Today’s installation of real life eats with Isabella is brought to you by the letter C (for carbs and chicken!) 🥔 Yesterday’s dinner was a chicken salad wrap on a spinach tortilla with some mashed potatoes (was craving them hardcore yesterday) and some Brussels and carrots because they are some of my favorite veggies! I love dining hall dinners like this because it keeps me filled for hours (and the spinach wraps are bomb to be honest). 🥕 What are your go to dinners? 🍛 This morning has been a good one. While we wait for the festivities to begin, we’ll be over here cooking up some breakfast to fuel our day 😏⁣ •••⁣ ACORN SQUASH NESTS⁣ Ingredients:⁣ 1 acorn squash⁣ 4 eggs⁣ 2 tbsp veggie broth⁣ 1 tbsp olive oil⁣ Red pepper flakes & pepper⁣ •••⁣ Instructions:⁣ 1. Cut acorn squash into slices and place onto baking sheet. ⁣ 2. Mix broth, oil, and spices in bowl. ⁣ 3. Brush squash slices with mixture. ⁣ 4. Heat at 425°F for 15 minutes. ⁣ 5. Add 1 egg to each squash hole. ⁣ 6. Heat at 350°F for 12 minutes. ⁣ •••⁣ Enjoy & see you at FNCE! ✨

IT’S FRIDAY! 🎉 yummy breakfast this morning after a fab spin class! I used @deliciouslyella Muesli for the oats, 1/2 cup water, 1/2 cup almond milk and then I add half of a banana! Definitely went a little overboard with the peanut butter 🥜 this morning! But I love love love @maranathanutbutters it has the best texture and the only ingredients are peanuts and salt! No school for me today, but I’m trying to stay productive on my days off, so then I can actually rest on the weekend! Plus it’s midterm season 😭 Have a fabulous Friday everyone!

We’re in the middle of chilly Fall here in Ohio and this cinnamon beef soup from @biohacku is exactly what I need to stay warm during this cold weather. I added a bag of frozen spinach and a parsnip for extra veggies and nutrients. _ This dish is especially awesome because it’s low-FODMAP and AIP. Recently, I’ve been dealing with some SIBO-like symptoms so I’ve been trying to limit the higher FODMAP foods in my diet but it has been hard to find easy, inexpensive, quick, delicious, AIP *and* low FODMAP recipes. Happy Thursday! - In the spirit of keeping real (like my insta stories yesterday), I was feeling a lot of pressure to have a really pretty picture ready at 8 am for me to post. don’t get me wrong, i love meal prep - but sometimes i want to throw something new into the routine without committing to having leftovers for a week which is why i’m so excited to be creating some easy, single-serving recipes made in a baby cast iron skillet (seriously, if you eat alone frequently, invest in one - starting with this potato and dill fritatta! fritatta is so versatile - you can sub whatever veggies and seasonings you like in this basic recipe 🤗 * * ingredients: Olive oil spray 2 eggs (i used @vitalfarms) 2 baby gold potatoes, cubed 1 clove garlic 2 tsp fresh dill, chopped 1/4 tsp Dijon mustard salt & pepper cheese of choice (i used @traderjoes herbed goat cheese medallions) * method: heat olive oil in skillet over medium heat and add potatoes. reduce heat to low and cover, cooking until soft with a crispy outside (stir frequently and add a bit of water if you need to). while that’s cooking, whisk together the eggs, dill, dijon, and salt/pepper. once potatoes are crisp, add the clove of garlic and sautee for 30 seconds. pour the egg mixture over the potatoes and dot with cheese. cover the skillet and let cook for 6-8 minutes, or until eggs have just set. pop that baby under the broiler for 3 minutes to get the top browned and cheese bubbling and ENJOY! 🥚✨ like it, save it, share it, make it! * * #vegetarian #frittata #eggs #cleaneating #healthyfood #healthy #cleaneats #realfood #wellness #healthyfoodshare #fitness #nomnom #foodporn #igfood #foodie #collegefoodie #collegerats #food52 #feedfeed #wellandgoodeats #buzzfeedtasty #bareaders #foodblogfeed @thefeedfeed @food52 @huffposttaste @buzzfeedfood @buzzfeedtasty @wellandgoodeats @bonappetitmag

Toasting to Tuesday and the fact I slept for almost 9 hours! Sourdough from TJs, @pbfit.official, and a simple, quick homemade blueberry jam😍 This was also paired with two fried eggs, perfect fuel post leg day this morning! Off to spend today looking at different plants through a microscope 🙃🍁Have a great day! - - 1/2 cup frozen blueberries 1 tsp chia seeds Microwave blueberries for about 1 min, mash them and add the chia seeds. S Q U A S H salad 🤤// bought this squash last week and didn’t have any time to use it until today (finally)🙌🏼 deets: chopped up the squash and threw it on a cast iron skillet with avocado oil, salt, and pepper for about 15 minutes —> than popped it into the oven for about 40/45 minutes. once that was done, i added some peppers to the skillet as it cooled. —>served on top of leafy greens for a perfect fall salad.🥗 TRY IT!

So if you saw my insta story a couple days ago, you saw that I posted about these cauliflower oats that I made (inspired by seeing Jen’s @learningfrombalance all the time). And I didn’t say if I liked them or not because I was honestly on the fence about them this whole time 🙈 - So verdict: Love the idea of it, but might play around with the ingredients to make it less crunchy (because that reminds me of cauliflower) Butt, it was too pretty not to share so I had to post it🤷‍♀️ - I used the recipe by @simplybalancedliv , but did some modifications by adding @myprotein rocky road whey and water (bc ya girl doesn’t have almond milk). I really liked the volume so something I want to work with! Welcome to midterm week: aka the week I die and dream of eating this ridiculously amazing microwave baked oatmeal... this is like a little breakfast mug cake and I am all for it 🍰 I'm already one day into midterm week and I'm already dead (seen in my lack of posting yesterday... 😬) But, tomorrow I get some relief so I'm excited!!! 🙌 Here's the dEATS: • 1/2 cup oats • 1/3 cup milk (almond milk is great in this!) • 1 egg • 2 tsp honey • 1/2 tsp cinnamon • any toppings or add ins you like (chocolate chips, dried fruit, yogurt, berries... the possibilities are endless!) To make, just combine all ingredients (excluding the toppings if you don't want them to cook with the oatmeal) and cook in the microwave for 3 minutes or until it looks fluffy (like a mug cake should). Top it off and enjoy on your way to your midterms (or on just about any cold fall/winter morning) 🍂🍁🍂 Have a lovely Tuesday everyone!!!! Busy week for me= back on my oatmeal grind 🙋🏼‍♀️🙋🏼‍♀️ I tend to get super stressed out immediately whenever I look at my planner and see how jam packed it is. Instead of doing that this week, last night I took the extra 5 minutes to plan my days by the hours (extra? yes🤷🏼‍♀️) This is just helpful for me to visually see what I have to get done and by when. Fueling up for my day with a big bowl of oats😍😍 Piled on all sorts of toppings today including blueberries, hemp seeds, pool of pb 🥜, @traderjoes granola, raisins, and some shredded coconut 🥥! Off to get coffee and get some work done before my class! 🤩
