This might be one of the best meals I've ever made. 🤤It's not paleo/w30 but it's definitely still healthy! I don't really eat with food restrictions but I've noticed that in general, I feel better being 80%ish paleo- but I still incorporate dairy, gluten and legumes where it makes sense. To make this Paleo friendly, you can use a diary free yogurt from @ or @, skip the feta in the salad, and make your hummus according to the directions just sans the chickpeas- OR substitute with cauliflower for cauliflower hummus. 😎On my plate👉🏽Grass fed lamb meatballs with a lemon cumin yogurt sauce, roasted zucchini, homemade beet hummus, and a Greek side salad.
For the meatballs, mix ground lamb, salt, pepper, a little cumin, a little cinnamon, garlic powder, oregano, 1-2 diced garlic cloves, chopped mint and parsley or cilantro, and diced red (or white) onion. Shape into balls and cook for 15 minutes at 350. Slice your zucchini, drizzle with avocado oil, and season with garlic salt, paprika and sumac. Bake alongside your meatballs for 15-30 minutes. While those are baking, prepare your hummus. Blend chickpeas (I used dried chickpeas soaked in water for a few hours but you can use canned), 2-4 beets (depending how much beet flavor you want and how pink you want it!), 2-3 garlic cloves, 2-3 tablespoons tahini, lemon juice, salt, pepper, cumin, olive oil (I used avocado oil), and some water to thin it out. For the Greek salad, chop tomatoes and cucumbers and mix with salt, pepper, dill, parsley, feta, and lemon juice.
For the yogurt sauce, mix yogurt (@ dairy free plain yogurt) with cumin, salt, pepper, lemon juice, mint, parsley and a little water to thin it out. Done!
