I made a delicious soup called Pozole with pinto beans and Queso Fresco..
I roasted tomatillos, yellow onion, Poblano Pepper and garlic, coated in canola oil and chili powder. You blend those together once cooked and add to chicken stock, shredded chicken, homily corn and pinto beans. Top it with sliced red radishes, pickled red onion (thin slice red onion, sugar and vinegar/red wine vinegar will make it a brighter red), queso fresco & cilantro 😋
