I have been doing much better eating low-starch and #paleo the last week since returning from vacation and already feeling a huge difference! I forgot to get a picture of last night’s dinner, but we had Korean beef skewers and red cabbage slaw. Thursday night we had pork chops with a vinaigrette reduction (that I overlooked) and sweet potato mash. Wednesday night we had chicken meatballs and greens. Tuesday we had paleo biscuits and gravy which were surprisingly good! Been eating light breakfasts as pictured in pic 4, usually a light fruit and a boiled egg or just some coconut milk. It’s my last weekend call for first year of residency! Where has the time gone! Went from a young clueless doctor working on a standing desk made from a stack of books to a still young and slightly less clueless doctor working at this simple but beautiful work station. It has been an incredible year with many smiles, tears, late nights, lost sleep, and hours and hours of driving back and forth to hospitals and clinics and finally every so often to my love and church community back home. There is no way I could have imagine walking this path without the surplus of gratitude and love in my life. Taking a breather now to reflect on it all and enjoy one of my regular hospital meals, sweet potato and oysters with olive oil and a little garlic. Strawberry “chocolate” mousse 🍓 🍫 has become one of my favorite desserts. To make it just blend in a food processor some coconut cream + avocado + frozen strawberries + carob powder (or cacao) + collagen peptides + vanilla extract. You can add a little bit of raw honey or maple syrup if it’s not sweet enough for you. . Este mousse de fresa y "chocolate" 🍓 🍫 se ha vuelto en uno de mis postres favoritos. When you try out a new recipe, and it turns out delicious🙌🏼 Raspberry scones topped with coconut butter. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Cooking with “different” ingredients is, well...different, and it may require a learning curve or some experimenting. We went to @whitfieldpgh last Friday night. They are by far the most ingredient aware & allergy friendly restaurant I’ve eaten at in Pittsburgh. This picture is random but it’s the only one I took because #nophoneswithfriends Eating out gives me anxiety, it’s hard to trust that a busy kitchen can keep your food clean and living in fear of a reaction is not enjoyable. Our waiter Sean was awesome, knew what nightshades were, and totally handled our table full of allergy/intolerant eaters happily. They serve & are knowledgeable about their grass fed, grass finished beef from @jubilee_hilltop_ranch Every dish was delicious and there were a ton of AIP and paleo friendly options. They even had a dessert I could order! You all know I’m a huge advocate of self care & putting on your own oxygen mask on first. Also, as my yoga teacher says, you have to be open to receive to be able to give because you can’t give from an empty cup & part of self care is being open to receive... eg love from your partner, help from a friend, love & self care from yourself. It’s been a minute since I’ve shared because I was hoping to make a prettier version of this .. but this will do! Here’s an alternative version of french toast.. not fully AIP but definitely enjoyable. Toasted GF/plant based bread w/coconut butter spread like butter, topped with fresh strawberries, cinnamon, and shredded coconut. I feel like the toppings could be limitless with this one! Whether it be honey, maple, more fruit, etc!

