Are you just as brunchy as I am? Enjoy these paleo, healthy pancakes completely free of gluten, dairy, nuts, seeds, grains, wheat, refined sugar, soy and so much more! (Although I rarely post recipes with egg, this recipe is a typical paleo recipe and contains egg). 1) In a bowl combine 1/2 cup of tiger nut flour, 1/3 cup of tapioca flour, 3 tablespoons of coconut flour, a pinch of salt and a pinch of baking soda. 2) In another bowl combine 4 organic eggs, 1/4 cup of coconut milk (pure coconut milk), 2 tablespoons of honey, 1 tablespoon of pure vanilla extract and 1-2 drops of stevia. 3) Slowly add the wet ingredients with the dry ingredients and combine. 4) On low heat, heat a fry pan with coconut oil as the base. Feeling Italian? Enjoy this healthy yet creamy, rich Alfredo bake! 1) Cut open in half and clean out the seeds within a spaghetti squash. Bake it on 180degrees for 30min or until baked. 2) On low heat, add one tablespoon of coconut oil and cook up 1kg of diced breast chicken. Once the chicken is cooked, add cut up broccoli, cauliflower and mushrooms to stir fry with the chicken. 3) In a seperate saucepan, simmer one cup of coconut milk, adding in 3 cloves of garlic, diced onion (half an onion) and a pinch of salt. Turn off heat and whisk the sauce with 3 tablespoons of cassava flour, until thickened. 4) Scrape out the squash and place it into a large bowl, also adding the sautéed chicken and veggies. What?!! An apple crumble without oats yet same taste? 1) Wash and peel 4 Granny Smith apples. 2) Cut them, taking out the core and place them into a saucepan. Add water enough to cover half the apples within the saucepan, also adding a pinch of salt, 2 tablespoons of cinnamon, 1 tablespoon of coconut flour and 2 tablespoons of tigernut flour. Allow to simmer on low heat until apples become soft and a sauce is created. You may wish to add water if the sauce dries up too quickly and apples are still hard. 3) In a bowl, add a whole packet of tigernut flakes, 3-5 tablespoons of tigernut flour, pinch of salt, 2 tablespoons of cinnamon and 1/2 a can of coconut milk. Begin to knead the crumble with your hands until the mixture is combined and crumbly. 4) Mash the cooked apple in its sauce and place in a nice dish. Over the top of the apple, spread the crumble topping, evenly distributing and flattening. 5) Bake on 180 degrees for 20-25 minutes or until golden brown and crisp. The famous schnitzel you have all been waiting for! 1) In a large bowl, add 2 cups of cassava flour, one large onion finely diced, 3 cloves of garlic diced, parsley, basil, rosemary and one tablespoon of Himalayan salt. Mix these ingredients together. 2) Cut the desired amount of organic free range chicken breast into long schnitzel like shapes and/or nuggets. 3) In a large plate, pour one can of organic coconut milk. 4) Begin to dip the chicken pieces into the coconut milk, and then in the battered flour mixture. Simple, fresh and quick! SALMON: 1) Wash the desired numbers of wild caught salmon you wish to cook. Marinate them in olive oil and Himalayan salt. 2) In a pan, fry up the fish, keeping it on medium heat and turning the fish every few minutes. For crispy skin, cook until well done. Bok Choy) Wash and cut bok Choy into thin edible pieces. Cut one onion thinly and 5 cloves garlic. 2) Place the greens in a wok and stir fry them on low heat with a few drizzles of avocado oil, adding salt, the onions and garlic. You may also wish to add fennel for extra flavour 3) Serve the veggies and salmon on a plate with a serving of fresh avocado for a more filling meal. Nothing like a nice homemade creation! Delicious and nutritious meal! 1) finely Cut one large onion, 6 cloves of garlic, 6 celery pieces, 6 carrots and 3 cups of mushrooms. Apart from the onion and garlic, place all the Cut veggies into a plate to keep on the side for cooking later. 2)In a wok, add one large tablespoon of coconut oil, and stir fry the onion and garlic together on low heat. Add 1.5kg of organic mince chicken or beef (your choice) and let it simmer on low heat. Add 1-3 tablespoons of beef broth collagen for salty flavour. 3) Add in the veggies and allow the meat and veggies to simmer on low heat, soaking up all the broth collagen. Add one tablespoon of turmeric powder, garlic powder and cumin powder. When all the water is evaporated and the veggies are soft, remove from heat. 4)Wash and cut 5 organic zucchinis into three pieces. 5) Place them in a steamer or alternatively steam on low heat on the stove. 6) Once soft, mash the zucchini, adding drizzles of olive oil, 1 tablespoon of cooking gelatin and a pinch of Himalayan salt. 7) In paper cups, Place the meat and mixed veggies equally.
