Vegan Buddha Bowl 🌱🌿 Ingredients:
- 2 sweet potatoes - small head of broccoli - can of chickpeas - can of sweetcorn
- 1 cup of soy yoghurt - a few mint leaves - juice of half a lime
- a couple of shoots - a little salt
- paprika powder
- powdered coriander
Cut the sweet potatoes into cubes and put them on a baking tray. Sprinkle with salt and paprika powder. Bake at 200°C for about 25 minutes.
In the meantime cut up the broccoli and blanch it (fancy cooking word for throwing it into boiling water for about two minutes). Dressing: chop the mint and stir it into the soy yoghurt with some salt, coriander and the lime juice.
Throw sweet potatoes, sweetcorn, broccoli, chick peas in a bowl, add dressing and garnish with the shoots.
And taaaadaaaa, you have yourself a low calorie, high protein and overall healthy and delicious meal that serves approximately 3 people and costs around €7.
