People have become so afraid of carbs that they avoid eating healthy foods like fruit and wholegrains. Throwback to when I made a salad with tomato, zucchini, orange bell pepper, avocado and kalamata olives. I used lemon instead of salad dressing and sprinkled toasted hazelnuts on top. I also made potato fritters with boiled potatoes lightly pulsed in a blender with tofu, nutritional yeast, onion powder, garlic powder, oregano, paprika, chickpea flour, salt and pepper. I hand mixed some frozen corn and spinach in afterwards and pan fried it in oil on medium-high heat. I miss my blender 😬 can anyone recommend a good/affordable blender or food processor?

A little Monday food prep action for my main man @bpwasche 🌿 If everything is prepared he will have no excuse not to eat it right! 😆All of this was beyond easy to prep, I sautéed tons of spinach with homemade vegetable stock & minced garlic + sweet potato “fries” Baked with coconut oil + under the sweet potatoes 🍠 are dry roasted carrots + quinoa & raw broccoli. I’ll also send him off with a bunch of fruit, nuts & overnight oats. 👌🏼🌈🌰 #foodprep

Open faced grilled veggie sandwiches!🥪 We started by spreading hummus on our bread and stacking spinach. Then we added sliced squash and sliced @fieldroast smoked tomato quarter loaf that we seared in a pan. Finally, we topped it with grilled cherry tomatoes and a drizzle of balsamic. For extra credit you can sprinkle on some crushed red pepper and Himalayan salt.👌🏼

For real do you just have cravings for cookie dough? Here is an amazing recipe I love to use when I just want to have a sweet treat 🍪 plus it is half the calories 🤫 ⠀⠀ Ingredients: -1/2 cup earth balance vegan butter spread (or coconut oil) -1/2 cup packed light brown sugar -1/4 cup white granulated sugar -2 teaspoons almond or soy milk (if using coconut oil, then replace with 2 Tablespoons) -1/2 teaspoon vanilla extract -1 teaspoon baking soda -1 1/3 cups all-purpose flour -3/4 cup vegan semi-sweet chocolate chips Instructions: Cream vegan butter (or coconut oil) and sugars together in a medium-sized mixing bowl. I use the back of a fork to smush it all together. Mash / mix / whip in milk and vanilla. Stir in baking soda and flour. Then stir in chocolate chips. I was first introduced to eating spaghetti squash with traditional tomatoe sauce but the cool thing about this vegetable is that it’s super transformable! Just because we call it “spaghetti squash” doesn’t mean it has to be eaten that way 🙃 I usually like mixing up with lime juice and various spices but this time I simply did olive oil, salt, pepper and some chilli flakes cuz I like a bold flavor profile. I don’t know about you guys but I’m very proud of myself when I am patient enough to cook every side of my tofu cubes on the stovetop. This was super easy actually. I used frozen stir fry veggies, ready made curry sauce and these rice ramen noodles (they are green for some reason). I am so tired tonight but I still managed to make a nice little dinner 🤗

I will also be featuring more entries from you in my story tonight! What would you make with your noodles?? . Vegan Pad Thai . 1-2 shallots, chopped finely 2 large cloves garlic, crushed 8 oz mushrooms, sliced 1 package of @lotusfiods rice noodles 1/4 cup water or low sodium veggie broth 2 tbs coconut sugar 2 tbs tamarind concentrate 2 tbs low sodium soy sauce, liquid aminos, or coconut aminos 1-2 tsp chili powder 1 cup bean sprouts + more to garnish 1/4 cup chives or green part of scallions 1 cup tofu, cut into cubes Crushed roasted peanuts fresh lime juice . Soak noodles in warm water. Heat oil in pan over medium heat. Add shallot and garlic and stir fry until aromatic, adding a spas of water as needed to prevent sticking. Add mushrooms and saute a few minutes more. Combine water, sugar, soy sauce or alternative, and tamarind concentrate in small bowl. Add to pan. Rinse and add noodles. Yummy looking Sweet potato brownies by @michalakramer 💗 👍🏽😉🌱 Recipe: • 500g of sweet potatoes (about 2 medium) • 12 medjool dates • 6 tablespoons of pure maple syrup • 100g of ground almonds • 2 tablespoons of melted coconut oil • a pinch of salt • 100g of ground oats • 6 tablespoons of raw cacao powder Boil the sweet potatoes (in small pieces) in 20 minutes, until they become really soft. Put the potatoes and remaining ingredients to a food processor and stir well. When it’s sticky put in a baking dish and cook for 45 minutes at 180C/350F. Cool down before putting on the icing. ICING 2 sp of coconut oil 2 sp of maple syrup 3 sp of cacao powder Spread the icing on top of the cake and cut into squares. Add hazelnuts on top if you like! #bestofvegan

I was craving chocolate baaad and these crêpes filled with chia cream, and sitting on blueberry yogurt/chia pudding were perfect 👌 I hope you enjoy them as much as I enjoyed eating them! 😋 . 🍫 The minute I saw Ronja of @miss_gruenkern's black & white crêpes, I knew I had to recreate them in a bento box and join her #blueberrylove💙 party 🎉 Ronja's page is like an ode to blueberries and contains some of the most amazing creations I have ever seen 🙌 . 🍫 BLACK & WHITE CHOCOLATE CRÊPE BENTO 🍫 . Crêpes: 1 cup gluten-free flour 3/4 tsp xanthan gum 3/4 tbsp flaxseed meal 1 3/4 cups almond milk 1/4 tsp salt 1 tbsp melted coconut oil 1 tbsp maple sugar 1/2 tsp vanilla 1/8 tsp cinnamon *2 tbsp cocoa . Chia cream filling: 2 cups light coconut milk (canned) 1/2 cup @salbachia chia seeds 1 cup @enjoyyoso vanilla coconut yogurt *2 tbsp cocoa powder . Divide all chia cream filling ingredients in two, except cocoa powder, and mix to combine. Add cocoa powder to one and refrigerate both min. 2 hours. Adjust coconut milk/yogurt + cocoa powder to taste. Combine all crêpe ingredients in a blender and adjust to taste. Cook 1/4 cup of batter approx. per crêpe until only half is left. Add cocoa powder and adjust to taste, then cook remaining batter. One of the things we had to painfully learn in the past is that nobody can safe you out of your misery! 🌊Eventhough this might seem harsh and uninspiring it is actually the Opposite since this clearly shows that you alone have the power within you to change. Many people wait for someone our something to turn them around that will rescue them but look at it this way, even if this person does it's best there will always be a hole in the system🌫 which has to be filled with your own will power⚡️. Did you know that patients that have been severely injured can remain sick even though there body is healthy again? Most of the time it's not the circumstances that are holding you back and rather yourself. So instead of focusing on things that are bad or unhealthy in your life try to work on the strength of your will power which is immensely ✨influenced by feelings of hope and a redefinition of what you want to see your life become. . Little Aragorn 🐶just got his stitches removed and is now left with out his comfy headrest aka. his soft collar. Oh well we might pop it with us when we go traveling with him since he really loves the comfort and the cushioning 🙈for his head. We hope that everyone has great plans for the weekend! Wait until water is evaporated before removing from stove.
