Sweet Garlic & Onion Grilled Chicken
Disclaimer : this recipe will completely ruin plain grilled chicken for you..... FOREVER!
For the vegetables (potatoes, carrots and sugarsnaps), I blanched them until they were almost tender
Then sprinkled the onions & more @ (you can never have too much) just before the dish goes in the oven
Quick hack I use for whole grilled chicken:
I always wrap it in foil and steam it for about an hour in a covered sufuria
This shortens the oven time for me
Hence I get an even golden brown crispy exterior and a soft juicy inside
Bake uncovered for 45 minutes in the preheated oven, to a minimum internal temperature of 180°
Turn constantly to ensure both sides cook evenly
Remove from heat, and baste with drippings. Cover with aluminum foil, and allow to rest about 30 minutes before serving.
