Please don't take my sunshine away...' 😎 ~ The winters in God's country are long, the days are short, and the sunshine is rare, and since it's the sun that helps us produce Vitamin D it stands to reason that a few of us might be Vitamin D defiicient right about now. ~ We can spend as much time outdoors as we like soaking up those dynamite rays baby, but when the temperatures drop and we're adding layer of clothing upon layer of clothing there is no bare skin left in the sub zero temperatures like we had this morning to absorb those last morsels of sunshine. ~ And yes, our bodies *do* have the ability to store Vitamin D, but it's by no means an infinite supply, and the older we are & the heavier we are the lower that capability is. And since Vitamin D deficiency is linked with depression, weight gain, fatigue, hair loss, muscle pain, & low immunity/healing impairment it's imperative that we supplement. ~ You'll want to supplement with Vitamin D3 (cholecalciferol) rather then Vitamin D2 (ergocalciferol) as D3 is what is produced by the body itself and is metabolised more effectively by the liver. D2 also produces less calcifediol, the main circulating form of Vitamin D and so a D2 supplement is less effective at raising calcifediol levels. Vitamin D2 is also more sensitive to humidity and therefore more likely to degrade over time. ~ Vitamin D is fat soluble so you're better to choose an oil based supplement, or take your supplement with a food containing fat so as to increase it's bioavailabiliity. As we head into winter, and the temperatures take a nose dive I start to crave comfort foods; Foods that are rich in flavour. Foods that pair well with the root veg now growing in abundance. The world: Ooooh Kevin the Carrot...!! People the world over be like: ‘Oooooh Black Friday!’ And I be like ‘Well, it’s Friday and I’m drinking black coffee so I guess that counts?’ 🤷🏻‍♀️ ~ In all seriousness though back in early 2014 I was a latte a day fiend, and every evening my dinner was finished off with a glass of cold milk and a square of dark chocolate. ~ Fast forward to today and the dark chocolate remains, but the dairy only makes an occasional appearance, and nobody in the house drinks milk at all. ~ Have I noticed a difference? Absolutely. My sleep has improved, my sinuses are less congested, I don’t have that weird need to clear my throat after every meal, plus I don’t get the winter nasal drip... Yes it took a while but once I got over the initial adjustment of drinking my coffee black, just like they say, I could never go back 😎 ~ We’ve talked about ditching the instant coffee, and experimenting a little with different blends, but have you managed to ditch the dairy too..? Anyone else excited to see sprouts making an appearance again? 🤔 ~ No? Just me then...? 🤦🏻‍♀️ ~ Ok, yes... Absolutely... You’re right. Sprouts are, like, totally gross 🙄 Especially when they’re roasted in goose fat with spiced parsnips, bacon, mixed dried berries & cashews, right? 😜 ~ If you usually eat sprouts once a year and boil them to within an inch of their life and hate them with a passion then I challenge you to try roasting them. Throw on some spices, some nuts or seeds, some crushed garlic, fresh ginger, chilli flakes - use your imagination here... live life on the edge... I double dare ya!! (Just don’t overfill the oven tray...) It’s funny how it’s the people who ‘don’t have time for meal prep’ or who ‘couldn’t get to the gym to train that often’ or who ‘don’t know how you can be bothered to get up with the sunrise’ or who ‘just can’t sleep these days’ or who ‘couldn’t give up my nightly glass of wine’ are often one & the same; and are invariably the ones not making any progress. ~ And it’s funny how they say to me ‘I don’t know how you have the will power’ 🤔 ~ 🙋🏻‍♀️ Can I just say...? Just in the same way that muscles need to be exercised in order to gain strength, so does the brain (& in turn your willpower) benefit from exercise. And the more you encourage your brain to focus on the positives the stronger your will power will become. ~ Think of it, if you like, as weaving a new path through the brambles to the top of a mountain. Each time you take the path it becomes more attainable & obvious, not only to you, but to those around you who’ll then be less likely to tempt you away from your path with toxicity, poor food choices, and other negative actions. And think of how good it feels each time you reach the summit. ~ Focus not on what you’re missing out on, but what you’ve got to gain. There is a lot to be said for #positivementalattitude And if you falter remember that if muscles have memory then your will power does too; you just need to guide it in the right direction... ~ But just as muscles need rest and recovery, so does your will power. Research shows time and time again that over restriction will result in a binge. Allow your will power some down time. I’ll see your ‘Ladies wot Lunch’ and raise you a ‘Home-made Brunch’ 😎 ~ Sourdough bread