FYI my friends, if you live in or are visiting #theberkshires you need to — without a doubt — eat at @stagecoachtavern at @racebrooklodge. I’m just having their chef’s food tonight for the first time and it was BOMB, to say the least. The meal was prepared and laid out buffet style (for a conference) and was hands down the best buffet dinner I can recall having. (It can be so hard to make a bangin’ buffet style meal!) Even better, Race Brook does a huge amount of local food sourcing and their head chef is a female. Hi friends! Happy Monday! This east coast heat wave has got me wanting ALL the cold foods, but that doesn’t necessarily mean I want to eat salad and ice cream all the time 😅 The solution? Getting creative with other hot weather dishes, like this one pictured here 👆🏽 Details below!
Cold noodles with peanut sauce: Buckwheat soba noodles, steamed cabbage and julienned carrots — all tossed in my Asian peanut sauce (will put recipe OTB soon). Optional: sprinkles of hot pepper flakes for heat (did you know spicy things actually cool the body down?!) and squeeze of lime for zest!
