This made me laugh....it seems so obvious, but in the past I have limited veggies to a certain number of servings along with everything else. I made this white bean & artichoke dip for a friend and he was shocked when I told him it was all vegan.😲 Fun fact: Vegan food can be delicious and colorful! 🌈Cooking isn’t easy, especially when trying a new recipe; I know, I’ve been there. If you have a question just let me know, I’m here to help. So give it a try, here’s the recipe. 😋 Tag someone who needs some of this goodness in their life 🥳 3/4 cup raw cashews 5 cloves garlic 1/2 cup almond milk or water) 6 Tbsp nutritional yeast 1/2 tbsp lime juice 1 pinch salt-pepper 4 cups packed chopped spinach 1 14-ounce can artichoke hearts (drained and quartered) 1 cup cooked and drained white beans 2 Tbsp cashew parmesan cheese Soak cashews for 1 hour in boiling hot water (uncovered). Then drain and set aside. In the meantime, heat a large oven-safe metal or cast iron skillet over medium heat. Once hot, add a third of the oil (1 Tbsp or 15 ml as original recipe is written // adjust if altering batch size) and all of the garlic. Sauté for 1-2 minutes or until just golden brown. Set aside to cool. Once cashews are soaked and drained, preheat oven to 350 degrees F (176 C). To a blender add soaked and drained cashews, sautéed garlic, onions, almond milk, nutritional yeast and lime juice. Purée to a cream. Sauté the spinach, artichokes and beans. Stir to combine. Sprinkle the top with the vegan parmesan cheese. Crispy Brussels Sprouts with Lemon & Capers 🍋 . Ingredients 1 lbs of brussels sprouts trimmed & halved 1 Tbsp. avocado oil 1/2 tsp. salt 1 Tbsp. ghee 2 Tbsp. capers 2 cloves minced garlic 1/2 lemon . Directions Preheat oven to 400* In a large bowl combine brussels sprouts, avocado oil and salt. Toss to coat brussels evenly. Then spread brussels sprouts onto a baking sheet. Bake for 25-30 minutes until crisped. Meanwhile, in a small skillet heat 1 Tbsp. of ghee on medium high heat. Once hot add capers and sauté until they start to crisp. Turn heat to medium and add garlic, stirring so the garlic doesn't burn. Add cooked brussels to pan and toss with ghee, capers and garlic. Juice 1/2 lemon over brussels and toss again. WHAT A DAY! We harvested 12 bundles of garlic chives, over 20 turnips, some oregano, mint, thyme, and MUSHROOMS. We did this all about 30 minutes before the storm covered it all! Our amazing @frischschool #frischfarm students braved the freezing temps to pick and package food for the clients at @centerforfoodaction. When our every other week produce delivery arrives, it is a cause for celebration in the kitchen! We love customizing our boxes for seasonal recipes we want to try. But more often then not, this mama just ROASTS EVERYTHING. This week's menu: MUSHROOMS and SQUASH (all the squashes). My favorite concoction is to take a light drizzle of avocado oil, some sea salt, dried sage, basil and thyme (I don't measure, just a sprinkle of each, more = more intense flavor). Dice your veggies of choice to a uniform size, toss in the oil and herb mixture and lay out a single layer on a baking sheet. Into the oven at 420 degrees (I like to cook things HOT and FAST) until desired done-ness is reached (this will vary based on the veggies you roast, so again make sure the items are uniform in size and keep root veggies roasting together, as they will typically take longer)!! ENJOY HOT (or leftover and eaten cold as your "winter salad"). Roasted veggies are the perfect accompaniment to any balanced meal! What's your FAVORITE ROASTED VEGGIE RECIPE?? I needed to use up some cabbage, tortillas and leftover bbq pulled chicken. So naturally I added some black bean hummus, carrots, green onions, cilantro and made a salad! So crunchy and delicious! I’m not the girl that loves veggies. Given the choice between chips or veggies, heck, given ANY other choice and I’m not choosing veggies. 🥦🥒🍅🤷🏼‍♀️ . . Went for surf this morning and came back home starving. But luckily there is almost always something to eat in our fridge (#priorities). So brekky took me about 5 minutes to make today 🙌 📸 Pork meatballs, asparagus, button mushrooms and pumpkin with @kehoeskitchen kimchi and fresh chives. Raise your hand if you could eat this whole bowl in one sitting. Here I am raising my hand high! 🙋🏻‍♀️ Seriously though, roasted root veggies are my fav and this colorful side dish can be tossed together in a matter of minutes (just chop, toss and roast). The veggies come out caramelized to perfection and are kinda addicting. 🙌 . Added bonus: root vegetables are a great source of complex carbs and packed full of antioxidants, fiber, essential vitamins and minerals. And according to ayurveda, root vegetables have a grounding energetic property so when we eat them we feel balanced, rooted and less spacey. If you feel like you could use a little grounding during the holiday season (don’t we all), load your plate up with root vegetables like onions, sweet potatoes, beets, parsnips, carrots, daikon, turnips, rutabaga, radish and yuca. 🥕🍠🥔💯 . Earlier in the week I shared my battle with anxiety and thought I'd share a little on how I am finding food happiness. . 🥑🍅🍇🍑🍒🍐🍉🍒🍓🍌 . When I decided to reclaim my health and wellness I worked with a coach who helped me reprogram my mind, tastebuds, and the role food played in my life. . After losing around 60 pounds I started to dabble with other diets and lifestyles - paleo, keto, vegan, grain free, macros, shakes, color coded food containers only to yo-yo diet and struggle. . Returning from vacation was an eye opener that I needed to get back to basics following only one rule. To remain a whole foods gluten free eater moving forward. . Why gluten free? Because my body was insanely inflamed after over indulging, brain fog, muscle pain and poor sleep all led me to making this decision. . This battle has finally come to an end as I have found food happiness! 😘🥑🍒😘🍌🍐🥑 . My advice: find food happiness by eating whole foods and let go of fad diets!
