Am I the only one who has just recently discovered grill baskets for things like veggies and shrimp? I didn’t know these were a think until I saw my cousin post about them. I used ours for the first time tonight and, oh my goodness, I LOVE it! We love fresh veggies on the grill in the summer but usually wrap them in foil and usually accidentally over cook them since we can’t see. Tonight’s vegetables were cooked to perfection! These crisp, yummy veggies can be achieved in three easy steps (we paired ours with steak, also fresh off the grill)!
• Cut zucchini, sweet onion, and asparagus. • Toss lightly in olive oil, sea salt, and pepper. • Throw into the grill basket on the grill. I cooked on medium heat and stirred frequently so they would be cooked evenly. It probably took 10-12 minutes. •
