This diet is one to be considered by anyone with an Autoimmune Disease.  If you suffer from psoriasis,  gout, rheumatoid arthritis,  lupus, Hashimoto's,  Crohn's Disease, or any other AI disease...you may want to consider trying the AIP for 6 weeks. It is a version of the #paleo diet, although much stricter, designed to reduce inflammation in the body and RELIEVE, NOT CURE,  symptoms of autoimmune disorders. The purpose of this diet is to ELIMINATE all foods that may cause inflammation (grains, gluten, dairy, eggs, legumes, sugar, alcohol, food additives and gum) and to EAT vitamin and nutrient rich foods (veggies (avoiding nightshade veggies), sweet potatoes,  lean meat and fish, minimal fruit, fermented foods, bone broth, green tea,  vinegars,  coconut oil/flour,  avocado and olive oils, honey and maple syrup). What are your daily self-care practices? One of mine is to meditate for 10 minutes which is such a grounding and calming practice! 🧘‍♀️ one thing I’ve learned is there is no wrong way to meditate. You can do this practice sitting, standing, laying down or even walking. I personally feel best meditating laying down with my full body supported 👌

AIP Dessert! 😄 Yay! I was craving for some sweet dessert and then my childhood dessert popped up in my head. It is Thai Pumpkin in coconut milk (ฟักทองแกงบวด) You will only need 4 ingredients: pumpkin, coconut milk, salt and stevia leaves or stevia powder. Organic if possible. Cut pumpkin in small pieces and rinse in salt water. Boil a can or two of coconut milk with half tsp of stevia and pinch of salt. Then drain pumpkin from salt water and add to boiling coconut milk. On medium heat till the pumpkin is cooked. It’s not so sweet as original as I don’t use sugar but it is something creamy and delicious. I don’t know what your snow day rituals are, but mine include: putting on every single piece of clothing I own🧦, building some sort of disfigured snow creature☃️, and cooking delicious, soul-warming food (given we don’t lose power). Check out today’s variation! dEATs below:👇🏻 - #whatsonmyplate - •spinach garlic burger*, baby arugula*, roasted zucchini squash*, roasted broccoli*, roasted sweet potato rounds*, strawberries*, and freshly-chopped chives*• (*Organic) - SPINACH GARLIC BURGERS: Ingredients: •1lb dakotagrassfedbeef ground beef •1 cup chopped spinach •3 tbsp chopped chives •2 tbsp avohass_evao garlic-infused avocado oil •sea salt and black peppercorn to taste Directions: Coat a large grill pan with oil and heat to medium temp. Add all ingredients to bowl and work well with hands until ingredients are evenly mixed. Form ingredients into patties and place in hot pan. This is a typical kind of meal for me throughout the week. 😋 I cook the chicken first and use seasonings like himalayan salt, turmeric, thyme, ginger, etc. With some coconut oil I fry onions, frozen green beans, carrots, olives and whatever other veggies I might have. I like to top it off with some sauerkraut to get those probiotics in! 👊 The best thing for me is to make similar kind of meals to keep cooking simple and stress free.😸
