All this holiday food talk has me craving some Peppermint Cocoa Roasted Nuts!! 🍫🥜🍂 I made these last holiday season as requested by a close friend... did these fit the bill @?? I could eat 5 handfuls of these right now. Probably safer for me NOT to make a batch, actually.
1 egg white
1/4 teaspoon vanilla extract
1/4 teaspoon peppermint extract
2 cups raw almonds
2 cups raw cashews
2/3 cup granulated sugar
2 1/2 tablespoons cocoa powder
1/2 teaspoon ground cinnamon
1 tablespoon salt
In a large bowl, whisk egg white until white and foamy; Add vanilla and peppermint extracts and stir briefly. Add the raw nuts to the egg mixture, and stir until all nuts are coated.
Combine sugar, cocoa powder, cinnamon, and salt in a small bowl. Pour it over the nut mixture and stir until all nuts are coated! Spread nuts on a large baking sheet lined with a Silpat or parchment paper. Bake in a 300F oven for 40-45 minutes, stirring halfway through.
Let the nuts cool for 20 minutes before serving. They'll seem soft when they first come out of the oven, but will harden as they cool. (more detailed recipe at the link in my profile)
