Coconut chicken curry 🍛 🌶
Ingredients - chicken breast - 1/2 onion - 1/2 red bell pepper - 2 carrots - 1 cup broccoli - 400ml coconut milk - 1 tbsp red curry paste - Salt, pepper, chili powder, curry powder
- Soja sauce - 1 tbsp ginger - 1 clove garlic
Cut the chicken and season it with salt, pepper, chili powder, curry powder & soja sauce and set aside. Cut all vegetables. Cook the onions with garlic and ginger. Add the vegetables and let it simmer. At the same time, fry the chicken in another pan. When the vegetables are through, add the chicken and then add the coconut milk. Let it cook for 1 min and then add 1 tbsp of the red curry paste. Let it cook for 5 min and then season with more salt and pepper if needed. Serve with rice.
