, cabbage, pumpkin seeds, dried cranberries. With a dressing inspired by @shinewithplants Dressing: 2 tbsp of raw tahini 1 tsp of Dijon mustard Juice of 1 lemon Juice of one lime 2 tbsp coconut aminos . Enjoy 💕🌱

Vegan ramen with all kinds of delicious toppings! Check out my instagram stories to find out how to make this delicious dish. Broth ingredients: Olive oil Sesame oil 1 bunch of green onions (the white parts) - chopped 1 tbsp of minced ginger 2 garlic cloves - minced 2 tbsp of soy sauce 2 tbsp chili paste (you can add more or less depending on your tolerance to spicy food) 2-3 tbsp of red miso paste 2 tbsp of ground sesame seeds 2 34oz cartons of veggie broth. . Broth instructions: In a pot add some olive oil and sesame oil and add your chopped green onions, minced garlic, and minced ginger — fry it for a few minutes. Add soy sauce, ground sesame seeds, miso paste, and red chili paste and mix it well together. If you find it a bit too clumpy you can add a little bit of the veggie broth to help you mix it better. Once everything is mixed well, add the rest of the veggie broth and bring to a boil. . Make sure to cook the noodles separately- you can buy ramen noodle packets and just use the dry noodles and cook them up or you can find fresh noodles at Asian markets which make a big difference. Many are vegan which is perfect :) . Toppings: Corn Baby bok choy sautéed with a little soy sauce Sautéed sprouts (instructions below) Kimchi (optional) Raw green onions (the green parts) Black sesame seeds . Optional toppings: Fried tofu Seaweed strips Sautéed shiitake mushrooms . Sautéed sprouts instructions: In a pot, boil some water. Once water is boiling, add all your sprouts for one minute only and remove from water and cold shock the sprouts. Make sure to mix them around so they are no longer hot. In a bowl add 2 stalks of green onion chopped, 2 cloves of garlic, 3-4 tbsp of sesame oil, and salt to taste. Mix with the cooked sprouts and serve. (This is a great side dish, but also a great topping for ramen)

Made this fantastic salad inspired by @shinewithplants with my own twist to it :) Salad ingredients: Lettuce Dark kale Yellow pepper Roma tomato Cooked mushrooms & green onion Raw green onion Fried cranberries Pumpkin seeds Hemp seeds . Dressing ingredients: 1 avocado 2 limes 1 lemon 2 tablespoons of raw tahini 1 teaspoon of Dijon mustard 2 teaspoons of coconut aminos A pinch of salt Directions: In a pan sauté mushrooms and green onions (the white parts) and instead of using oil just add a splash of water. In a small bowl combine all the dressing ingredients and mix well, and mash the avocado well to make a creamy sauce. Mine was a bit thick so I added a splash of water to make it more saucy. Mix it all together and enjoy. . I’m so thankful for @imperfectproduce for allowing me to always have good ingredients at home. I got my lettuce, tomatoes, green onions from them and they are so fresh it makes everything much better. 💕🌱

My dinner last night! So freaking good and healthy. I recently posted a poll asking if you guys want to see more recipes that have helped me lose weight and I believe 98% said yes! So i’m going to be posting more recipes like these. In the past 6 months I’ve lost 14lbs (which I know it doesn’t seem like a lot) but I’m already small and I wanted to do it right instead of losing too much too fast which means I will gain it right back. This recipe was very simple but very good. Ingredients: Cooked quinoa Avocado Tomato Green beans Purple Cabbage Lime juice Salt And after it was done I added some Salsa verde. Just mix all ingredients in one bowl and that’s it. Enjoy! 💕💕