with avocado smash is becoming a regular item on brunch menus far & wide buts it’s simple and easy to recreate at home, and at a fraction of the cost 💴 ~ Sourdough is a bread rich in probiotics, much more easily digested since the fermentation process breaks down the glutens, and is widely available in supermarkets across the land, or you can pick up the more artisan (& often flavoured) varieties by the likes of @frothy_whisk_david from @thedrawingroombangor 🤓 ~ I like to add scrambled duck eggs to mine, which are richer in omega 3 fatty acids than their chicken counterparts, contain more protein, and are higher in vitamin D, as well as a number of other essential vitamins such as B12, B6, A & E, and minerals such as folate, thiamin, niacin & retinol. Date night with my boys 😎 ~ Ten pin bowls followed by dinner. I’d like to say I won the bowling but, honestly, the first born whipped my sorry ass. Twice! 😩 I’d like to blame it on the lack of a ball that fit my hand size, or the loud music, or the fact that this ambidextrous x-woman couldn’t decide whether to bowl right or left handed but, honestly, I just suck at bowls 😳🤷🏻‍♀️😂 ~ I’d also like to say the Chef did an amazing job with this beef & bird stack in honey gravy but, honestly, he was more than a little heavy handed with the honey 🍯 and my boys were predictably mortified when I told the waitress so... 🙄🤨 ~ It’s amazing that when you remove all the sugar and sweeteners from your diet that even the most subtle flavours are amplified; and there’s really no need to sweeten anything up 🤔 ~ It’s also amazing that the dessert the first born ordered (kind of an Eton Mess with added ice cream) was big enough for the three of us to share with plenty left over. I make no secret of the fact that I’m not a fan of soy. It’s one of the top allergens in the Western world, it’s highly inflammatory, and it’s an oestrogen mimicker, meaning it makes your body *think* it’s producing oestrogen so it slows down production of it, which is something women approaching menopause want to avoid as the body slows down producing it on its own at this stage anyway (one of the causes of weight gain in menopausal women) 🤓 ~ @montezumaschocs has been on my radar for some time though, and since it’s a British brand with a couple of interesting flavours I thought I’d give it a go to see if it might be #worthit because n=1 after all... 🤔 ~ The dark chocolate with dragon ginger has 70% cocoa solids and a decent enough kick from the ginger. The texture is quite dry, and I liked that there were palpable pieces of ginger in there, but it really wasn’t that different to any of the other brands I’ve tasted with a similar flavour 😏 ~ The lime and sea salt also contains 70% cocoa solids and is naturally flavoured with lime oil (& sea salt funnily enough!). The combination of the sour lime with the smooth bitter chocolate & the subtle addition of the salt works *really* well, but then I’m a big fan of the NorCal Margarita 🤷🏻‍♀️😬 ~ Will either of these make a regular appearance in my shopping basket? Back in the day a seafood risotto was one of my favourite meals both to prepare and to eat. Sometimes I forget that I don’t particularly tolerate high FODMAP foods all that well & then I eat a meal with ALL. THE. FODMAPS. and I’m like ‘...Oooh... that’ll be all those feckin high FODMAP foods I just ate...’ and I’ll spend the rest of the day feeling all bloated & crampy, all stuffed to the gills (& yet hungry), and all focused on not spending too long in enclosed spaces with any other humans 🙄🤦🏻‍♀️😱😳😬 ~ Sometimes I have to come home and have a nice comforting low FODMAP dinner like the one pictured 😋 Although in all honesty this is hardly a ‘punishment’ for those creamy garlic & chilli mushrooms at the weekend which in hindsight were the likely origin of my current digestive woes... 🤔🤨 ~ Sometimes I forget that I spent the guts of (see what I did there? 😜) a year, eliminating high FODMAP foods and then reintroducing them one by one so that I could figure out which foods I could and couldn’t eat, and in what doses. ~ In layman’s terms FODMAP is an acronym for a group of naturally occurring sugars that the gut often struggles to absorb meaning they can lie in the stomach, undigested, and cause no end of problems for a large percentage of the population. ~ The body does an amazing job of telling us what is and isn’t good for us by way of rashes, dark eye circles, disrupted sleep, joint pain, tingly lips, brittle hair & nails, headaches, itchy skin, heartburn, bloating, wind & stomach cramps to name but a few. We’re just notoriously bad at mis-reading and, often, ignoring the signals. ~ Do you think your body is trying to tell you something? Looking back a surprising number of my childhood memories involve food. ~ I remember the first time I ate olives, mistaking them for grapes. I remember eating sardines out of the tin with my Dad. I remember my mum chopping the soup vegetables into a huge Tupperware bowl on a Friday