I know this isn’t the prettiest pic but it is literally such a fantastic and easy recipe. This vegetable soup is so so so so good.
I got lucky because I got some of the ingredients in my @imperfectproduce box so yay! 💕🌱
1 bunch of green onions
1 bunch of cilantro
2 full length sticks of lemongrass
1-2 broccoli heads
1 head of cauliflower
3 heads of baby bok choy
4 cartons of vegetable broth
2 cups of sliced mushrooms
Garlic salt to taste
Chili flakes for spice - as wished
In a pot add some oil and chopped green onion, and lemon grass and heat it up for only a minute or two. Add all the rest of the ingredients and bring to a boil :) and done!!!!!

Have you tried this @sweetearthfoods chipotle seitan?? I did and I was surprised at how GOOD IT WAS 😱😭💕 you need to try! I’ve made it this style and I’ve made tacos with them and I promise they are great :)

Tacos tacos tacos! I can’t live without them :) I make tacos out of whatever I have in the fridge. I make tacos out of any leftover foods even if it’s not Mexican food. What are your favorite tacos????
For these tacos I used my favorite @followyourheart vegan mayo, and also my other favorite @gardein “chicken nuggets” with any veggies I could find at home :) .

What to do with your @lightlifefoods tempeh!!! So much yum 💕😭💕🌱
In a pan add some oil and your tempeh. Add smoked paprika and soy sauce and cook on both sides until done.
Make the most beast sandwich you can think of. And don’t forget to brag about on instagram :) .

This bowl was fantastic and what really made it was the @followyourheart Creamy Garlic dressing! I can’t tell you enough how much I LOVE IT!
Corn on the cob
1 stalk of Bok Choi(per bowl)
Creamy garlic dressing
Vegan Parmesan .
First grill your corn on the cob, then cut it to separate the bone from the good part.
In a bowl add your chickpeas and sprinkle a little smoked paprika and mix it well.
Grill your Bok Choi> the way I did it was, I used a cast iron without oil and just cooked it there until it was grilled :)
And you want to bake your potatoes. First cut them into wedges, add a tiny bit of oil, some Italian seasonings, and bake them at 420 degrees for about 10 minutes.
Combine all in a bowl and sprinkle some fresh parsley, @followyourheart creamy garlic dressing, and some Vegan Parmesan as well!

Today’s lunch is so fantastic I almost didn’t take a picture but when I tried it I realized I HAD TO!! .
1/2 block of extra firm tofu
3 cloves of garlic
1 watermelon radish
In a pan (preferably cast iron) add some olive oil and sesame oil and start cooking your tofu. I cooked it to get somewhat charred! Once it was getting crispy I added my chopped onion and garlic and let it cook.
In a bowl add kale, watermelon radish 3/4 of your avocado, and the tofu and onions (I added some green beans to it cause I had leftover but you don’t have to). In a separate container add the 1/4 avocado, some lime juice, olive oil, and salt and mash the avocado to make a dressing, (make it as liquidy as you can hehe)
Add dressing to salad and serve and eat and cry from goodness

Little story: some of you may know that I grew up in Guatemala, and I was so blessed to have a backyard with tons of different fruit trees. I literally grew up eating fruit all the time because whenever I would be playing in my backyard I would just pick fruit and eat it right away. It was so awesome! I had the following trees:
-Mango tree (biggest mangos I’ve ever seen)
-2 Orange trees -Mandarine tree (the green ones but amazing)
-Sweet lemon (the sweetest lemons I’ve had in my life, nothing has ever compared since)
-Jocote (there’s no name for it in English, but it is hands down my most favorite fruit ever) look it up :) -Caimito (Purple star apple)
-Coconut :) having fruit trees is the best!!! I wish I had them now 😭😭😭 do you have any fruit trees in your home? LET ME KNOW IN THE COMMENTS:)

- 1 can of black beans
- 1-2 large avocados
- 3 Roma tomatoes
- 1/2 red onion
- 1/4 small purple cabbage
- 1/2 bunch of cilantro - Lime juice

3. Chipotle vegan mayo
How I cooked the tempeh:
1. Slice tempeh into thin squares
2. On a pan add some oil and the tempeh, add soy sauce, smoked paprika, and vegan bbq sauce.
3. Cook on both sides and voila! .
It is SO FANTASTIC! Trust me!
