Pink Lady apples have so much good going for them: highest in fiber and antioxidants, less calories than other apples, nice supply of Vitamin C and Vitamin A plus lots of healing pectin and minerals. They tend to be smaller,slightly tart, have a fresh crunch, and don’t brown as quickly as other apples. Pectin is known to be helpful for people with GERD, glucose issues, and more, including a soothing effect on the lining of the intestines. I like to slice them thinly, squeeze lemon on them, and place them in a container for an “on the go” snack. To make health-supportive baked apples: You will want to use the the amount shown in this photo (2.5 lbs), cored, peeled if desired, sliced thinly, and placed in a lightly oiled shallow baking dish. Squeeze one whole lemon over sliced apples. Can add one teaspoon coconut crystals or maple sugar, and ½ teaspoon cinnamon if desired. Cover and bake at 350 degrees for approx 30 minutes. Done when apples are soft. My family loves this dessert even though by most standard it is very plain and simple. I think the pink ladies are the secret.
