Growing up with my Italian family was fun. They always had the best pasta dishes, loud obnoxious stories and of course a temper. But what was really instilled in me was my love for garlic. To this day I cook my food with garlic and onion sauté. . Garlic has many superfood properties that I attribute towards my immunity. Believe me when I say I am thankful to have been raised on plenty of garlicky foods. . Let’s take a look at this childhood favorite of mine for #superfoodsaturday . For thousands of years garlic has been used medicinally by the Egyptians, Greeks, Native Americans and the Japenese. They found it is the high concentration of organosulfur that is responsible for the strong smell and flavor we love. . Can fight cardiovascular disease- specifically it can help lower cholesterol by slowing down the enzymes that are responsible for synthesis in the liver. It can also lower blood pressure. . Fights cancer- acts as an antioxidant which inhibits tumor growth, specifically colon and gi type cancers. . Can be used in a beauty routine- is great for a hair thickening treatment and even helps treat alopecia. Also works great as an acne spot treatment, dandruff reliever, and for athletes foot since it is so antimicrobial. . Found at all grocery stores- very low cost and prevalent. You may even purchase it in a powder or tablet form even garlic oil! . These are only a few of the common ailments treated by garlic. This is my favorite time of year. I love everything about the holidays: decorating, listening to Christmas music, family gatherings, presents, AND the yummy food. But, I know it can also be an immense source of stress. For that reason, I wanted to offer some of my favorite tips to get you through the holidays, sanely! ⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣ Here are simple tips for easing up on the Holiday goodies that give you that dreaded bloat and fatigue:⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣ 1. Use sugar alternatives. Honey, maple syrup and stevia are much better options than cane sugar. The good news? They go well in brownies, cookies and cakes. Good 'ol Google will help with the ratio of swapping them out for sugar.⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣ 2. Try sugar-free gum. When sweet cravings strike or you're looming over the dessert table at grandma's Thanksgiving meal, grab a piece of sugar-free gum. This will keep you occupied and satisfy the need to chew on something.⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣ 3. Choose fruits over desserts. Fruits are a sweet and a healthy alternative to desserts. If you feel like having cake or a favorite dessert, then grab some blueberries or another sweet fruit FIRST. Then reach for what you really want. Hopefully by then the natural sugars in the fruit will have helped to curb those cravings AND you'll settle for a small piece of apple pie⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣⁣⁣ ⁣⁣⁣⁣4. BREATHE! yes you know the thing you do unconsciously that keeps you alive. However, I'm talking about 1 min deep breathing a day ( breathe in fill up your lungs and breathe out) You can do it in the car while waiting to pick up the kids from school or your in-laws from the airport, while waiting in line at the grocery store, while in bed before dozing off, while washing the dishes, etc... Probiotic basics continued: There are many food sources of probiotics that can be easily incorporated into your diet. I’ve separated them into dairy and non-dairy. For the non-dairy folks there’s soy sauce, kimchi, pickles (!!), kombucha, sauerkraut, miso and many more. In the dairy category we have yogurt, kefir, cheese and butter. Anything that uses live cultures in the production of the food has probiotic properties. HOWEVER, it is important to pay attention to what happens after production of the food. Commonly, heavy processing with heat and chemicals used as preservatives can inactivate the live bacterial cultures. Make sure that the probiotic foods you consume mention “live” or “active” cultures on the label. I ALWAYS GET ASKED "Well what do you eat?" Nutrition is highly individual, but I do think you cannot go wrong with a base of whole foods. Tonight, dinner was whipped up in 20 minutes flat. It is was salmon that was simply seasoned with salt & pepper and lemon, and delicata squash tossed in a little @nutivapromo butter-flavored coconut oil, salt and garlic powder. I baked both the squash and salmon in the oven for 15 minutes at 400 degrees. While that was cooking I cooked up some @traderjoes cauliflower gnocchi in coconut oil with salt and garlic. Sweet Potato Nachos Just the kind of comfort food I needed on this snowy/rainy night! And who doesn’t love nachos? These are a gluten free and dairy free version but feel free to customize it for yourself! “Chips” are Japanese sweet potatoes with avocado oil, salt, pepper cut in thin circles and roasted in the oven at 425 for 15 mins on each side Added my avocado pesto ( recipe on www.eiferteats.com) on top of the potatoes. Sauté zucchini and onion, add on sweet potatoes evenly Season chickpeas with salt, pepper, curry powder and sauté until crispy Cook @butcher_box flank steak in cast iron skillet Top with @tessemaes ranch dressing It’s so fun to make different versions of my favorite ‘snacky foods’ especially when making them more nutrient dense and using all whole foods. 🌞👙🌞👙🌞👙🌞 Summer is officially just around the corner! For most of us, this means lazy days on the beach, tanning and spending a lot more time outdoors. Although our bodies need the sun's light to live, overexposure can also be harmful. . Skin cells are constantly exposed to reactive oxygen species (ROS) and oxidative stress from external and internal sources. UV radiation is the key environmental factor in the development of skin cancer and skin aging. The primary products caused by UV exposure are generally direct DNA oxidation or generation of free radicals which form and decompose extremely quickly but can produce effects that can last for hours, days, or even years! UV-induced production of ROS in the skin develops oxidative stress. This happens when their formation exceeds the body's antioxidant defence ability. . So what can we do to reduce the production of oxidative stress in the skin? . The reduction of oxidative stress can be achieved in two ways: 1. By lowering exposure to UV rays 2. By increasing levels of antioxidants The only internal protection of our skin is melanin and enzymatic antioxidants. Melanin, the pigment in our skin, is the first line of defence against damage at the surface of the skin, but it cannot totally prevent skin damage. The second category of defence is repair processes, which remove the damaged molecules before they can accumulate. Accumulation of these damaged molecules can results in altered cell metabolism. . Additional UV protection includes avoidance of sun exposure, usage of sunscreens, protective clothes, and antioxidant supplements. Thought my lunch could match the weather outside~~ chili ❄️ (don’t worry I hate myself more for the dad joke than you do!) but on a serious note I love chili around this time of year. It’s so warm and comforting, especially if you get to eat it at home and not while studying like I am 🙃 . . I didn’t measure anything out but all I did was sauté onions, peppers, and garlic in @primalkitchenfoods avocado oil until the onions were translucent. Then I added in grass fed ground beef and browned it. After that I added in a 28oz can of chopped tomato and 2 cups of water with sprouted kidney beans, butternut squash, chili powder, paprika, cumin, black pepper, and salt. Brought the mixture to a boil and simmered with cover for 2 hours. Served over spaghetti squash with cilantro, fermented hot sauce, and avo (post pic because it wasn’t looking too hot)