night. I remember picking, preparing & pickling cockles from Tyrella beach when the tide was out & eating the things for an eternity! I remember my dad bringing home garden peas in a brown paper bag & eating them pod and all. I remember my mum (& her mum!) peeling cooking apples for home made apple pie. I remember making lanterns from turnips & dunking for apples - toffee apples were the stuff of dreams back in those days...! I remember we always had a jar of water in the kitchen filled with celery sticks that my dad would eat with a sprinkle of salt. There were always peeled mushrooms & boiled potatoes on hand too, to add to soup, or to munch on as & when. I remember calling into the local fishmonger on a Saturday for winkles that we’d eat with a pin watching Saturday night television (The Two Ronnies spring to mind) followed by a small bag of pick’n’mix chosen carefully at Woolworths on our way home. I remember ‘treats’ of chip shop chips straight out of the newspaper (& Matt would give the kids 2 or 3 on a scrap of paper whilst waiting in the queue). I remember eating crabs nippers at Butlins, and my mums weekly menu which rarely changed from year to year. And I remember my Dad growing potatoes & carrots in neat little rows on the left hand side of the back garden in our first family home, and tomatoes in the front porch. He brewed beer and he brewed wine, & life was good. ~ We need to get back to the days where we have a hand in growing our own produce, where we’re in the kitchen cooking our own meals, sitting round a table & eating as a family. We need to be teaching our children better habits than the ones we’ve developed purely out of convenience and at the cost of our health. ~ We need to face up to the error of our ways, grow a pair (or a pear) or even a tomato or two, just like my Dad’s been doing again. ~ Pictured: home grown tomatoes courtesy of Papa 9 Whole Bites ~

Those healthy fats though... 😍 ~ One of the things people struggle with most when they’re trying to upgrade their eating habits is including healthy fats. ~ We’ve been brainwashed into thinking that fat is bad for us when the truth is that we NEED (healthy) fats to thrive. ~ When I encourage people to scramble their eggs with real butter they look at me like I’m demented, ask me if I’m joking, then hug me when I insist that I’m not. Sometimes they hug me again the next time they see me, but at the very least they tell me about how much better they feel, how less hungry they are, how few cravings they are having after having increased the healthy fats in their meals. ~ Don’t fear the fat. Embrace it. Fat is your friend. 🎼 ‘Meal prep; it makes me happy...’ 🎵 🎶 ~ At the end of one manic week, and with another manic one ahead it would have been easy to say ‘Feck the meal prep’ and taken a nose dive into processed & packaged, manufactured to be craved foods. ~ BUT... Remember that old show ‘Pimp my Ride’ on MTV back in the day? 🤔 Well that’s kind of my approach to food... I take regular meals and think about how I can give them an upgrade so I get the biggest bang for my buck 🧐 ~ Lunch yesterday started out as a very traditional Greek salad with Bombay chicken from @irvines_butchery_bangor but with a couple of spoonfuls of pomegranate seeds the salad of humble beginnings was suddenly award winning 🏆 ~ Pomegranates are loaded with folate, calcium, iron & potassium. A little piece of me dies every time I hear someone say they need to ‘carb up’. Picked up this Apple, fig & onion chutney at St Georges Market (which was delicious with the slow cooked spiced shin) on Saturday. ~ It was early doors, the stall holder and I both had a morning brew in hand, and whilst perusing his stall I discovered that: A) He’s from Bangor. B) He makes and bottles all of his chutneys, jams, marmalade’s & preserves in Bangor, not 5mins from my gym. C) He was an engineer but retired when his wife took ill to help her run the business she started almost 25yrs ago, but she sadly died in January. D) He still follows each of her recipes to a T thereby protecting her legacy. E) They’ve been supplying Fortnum & Mason for many years and won (amongst MANY other local titles) the Fortnum & Mason ‘Reserve Supreme Champion’ award at the Good Taste Awards in London. If I’d have asked my mum 30 odd yrs ago what was for dinner and she’d replied ‘beef shin’ I’d have looked at her like she was going mad 🤨 ~ Fast forward 30 odd yrs and here I am licking my lips at a whack of slow cooked shin from @irvines_butchery_bangor 😋 ~ Now this is what I like to call #fuglyfood but what it lacks in looks/colour it makes up for in flavour. Slow cooked for about 8-9hrs with cinnamon bark, whole cloves, all spice berries, freshly ground nutmeg, a handful or two of shallots, and maybe 1-2tbsp water. Spotted in @tescofood ~ Most schools are ‘nut free’ & ‘healthy lunches’ these days and I know a lot of people struggle with finding a good variety of foods to put in their kids lunch boxes. ~ These are a great option.
