Buffalo Chickpeas with 1 Point Blue Cheese Dressing 🙌🔥
Blue cheese dressing, one of my weaknesses, is basically guilt free with this recipe! This can easily make a 3 point salad, or add a pita for a total of 7 points.
1 Point Blue Cheese Dressing – 2 servings
2 Tbsp blue cheese crumbles / ¼ C plus 2 Tbsp plain 0% fat Greek yogurt / ½ Tbsp cider vinegar / ¼ tsp garlic powder / ½ Tbsp minced chives
2 Point Buffalo Chickpeas – 2 servings
15oz can chickpeas, rinsed and dried / 4 Tbsp Franks Red Hot, Buffalo / 1 Tbsp olive oil / ¼ tsp garlic powder
½ head of romaine lettuce / 1 ripe tomato / thinly sliced red onion
For the dressing, combine all ingredients in a medium bowl and toss with chopped lettuce, tomatoes and onion.
Heat a large skillet over medium. Once hot, add chickpeas, 3 Tbsp Franks Red Hot, olive oil, garlic powder and a pinch of salt. Sauté for about 10 minutes until the chickpeas are fairly dry, then empty the chickpeas into a bowl and toss with the remaining 1 Tbsp Buffalo sauce.
