Friends, my life is surrounded by food. 😋 My husband & I own 4 restaurant concepts in Charlotte, I love to cook. Food is a huge passion. And NOW for me, food is Medicine. 💕🙏🏻 Let me tell you my story... With some hesitation, I am coming forward to talk about a challenge that has come into my life. I haven’t wanted to share - I’ve been hiding to be honest. But I feel that in sharing more of my story, I might be able to help others - even one person. I think a lot of women may suffer from this and not even know. You all get the very abridged version & I will share more as we go, along w restaurant pics too - We do have more to open some day!! ☺️ Anyway, this past spring, out of the blue, I began struggling w high anxiety & panic attacks. I have always felt like a very empowered person & then suddenly everything changed. Fear, darkness, angst, suffering, worry- those were my days and my nights were filled w the same - along w panic and insomnia. I was prescribed meds. But I knew that if this was going to be my life, I was going to have to figure out a way to cope. On to meditation, breathing exercises, fierce workouts, prayer, writing journals. I felt I was improving. Then I had a major relapse in August. But as awful as it was, I began gathering new insights: What I was experiencing was not coming from my mind, but from somewhere else: my gut. I was diagnosed w “Intestinal permeability” - aka “leaky gut”. I began changing my diet August 21, and I have settled into an autoimmune protocol diet (AIP). My system is so sensitive to so many things, I can’t even eat the full AIP diet (no beets, sweet potatoes, fruit). HOWEVER, my symptoms of anxiety and panic have diminished about 99% and I am making my way on to week 3 (full AIP). My GOAL: make it to early December on AIP. At that point I will try reintroducing Foods. I welcome insights, suggestions, support. My family has a lot of autoimmune tendencies - & my identical twin @kerrycarrot is a type 1 diabetic. #AIP #carrotcake!!! Stay tuned for when I’ve decorated it! Mix dry: 1 cup coconut flour, 1/2 cup arrowroot flour, lots of cinnamon, 1 tbs ginger powder, 1 tsp baking powder, pinch salt. Mix wet: 2 tbs honey, 1/2 cup apple sauce, dash vanilla, 1 tsp apple cider vinegar, cup coconut oil. Mix dry and wet and stir into cup of grated #carrots. Make up gelatine with 2 tbs gelatine in 1/3 cup water. Day 11 on AIP. Feeling a lot more energetic and maintaining a minimal appetite. The biggest challenge this week was traveling on business and not being able to cook my own meals. Luckily there was a Whole Foods near my hotel where I could easily make my own salads, and ensure that only the right healthy ingredients were used. Being back home, I was excited to get back in the kitchen!. . . { 📸'd above } • Zucchini Chicken Enchilada Casserole. . . { AIP Enchilada Sauce recipe } • Heat 2 Tbsp Avocado oil in sauce pot over medium heat. Saute 1 diced white onion until translucent. Stir in 1 cup no-mato sauce (recipe in a future post); 0.5 cup chicken broth; 0.25 cup water; 2 tsp garlic powder; 2 tsp oregano; 2 tsp cilantro; 1 tsp sea salt. Simmer for 15 minutes until thickened. Add 1 tsp of horseradish powder for spice, to taste. . . { Casserole recipe } • Preheat oven to 400F and prep a large casserole dish. • Slice 3 zucchinis into long Strips and pat with a paper towel to remove excess water. • Line bottom of casserole dish with 1/3 of the Enchilada Sauce. • Layer zucchini slices; add a thin layer of shredded chicken breast (lightly salted and seasoned with herbs de Provence); add thin layer of Enchilada Sauce. • Repeat for 3 more layers. • Bake for 15 minutes and let cool. • Top enchiladas with sliced radishes; diced red onion; chopped green onion; chopped cilantro; Avocado slices; and "sour cream" (coconut cream & apple cider vinegar to taste); and limes. ________________________________________________________ | #AIP| #AIPrecipes| #AIPdiet| #AIPpaleo| #AIPprotocol| #AIPaleo| #AIPfriendly| #AIPlifestyle| #AIPrecipe| #PaleoAIP| #AIPtravel| #Autoimmunity| #AutoimmuneProtocol| #HealYourGut| #GutHealth| #CleanFoods|

Double tap if long ingredient lists drive you nuts. Seriously. Since when is “maltodextrin” a Paleolithic ingredient? Ugggg. . Junk ingredients in “health” food is honestly one of my biggest pet peeves. I will get straight up snarky mid-aisle & give offending products the DEMON EYE. . Here’s some Quick Rules for checking ingredients while grocery shopping for wellness: . 1️⃣ Shop for items that have minimal ingredients. Your ingredient list mantra is “Less is more.” . 2️⃣ If you can’t pronounce it, you don’t want to eat it. . 3️⃣ If you’re granny wouldn’t recognize it, I don’t care how “natural” it is, it’s prolly best to avoid it. . 