Veggie eggy scramble (1 egg + 100g whites + 🍄🍃+ turmeric + black pepper) , grilled onions, courgette & 🥑 ❤️ I was reading a meta-analysis on health benefits of turmeric recently (as you do), and the curcumin (the component in turmeric that has a vast amount of anti-inflammatory and anti-oxidant properties) is poorly absorbed BUT piperine in black pepper increases the absorption by 2000% (yes 2 thousand percent) which is pretty cool. I just made this dish of chicory with home made artichoke dip and black olives. Super quick and tasty, full of fibre, vitamins and minerals. Keto, paleo, vegan, basically suitable for anyone (except those allergic to any of the ingredients of course). And it looks so pretty! Ideal for part of a dinner party spread 👭 . . To make the dip simply take a small jar or packet of artichokes (try and avoid the ones that come in inflammatory vegetable oils such as rapeseed or sunflower) pop into a food processor with a couple of tablespoons of extra virgin olive oil, a little lemon juice, a sprinkle of chopped fresh or dried herbs such as thyme, basil, oregano, or mixed herbs. A pinch of chilli flakes if you like a bit of heat, some sea salt and pepper. Whizz up and if it needs to be thinner add a little splash of water. . . Today’s Brunch. Protein, rocket and flaxseed rolls. People often get too focused on eating 3 times a day. I often have my first meal after 11.00 as that is when I naturally become hungry. This is fine (as long as we opt for real food) and may actually be good for us. There is now plenty of scientific research showing that intermittent fasting has many health benefits. It is amazing what the body can get up to when it is not busy digesting our food! Breakfast in bed this morning and I made a smoothie bowl which was mahoosive! There was just frozen fruit, some dates and a banana with about 100ml water to loosen it up. I added some fat free Greek yoghurt, some protein granola and a small drizzle of honey and a teaspoon of supergreen powder. It was lush and will keep.me going most of the day to be honest! I had a sugar blip yesterday and had some chocolate (6 celebrations chocolates). I enjoyed it but after 3 weeks of not eating it, I can honestly say I've not missed stuffing my chops with chocolate, I missed the taste and texture, but not that much. | courgette bacon and celeriac fritters | When you have some nobly celeriac leftover in the fridge, oh what to do with the remainder? When we think of fritters, we often think of deeply fried ones, these I've baked making them lovely and light. If you are following veganuary, are a vegan or vegetarian, simply leave out the bacon. These are so easy to make, make either in advance for lunch boxes or simply serve as a weekend brunch with an egg on top 😋 Ingredients: 1 courgette Handful of grated celeriac 2 rashes of bacon (nitrate free) 3 tblsp milled flax seeds 2 tblsp buckwheat flour 1 egg 2 - 3 cloves of garlic, crushed Method: ▪Grate both the courgette and celeriac, taking care to remove/squeeze excess liquid from the courgette. ▪cut up the bacon into little pieces and fry gently until brown ▪in a large bowl combine the courgette, celeriac, bacon, flax seeds, buckwheat flour, egg, garlic and seasoning ▪taking spoonfuls of mixture drop on to a prepared baking tray and flatten slightly. ▪ bake in the oven, gas mark 200°c for approx 15mins or until crispy and golden
