Homemade Sweet Potato Fries 🍟🍠// Sweet potatoes are a rich source of fibre as well as a source of iron, calcium, and selenium. #sweetpotato is also a good source of most B vitamins, vitamin C, as well as #betacarotene (which is converted into vitamin A in our bodies). ▪️▪️▪️ My favorite way to get in more sweet potato is to make a loaded baked potato or to cut them into fries. Here's some tips to make the crispiest fry: ✔️Peel your sweet potatoes. Slice into pinky-finger thick slices, length-wise. From those slices, cut them into fries (use your index finger for reference) ✔️ In a large freezer bag, toss with about 1tbsp cornstarch (1tbsp per potato), and then drizzle with #oliveoil until coated. ✔️Sprinkle with #seasalt and pepper. ✔️Bake at 430F for 15 minutes on a parchment paper lined tray, then flip and bake for another 15. ▪️▪️▪️ ➡️ How do you prefer your sweet potato?? Yesterday was one of those days...where I woke up and I just felt bleh 😒 my mom has always called them “shitty days in paradise” because when I sit back and look at myself there is really nothing to be bleh about but I just couldn’t shake it. I have a great life, live in a beautiful city, have great friends, a wonderful family, the love of my life by my side, why do I feel this way? So instead of fighting it, I accepted it. I accepted the emotion and honestly, allowing myself to feel down and not try to fake myself out of it was freeing. In the past, I would have these days regularly, but since changing my diet, changing my routine and changing my mind set, this is the first “shitty day in paradise” I have had in 4 months 🙌🏼 and for that I am truly grateful! Ketosis is more than just fat loss, it is mood stabilization, it is enhancement of neurotransmitters, it is cancer preventing, it is brain preserving, and it is what I truly believe has helped me not have so many bleh days💕💕 Does anyone else have days like these??

I have had somewhere around 7 concussions and traumatic brain injuries (TBI) in my life... (I kinda lost count). 🤕 Many of you don’t know this about me. Well these past few years have been a growth period for me. After the last couple of TBI’s (one in which I was rear ended at 65mph) 💥🚙 I’ve had to learn a lot about myself... My personality had changed. Not because I wanted it to, just as an outcome of my new post-TBI brain. 🧠 So I had to re-meet myself. In some ways it’s like meeting an old childhood friend that had moved away - the important things are still intact but some things are just a little different. 💗 I also had a lot of functional issues to work through... my peripheral vision, attention, ability to multitask, speech, and countless other little brain functions I used to take for granted will never be the same. And oddly, I’m now okay with that. 🤷🏼‍♀️ I have learned to love myself and my new brain for all its imperfections. I am an extrovert that has become a little more introverted, a social loving listener that is very easily distracted by butterflies and lights and... a wife and mother who isn’t quite super and can’t always do all the things... 👨‍👩‍👧 But my new brain has also allowed me to understand and love the imperfections of others. It’s helped me to appreciate my incredible husband for everything he does, all his support, and especially for his understanding when I have a day where all I can do is curl into a ball and survive. ❤️👦🏻 Most of all, my tnew brain has made me rely on God again and again. It’s drawn me closer to Him - and that’s the greatest blessing (in disguise) of them all.

Minutes after we arrived home from the airport from our trip to Hawaii, my 34 year old husband had a stroke. I debated posting about it here on Instagram but have decided to in hopes to spread awareness of the symptoms of a stroke as well as the urgency to get to a hospital if you or someone you know is having stroke symptoms. After days of testing, they found that my husband has a hole in his heart. The doctors think that during our long flights home from Hawaii, he formed a blood clot, and because he has a hole in his heart, the clot was able to easily travel from one side of the heart to the other and shoot up to his brain. Everyone is born with a hole in their heart but they usually close up as we age. 1 in 4 adults have a hole in their heart, so it's actually pretty common. That being said, it's IMPORTANT to know the signs of stroke because if identified quickly and action is taken promptly, your rate of healing is GREATLY INCREASED by the clot buster my husband received, TPA. There is a 3-hour window to receive TPA and he got it in his body around the 1.5 hour mark. His brain damage was minimized because of this medicine and the quick action. SIGNS OF STROKE: - Sudden numbness or weakness of face, arm or leg, especially one side of the body. -Sudden trouble walking, dizziness, loss of balance or coordination. -Sudden trouble seeing in one or both eyes. -Sudden confusion, trouble speaking, or understanding. -Sudden severe headache with no known cause. My husband thankfully is doing great and is back home now. It was a terrible week and the outcome has been the best case scenario considering everything. Take care friends! That pesky thing called chronic illness . . If you need permission to take care of yourself, consider this post permission. I personally have been burning the candle at both ends for the past two month or so. I have three online classes, one business which I love and work full time elsewhere which I don't love lol. Plus, I have 3 chronic illnesses, one is mental illness and one is currently undiagnosed. . . Give yourself permission today to ask your workplace for what you need, ask for support from your family or friends, nap (I just woke up after 2 hours of much needed "beauty" sleeps...and I'm still tired p.s) because to be honest, lifestyle, North American culture specifically, is a contributing factor to chronic illness. Do not feel guilty for taking care of yourself, "rebelling". If others get upset, fuck em, they ARE NOT IMPORTANT, YOU ARE. . . Yesterday someone near and dear to me unknowingly gave me permission to put my health first. So I did. And now I'm resting/working from home from the comfort of my bed and pjs. When I glide through Instagram I see countless beautiful photos of food perfectly photographed in nature or glass mason jars. Meals overflowing with fruits and vegetables and exotic ingredients. Rich with nutrients and perhaps elitism. Maybe leaving some to feel overwhelmed, who don’t have the means or the time or the access to said ingredients. ... I don’t like how real food appears to be unattainable. In reality, real food belongs to all of us. ... Real food is curative and has the ability to transform your child’s health. The problem is we have moved so far away from real food as a culture that it seems preposterous to make the connection. If I could give any advice to parents who are looking to improve their children’s mental health through nutrition and nature, I would say reclaim real food.