4️⃣ This flies in the face of all health food marketing (hurrah, fight the power!) but just buy whole foods & eat simply. I forgot to mention my hashi's levels dropped from 38 to 17, which is freaking awesome for someone with hashimotos disease. I did it by complete diet change; no carbs, gluten, limited ingredients and all natural food. Also through daily fasting. I eat good fats like avocado and coconut oil. I had to cut out all dairy. Simple AIP breakfast with chicory “coffee” on the side! I’ve been rolling with a stainless steel tea strainer and ground organic chicory root and it’s been a solid substitute (minus the jitters and caffeine buzz) ☕️ next up I’m trying Coffig — a coffee alternative made 100% of ground dried figs ordered from Amazon. Today was a joint family adventure of enjoying Chikorita Day at the local outdoor mall. Did a whole lot of walking and made sure to put on some sun block and wear our hats but we still got a good amount of sun. You don’t always have to go to a gym to get in some activity, and anything that you can do that includes the entire family (minus our fur baby today) is a good thing. So it’s been nearly 4 weeks of healthy mostly AIP eating (I’ve been pretty honest about my slip ups). While I would like to start my reintroductions, I feel like I owe it to myself to continue for a couple more weeks until I can get my macros closer to my goals. Finding that I have a lot more energy and have finally pulled myself out of the low carb fog. As long as I’m not doing training for work I’m able to get in my two walks for 30 minutes of activity every day. My goal this week will be to get in 3 days of light strength training, which doesn’t have to be in a gym. First warm drink since my sinus/throat surgery. I had a great, experienced surgeon and all 8 procedures went well. But there was one little surprise when he was removing my right tonsil...an abscess in my throat that was hidden behind it ruptured and wouldn't stop bleeding - they had to cauterize the entire right side of my throat. Yeah, no fun. But the worst of the pain is over, so I opted for an herbal tea, low temp, with ice cubes. Simple meal that is a repeat of what I had earlier this month. Salmon cooked in butter, cooked frozen broccoli with butter, and sweet potato fries with (you guessed it) butter. . My eating has been quite random lately. Making healthier choices feels like second nature now. I don't feel restricted for once in my life. I'm just making choices and trying to figure things out with as little stress as possible. . Because of this, my meals have been repetitive and I don't have many food pics to share. I've been wanting to expand what I share and talk about on here. What's stopping me is the idea that I have nothing to say. But that's not true. I spend a lot of time alone and I think about things a lot so there has to be something knocking around in my brain that's dying to get out. . I'd like to just be open and real and just talk about how it is navigating the world in general as a college student with health issues, anxiety, and a huge tendency towards extreme introversion. Other stuff as well too. I'm hoping to read more about nutrition, health, and everything else under the sun so I can share what I'm learning. Instagram is such a great place to hear different perspectives and learn new things so I want to take full advantage of that!

What do you do when cravings hit? Do you immediately give in to a craving? Do you resist? What do you do? * For several days in a row, I woke up with a craving for buckwheat pancakes!!! Knowing that I would not find 100% buckwheat pancakes at any local eatery, I ignored that craving. * When this craving persisted, I paid attention. Cravings are your body’s way of communicating that something is out of balance in your body…or in your life. * So, what was out of balance? I then realized that I had not eaten any starch-carbohydrates for nearly a week. I eat plenty of carbohydrates—as in vegetables, especially leafy greens—and plenty of healthy fat. I just haven’t had any desire for starchy carbs, like sweet potatoes, carrots, squashes or beans lately. Even though I worked out most days this past week. * When it comes to carbohydrates (particularly, starch-carbohydrates), your thyroid is like Goldilocks; it functions best when you’re eating just the right amount for your body—not too much, not too little. A VLC (Very Low Carbohydrate) diet can negatively affect thyroid function because insulin is needed to convert T4 (storage thyroid hormone) into the active T3 hormone, which is used by your cells…. If your diet is TOO low in carbohydrates, your insulin will be too low to help facilitate that T4 to T3 conversion. * My near-daily craving for buckwheat pancakes told me that I needed two things: 1) I needed to eat some starch carbohydrates and 2) my body was craving some much-needed QUIET downtime. * This morning, I made time to indulge both cravings: Banana-Buckwheat-Flax pancakes ( #glutenfree #wheatfree #dairyfree) + sliced Winter Nelis pears from our pear tree ( #notsweet) + uncured, #nitratefree bacon. * Totally YUM…if I do say so myself! Walking through the grocery store yesterday, a craving for an old favorite kicked in... I wanted wavy potato chips and french onion dip!!! I didnt give in, but today decided to make something with a similar comfort but is actually good for my body. Baked yuca fries and an avocado french onion dip! I freestyled the dip: blended avocado, diced carmelized onions, roasted garlic, dill, sea salt, apple cider vinegar, and almond milk (could use coconut milk (for AIP compliance) or any milk of choice). Completely curbed any craving and this snack actually promotes gut health! I dedicated this week to slow cooker meals 👌 This is the first time I’m making liver in my crockpot. It turned out very well. So: chicken livers with chicken breast and a lot of onions cooked in the #slowcooker, with broccoli mash and pickled cucumbers and carrots 🤩
