I couldn’t choose so I made it all?? Lunches for tomorrow with the left overs tho!
Giant salads with leafy green lettuce, spinach, arugula, peas, mushrooms, tomato, avocado, celery,carrots, cucumber, crasians, sunflower seeds and homemade croutons w/ Just Vegan ranch.
Our artichokes were going bad so I boiled those in a pot and ate that(yummm!!!) Eric wanted some Bocca nuggets so we made some of those and last but not least a homemade concoction of deliciousness in the bitty bowl.
I chopped up a large eggplant and let that simmer in a pot with water and then added homemade peanut like sauce I made and then added corn! It was delicious. I ate it by itself but I assure you the left overs are going to be a chip dip or a toast spread. So so good.
The sauce: (doubled it because it was a huge eggplant)
2 T soy sauce
2 T maple syrup
1/2 T siracha
1/2 T ketchup
1/2 T peanut butter
Then I shook it up in a jar and added it with cornstarch to eggplant and it made that bombness.
Working on eating all my greens this week and actually trying to eat three meals a day!!!