Coconut raisin oatmeal on this damp morning. Waiting for the rain to come in... Ingredients: 2 cups full fat canned coconut milk (can use light but check ingredients- look for no guar gum or other unnatural additives) 1 cup Bobs Red Mill Gluten Free Oats (not recommended on full AIP diet, but for me they seem to be ok. They were a re-introduction for me after 30 days) Dried cranberries or raisins (or both 😁). Heat coconut milk in a pan until boiling. Add 1 cup oatmeal and lower heat and simmer about 15-20 until it’s to your liked consistency. Remove from heat and stir in dried fruit. Week 6! Yay! Feeling really good. I go through phases of thinking ‘AIP is amazing it’s definitely working’ and then ‘it’s not possible to solve these diseases in this way there is no hope’ - at the moment though I’m feeling pretty positive. Tonight I made these cauliflower gnocchi, my whole family loved them and it was quite easy to make! Recipe is: 1-1/2 cups of boiled cauliflower, 1 cup of cassava flour, 1-1/2 tsp salt, 3 Tbsp of avocado oil. Mix all the ingredients in a food processor. Roll out and cut into gnocchi shapes. In a pot of salted boiling water, cook the gnocchi in batches. When the gnocchi are cooked (when they float to the top) brown them in an oiled non-stick skillet to desired color. Uh oh.... The delusion of identity😳 . . . This is a huge reason why people are where they are in the medical and fitness realm. We have a magnetic attraction to labels - disease labels, fitness labels, personality labels, and whatever we conjure up about ourselves - whether it’s actually valid or not. _ And it’s a big problem I see because for many it’s a pretense - a facade of what we really want and are that huddled beneath the ground. _ It’s entirely much easier to attach to a label because it signifies something that we connect with - it makes us feel worthy. It gives us a reason for why we where we are and what we do. Thus, we can then be pardoned for any “wrong doing.” We find meaning out of this label because we know someone else has it too and we can form a tribal connection. - That inherently isn’t bad - we need that like we need oxygen - it’s what unifies us as humans, but here’s the thing... it is also the single most reason as to why it’s dismantling us because totally incongruent with what our intuition says and wants. _ Im looking at you and saying, your logical mind wants to step away from that identity, but your too comfortable being there because it yield exactly what you’re after - acceptance, recognition and attention. - And it simultaneously stifles you from becoming what you were destined to do and be. That’s what’s commonly going on in the fitness industry as I see it. This doesn’t apply to all but why else would we feel the need to publicly put our disorder/disease label in our bio or feel the need to incessantly talk about it in every other post? _ I’ll tell you what. All the clients I’ve ever had who were sick never once put it all over social media. There’s a reason for that. A nice, hearty summer 🥗 thrown together during the little time I had between jobs today 🏃‍♀️ Frisée, romaine, endives, fennel, jewel 🍠, ground wagyu beef, blueberries, Persian 🥒, nutritional yeast, and sumac (unsure about AIP compliancy on this one 🤷🏼‍♀️) . It was widely accepted that there were many problems associated with them.⠀ ✨⠀ Some of these problems include:⠀ ✨⠀ 1️⃣Phytic acid (which binds to nutrients, making you unable to absorb them)⠀ 2️⃣High-FODMAP⠀ 3️⃣Lectins (contribute to leaky gut)⠀ ✨⠀ Today, the Paleo community is more lenient on incorporating legumes and beans into the diet, and it is generally accepted that a little goes a long way. ⠀ ✨⠀ For me personally? HAPPY FRIDAY!! & literally, I’m SO happy! Here is why for those of you who haven’t followed my journey: 13 months ago I had to make decision to quit my corporate job because at that point in my life I was physically falling apart. **I had just gone through 4 rounds of antibiotics over the course of a few months for various infections in my body, I had unknowingly developed fibromyalgia, and most days I struggled to function.** My husband, bless his heart, began working seven days a week while I stayed at home to care for our daughter, and focus on my healing. Throughout this part of my life I started feeling extremely hopeless...about my health, my lack of purpose in life, and the weight of the burden I knew my husband was carrying for our family and honestly I felt guilty, like SO guilty for being chronically-ill... Fastfoward: I FINALLY started seeing drastic improvements in my health, and I stumbled upon @nourished_wellness . She was doing what I had been SLOWLY working on over the course of months – blogging about her personal journey being chronically-ill, and sharing all of her tips that included her parternship and passion for safer skincare. It finally hit me – my healing journey; how I lost 70 pounds and reversed all the side effects of the 3 pages worth of inexplicable symptoms I had gone through…my passion for low-toxic living… all the bad cards life was throwing me… they were actually stepping stones. Over the past two weeks, my life has SHIFTED. I feel a lot like the woman in the Bible who only had a small amount of oil and was told to pour, and as she poured she began having more oil than she could find containers for!! Truly, I'm astonished by God's faithfulness when we act in obedience, surrender and love. & I can't even describe to you how FULL my heart is by "pouring" or how incomprehensible I find it to know that in TWO WEEKS I went from worrying about the quantity of my medical debt to full assurance that it will all be paid for and VERY QUICKLY! 🙌🙏 So, I'm dropping a line... if you are chronically-ill and can relate or if you just love skincare.
