(For 3 servings)
🌱 240 g chickpea, dry
🌱 1 white onion
🌱 1 handful of fresh cilantro or parsley (leaves and the stem)
🌱 2 garlick cloves
🌱 2 tsp cumin, heaping
🌱 1,5 tsp ground salt
🌱 black pepper
🌱 1/2 tsp ground sweet pepper
🌱 pinch of chilli
🌱 3 tbsp fine (gluten free) oatmeal flour
🌱 4 tbsp water
🌱 olive, rice,... oil
🌰 3 tbsp tahini
🌰 1/2-1 tbsp lemon juice
🌰 water by need
🌰 optionally some cilantro for serving
🍲 Soak the chickpea for minimally 12 hours beforehand (I soaked it for about 24 h). Then rinse it and blend it.
🍲 Cut the onion and cilantro into tiny pieces, mince the garlic and grind the cumin in a mortar.
🍲 Add all the falafel ingredients except the flour and water to the blender and blend until everything is combined evenly and the chickpea is cut into tiny pieces. Transfer this mixture into a bowl and combine with flour and water well.
🍲 Preheat the oven to 200 °C and lay the baking plate with parchment paper.
🍲 Start with making small falafel balls, which stick together.
🍲 Bake for 20 minutes, then gently flip it and grease with some oil. Bake for another 10 minutes.
🍲 Let it in the turned of and opened oven for a while and then take it out from the oven and let the falafel cool for a while.
🍲 Combine tahini, lemon juice and water. Add the water until it is thin enough.
🍲 Drizzle the falafel with the tahini sauce, add fresh cilantro and serve with piza bread, cous cous, hummus or with anything you want 😉.
