I'm not a restaurant gal... even on vacation I ligit LOVE eating in (in pjs - obvi 🤷🏻♀️). It's a real treat for me to shop the local markets, speak to the vendors, ask questions, touch everything 😂 Naturally I also love to cook for (and with!) myself and the famiglia!
Tonight I made this amazing poached chicken dish with tons of veggies. Guys it was BOMB 🙌💯 Super nourishing, full of collagen and minerals. Cozy as heck. KIND OF like a pimped up minestrone. Could have this errday.
HERE's HOW I MADE IT😘
🌿 Bought an organic chicken and made a huge batch of broth with it. I added the chicken to a large pot of H2O and boiled it with garlic, ginger, pink salt, onion, garlic, carrot tomato.
🌿 Shred the chicken set aside.
🌿 In another pot, sauteed local zucchini, fennel, mushrooms in a little olive oil (at home would of used coconut oil but hey, while in Italy...)Add in the veggies from making the stock (cut them up)
🌿Add the chicken to the veggies and cover with the broth. Use the rest of the broth for wtv. I actually like to sip on it as a snack. Super nourishing.
🌿Added in some freshly chopped greens and basil at the very end. Let it simmer for a couple of minutes to get the flavas mingling!
🌿Eating al fresco - mandatory.
