Breakfast = homemade granola, berries, coconut yogurt and a sprinkle of seeds ❤️
I've shown this granola on my stories a few times, and am often asked for the recipe, so here it is.
In a bowl combine:
1 cup oats, 1 cup slivered almonds, 1 cup buckinis, 1 cup quinoa puffs and 1 cup shredded coconut.
Add 1/2 cup tahini and 1/4 cup sweetener. Sometimes I use maple syrup or lately I've been using barley malt extract.
Toss until mixed and coated.
Bake at 160 degrees Celsius for 15 minutes.
Remove from oven, toss mixture.
Then I add about 1/2 - 3/4 cup inca berries or, you could use any type of dried fruit instead.
Return to oven, bake another 15 minutes.
Allow to cool, then store in an airtight container.
Last time I was at Costco, I bought a huge bag of inca berries ... then began to wonder how I'd ever use them all. I love them in this granola, they go slightly chewy after you bake them which is so yum.
