Enjoy these paleo, healthy pancakes completely free of gluten, dairy, nuts, seeds, grains, wheat, refined sugar, soy and so much more! (Although I rarely post recipes with egg, this recipe is a typical paleo recipe and contains egg). 1) In a bowl combine 1/2 cup of tiger nut flour, 1/3 cup of tapioca flour, 3 tablespoons of coconut flour, a pinch of salt and a pinch of baking soda.
2) In another bowl combine 4 organic eggs, 1/4 cup of coconut milk (pure coconut milk), 2 tablespoons of honey, 1 tablespoon of pure vanilla extract and 1-2 drops of stevia.
3) Slowly add the wet ingredients with the dry ingredients and combine.
4) On low heat, heat a fry pan with coconut oil as the base. Cook the pancakes onto the fry pan, flipping them every few minutes until golden and cooked.
5) Serve with your favourite spread/s
