THESE coconut veggie wraps⭐️ Restaurant recommendation for all you SoCal / Santa Barbara peeps! "The Honey B" is the cutest vegan/ plant based *rooftop* cafe ever🌞My friends and I were so lost trying to find it (you literally have to walk in through the Antioch Univeristy building and up the stairs to the roof) but it was kinda fun searching 🙈 I ordered the wraps and the flavor combo was to die for🔥They were filled with mango, arugula, jicama, mint, carrots, cucumbers, microgreens, and avocado 🥑+ a thick peanut dressing. First time trying spaghetti squash! 🍝This meal was super cheap 💸 and affordable for college 📚 students! 1 Spaghetti squash: $3.68 1 Can diced Italian tomatoes $0.59 1 Bag lentils $1.57 (used 1/4 cup - $0.15) = $4.43 This recipe made 5-6 servings so each serving was max $0.89. 1. Bake halved spaghetti squash on 400 F for 25 minutes 2. Blend Italian diced 🥫 tomatoes in food processor to make pasta sauce 3. Add cooked lentils to blended tomatoes 4. Remove spaghetti squash from oven. Let sit for a few minutes. 5. Use fork to “shred” spaghetti squash 6. Throw it all together and voila! Tag me if you make this! I’d love to see your creations ☺️

Guys...⠀ ⠀ I cannot emphasize the importance of nutrition. I am no expert, but I can speak from experience when I say eating healthier will make you feel GOOD.⠀ ⠀ I used to go along grabbing whatever fast food was nearby, eating entirely too much until I felt sick, then feeling guilty for doing it in the first place. Not only that, but my body felt like crap. I was unmotivated, tired, bloated, etc. ⠀ ⠀ Once I chose to start fueling right, I can honestly say I feel GOOD, I have energy, I AM motivated. Tonight’s dinner was this PERFECT bowl of polenta and broccoli rabe 😋it’s a great way to get in veggies for the day and it’s so easy to make! Eating this always reminds me of my childhood and watching my mom/Nonna make it! Polenta’s an Italian “porridge” made from cornmeal, and it takes about 10 minutes max to make so its perfect for a quick meal.. the broccoli rabe takes a little longer to cook but if you’re into meal prepping and have any leftover sautéed greens or veggies, it would go great on top! And of course I topped it off with some grated pecorino romano cheese and red pepper flakes :) but really, this meal is SO easy to make, all you need is some garlic, olive oil, water, and polenta! I’m lucky because I feel like I’ve made a place for myself in Baltimore. After just two years, it feels like home. In just the past year, I’ve met some of the most amazing people and made amazing friends. 📍The Grange, Providence Rhode Island: 10/10 - DREAMING of this delicious vegetarian bite on this rainy Monday. The Grange, in Providence, not only serves tasty and healthy food for reasonable prices, but also is located in one of the most stunning spaces in New England (rope swings, wood tables, plants, string lights, basically a Pinterest dream). My vegan caesar salad was more than satisfying, and my friend had nothing to complain about with her shiitake burrito either. Waking up and realizing you don’t have to go work calls for homemade pancakes!🥞🥞💁🏼‍♀️💁🏼‍♀️ These are super fluffy and surprisingly have quite a bit of protein in them. Here’s what you need to make them➡️➡️ 1/4 + 2tbsp of coconut flour🥥, 1/2 cup of coconut milk 🥛 (almond milk would probs work also!), 2 teaspoons of baking powder, 4 eggs🥚 (I used egg whites because we were out of eggs), 2 tablespoons of honey🍯, and some cinnamon! Mix together all the liquids and then add the coconut flour & baking powder. The batter should be thick!! & then cook them on a pan or a hot top. I topped mine off with some pb2🥜, caramelized banana coins (aka just toss them on the hot top with the pancakes when they’re cooking!) 🍌, and some berries🍓! Hope everyone has a good Monday!🙂

Figured it was about time I share my French toast recipe on here cuz it is goood. I’ve been eating it so much lately and every time I make it it just seems to get better. Anyways, without further adieu... My Peanut Butter Stuffed French Toast recipe! 🍞🥜🍓🍳~~~~~~~~~~~~~ •2 slices whole wheat bread (I use Whole Foods brand 100% whole wheat) •1 egg •3 egg whites •Splash of vanilla extract •Splash of milk (I use almond) •Dash of cinnamon •1 tablespoon peanut butter + additional for topping 1. Mix together eggs, egg whites, almond milk, vanilla extract and cinnamon in a bowl 2. Spread 1 tablespoon of peanut butter on 1 slice of whole wheat bread 3. Make a sandwich out of the two slices 4. Dip bread in egg batter 5. Cook in pan and... viola! French toast😍 I top mine with even more peanut butter, as well as maple syrup and more cinnamon on top. I also usually have a side of some type of berries, as you can see from my photos. I hope some of you guys give this recipe a try and If you make It let me know how it turns out! Enjoy!😋

This was such a good and EASY meal. Being a college student makes it hard to find quick and easy meals, but this zoodle meal was just that. • • • Meal deets: -baked chicken breast at 375° for 35mins marinated in Italian seasoning, sea salt, black pepper, and olive oil. -Zoodles baked at 375 for 5-8mins -And @mezzetta homemade marinara heat for 10-15min
