No time for breakfast? Bored of sad, soggy cereal!? BIRCHER MUESLI TO THE RESCUE!
This is so simple, but I’m super proud of this recipe. It might even be my January favourite so far. If like me you’ve never cared for Bircher muesli, you may not have tried the right one yet. My breakfast game has just changed exponentially. Sorry, porridge - you’ve got an oat based breakfast rival.
Make this the night before and you’ve got an easy run-out-the-door half-awake meal waiting for you. The recipe serves one person, so multiply up and make enough for your whole working week!
You Will Need:
🍚 1/2 a cup of oats (avoid the instant stuff. I stand by @flahavansuk)
🥛 1 cup of your choice of milk (I used @mydairyfreedream ancient grains for extra oaty-ness, but pick your favourite)
🥄 2 tbsp natural coconut/almond/soya yoghurt (@coconutcollab filled my morning with creamy deliciousness)
🍎 1 apple (can’t go wrong with a @pinkladyappleuk but any will do. Just not cooking!)
🍋 zest and juice of half a lemon
🤚 a handful of nuts and seeds (pumpkin, sunflower, flaked almonds and crushed walnuts pictured, but as always, experiment!)
🍇 a sprinkle of sultanas
🥄 1/2 tsp of cinnamon
And a pinch of salt!
1. Mix the oats, milk and yoghurt in a container/bowl. Grate in the apple and lemon zest, and add the lemon juice. Add the sultanas, cinnamon and salt and give it all a stir.
2. Sprinkle the nuts on top and pop it in the fridge for a good few hours. Overnight is ideal to soak up all the liquid.
3. Grab your spoon and dig in!
