Now, we all know I LOVE to cook and bake. But anything I share is usually the hard, delicious, comfort food or pretty desserts.
A few years back when I started to lose weight, I used #shred and #supershred by Dr. Ian Smith. So I decided to turn to that again. Tonight our dinner had to be 1c brown rice, 1c black beans, and 1 serving of vegetables. Yuck, #amiright 🤮!? That was my initial thought until I changed my #mindset and saw it as a challenge. I mean, I wasn't the only one eating this so I had to make it good.
I don't usually want to toot my own horn but TOOT TOOT! This meal turned out SO good! Full of flavor and great textures (I'm not usually a huge fan of brown rice because of the texture).
