This combo of colorful fruits and veggies is one of my favorites! It’s got everything- salty, crunchy, juicy and sweet. This bright salad can’t be beat! 🔰RECIPE: 1 salmon patty cooked in a blend of 1T soy sauce, 1tsp sesame oil, and grated ginger// 2 cup butter lettuce, handful of shredded cabbage (not shown) // sliced red onion // slivered almonds // 1 T chopped green onions & cilantro each // half a minneola orange, diced // 1/2 small carrot, shaved // 1/4 cup snap peas, chopped // 3 florets broccoli, chopped. 😍🥗😍🥗
YES, it’s a lot of chopping and YES your kitchen will look hellish. But while you’re making a mess...might as well meal prep this for the whole week! Switch up your protein with teriyaki chicken, steamed Edelman’s, hard boiled egg, or grilled shrimp!
DRESSING? I used lime juice, oil, rice vinegar and soy sauce 😜
