17.04.18❤️ Swipe for a timeline of the day😊 Got some delicious fresh bread🥖 from the bakery across my apartment in Lisbon and some amazing fresh tomatoes😅🍅 They are so tasty here🇵🇹 and remind me of home! Finally picked up the scooter and drove along the coast all the way to Sintra, such a historical and beautiful forest🌳 Had lunch at a very random / tree hugging vegan place called “Bonsai” 😅 then walked all the way to the top of the historical park and all around the amazing Pena Palace 💫 To top off such an amazing day we had dinner at this gem called ‘Sanskar Nepal’ in Bairo Alto - an authentic Nepalese restaurant with an exclusive vegan menu, the tastiest food including amazing vegan cheese naan🤤 and such sweet and personalised service, we went back again yesterday! The most relaxing day with my person😊

How To Cook Quinoa 💚👌🏽 Serves 4 to 6 What You Need Ingredients 1 cup uncooked quinoa (any variety — white or golden, red, or black) Olive oil, optional 2 cups water or broth 1/2 teaspoon salt Equipment Fine-mesh strainer 2-quart saucepan with lid Spoon Instructions Rinse the quinoa: Measure 1 cup of quinoa and place into a fine-mesh strainer. Rinse thoroughly with cool water for about 2 minutes. Rub and swish the quinoa with your hand while rinsing. Drain. Toast quinoa in saucepan (optional): Heat a drizzle of olive oil in the saucepan over medium-high heat, and add the drained quinoa. Cook, stirring, for about 1 minute to let the water evaporate and toast the quinoa. Add liquid and bring to a boil: Stir in 2 cups of water or broth and the salt. Bring to a rolling boil. Lower heat and cook, covered, for 15 minutes. Turn heat down to the lowest setting. Cover and cook for 15 minutes. Let stand, covered, for 5 minutes: Remove the pot from heat and let stand for 5 more minutes, covered. Don't peek! Fluff and eat! Remove the lid — You should see tiny spirals (the germ) separating from and curling around the quinoa seeds. Fluff the quinoa gently with a fork, and serve. If any liquid remains in the bottom of the pan or if the quinoa is still a bit crunchy, return the pot to low heat and cook, covered, for another 5 minutes, until all the water has been absorbed. #kitchn #vegan #quinoa #lunch

Who wants dessert? Throwing it back with these Pitaya Cheesecake Bites 💕 Are you guys ready for the weekend? I smell a road trip in my agenda 😄 #thehungrydragonfly Here's the recipe: Ingredients: For the based: 1 cup of mixed nuts (walnuts, almonds, cashews and shredded coconut) 4 pitted dates Filling: 1 cup of cashews, soaked overnight 1/2 cup vanilla vegan yogurt @lovemysilk 3 tablespoons agave nectar 1 1/2 cups of mixed fruits (pitaya, peaches, strawberries) 1/3 cup plant milk (I used vanilla soy) Pinch of salt 1 teaspoon lemon juice Method: In a food processor mix the nuts and crumbled until you get a sticky mixture. Line up a muffin tray with parchment paper liners. Press about 2 tablespoons of the mixture into the bottom of each muffin cup. Mix all the filling ingredients, blend and pour on top of the nut mix. Freeze for about 3-4 hours or until firm. Vegan cornbread! 🌱🌽🍞 . 2 cups Cornmeal mix 1/3 cup melted vegan butter 1 cup soy milk 1 tsp apple cider vinegar 2 tbs milled flax seeds 6 tbs warm water Preheat oven to 350 degrees. Mix soy milk and vinegar together set aside. Mix flax seeds and water set aside. Wait approximately 3-5 minutes. Mix all ingredients together and pour into a greased 8X8 pan. Bake at 350 for 30 minutes. Tacos, rice and beans for lunch and dinner yesterday and today. These were so good. I seasoned the rice with turmeric, sea salt and cumin. You’ve heard of Impossible Foods, you’ve heard of Beyond Meat — but there’s a new plant-based meat company on the scene. Seattle Food Tech launched in 2017 and recently raised a $1 million seed round, led by Fifty Years and Blue Horizon. The nascent company hopes to produce plant-based meat at a scale and price comparable to traditional meat. In February, they finished developing their first product: a “chicken” nugget made of textured wheat, oil, chicken flavoring, cornstarch, and corn breading. What sets the product above its humble ingredients and makes it so good, according to founder and CEO Christie Lagally, is how it’s processed. “It’s really all about the processing,” she told The Spoon. In order to make plant-based meat at scale and at a price competitive with meat, plant-based food companies have to develop intensive manufacturing technology specialized to their product. They hope to have their nuggets in schools and hospital dining halls by fall of 2018. *Eng/Pt* Linguine with tomato and basil sauce. This is so simple and delicious that I feel the need to share with you how I make it. Please keep in mind that this is a lazy person version. 😅 So I start by cooking the pasta in water seasoned with salt for 7 minutes, then I drain it but not completely, keeping some of the pasta water with the pasta in the pan and I put it back in the stove. Then I add olive oil, crushed garlic, chopped canned tomatoes, tomato paste, paprika, pepper, salt and dried oregano and let it simmer while stiring it until the pasta starts to absorb the sauce. Then I add parmesan style vegan cheese (Prosociano @violife_foods) and stir it until the cheese becomes a part of the sauce. Then I turn the stove off and add chopped basil. I absolutely love this! 👌🙌🤘 *** Linguine com molho de tomate e manjericão. Este prato é tão simples e delicioso que eu sinto a necessidade de partilhar convosco como o faço. Por favor tenham em atenção que isto é a versão de uma pessoa preguiça. 😅 Então eu começo por cozer a massa em água temperada com sal durante 7 minutos e de seguida escorro-a mas não totalmente, deixando um bocadinho da água da cozedura da massa, juntamente com a mesma dentro da panela e coloco-a novamente no fogão. Adiciono azeite, alho esmagado, tomate de lata partido aos bocados, polpa de tomate, pimentão doce, pimenta, sal e oregãos e deixo fervilhar, mexendo, até a massa começar a absorver o molho. De seguida adiciono queijo vegan tipo parmesão (Prosociano @violifept) e mexo até o queijo se fundir no molho. De seguida apago o fogão e junto manjericão picado. Even better is the fact that you could lose weight from that early-morning indulgence. Researchers looked at 193 obese adults and found that those who ate a high-protein, high-carbohydrate breakfast, along with a dessert, stuck with their diets and kept the weight off longer. The other adults in the study, who ate a low-carb/low-calorie breakfast without the sweets, didn't have as much success.
