Vegan “hotdogs”🌭🌭 They are amazing!!! I ate them 3 days in a row! INGREDIENTS: 6-8 large carrots 1/4 cup vegetable broth 1 tablespoon olive or sesame oil, optional 1/4 cup Bragg's liquid aminos (soy sauce and tamari work too!) 1 tbsp. white wine vinegar 1 tbsp. maple syrup 1/4 tsp. liquid smoke (hickory style is best!) 1/2 tsp. smoked paprika 1/2 tsp. garlic powder 1/4 tsp. onion powder 1/4 tsp. oregano 1/4 tsp. salt 1/4 tsp. pepper DIRECTIONS: 1. Peel and cut the carrots to fit the size of buns you're using. 2. Boil the carrots for 10-20 minutes (depending on the size of your carrots), until soft, but not mushy. 3. Drain the carrots and immediately run cold water over them to stop the cooking process. 4. While the carrots are boiling, make the marinade by whisking all of the ingredients together in a bowl until combined. 5. Once the carrots are cooled, put them into a ziplock bag and pour the marinade in. 6. Pop 'em in the fridge for AT LEAST 18 hours. The longer the better! I usually let mine marinade for 24-48 hours. Make sure to flip the bag every so often to evenly coat the carrots. 7. Packing your food has so many benefits: less waste, saving money, and it makes you less tempted to go for unhealthy food lying around your office How I pack for a 10-hour shift: A breakfast of overnight oats (packing this depends on whether or not I'm running out the door) Snacks: cherries and a couple small plums (fruit is a really good snack 👌🏼👌🏼), and a peanut butter sandwich on whole wheat bread (I need something filling too!) Lunch: today is a sandwich of baked tofu, gochujang ketchup, spinach & arugula (my go-to) And an iced matcha latte (usually I go for coffee, this was made possible by @lauralovesalatte 's matcha expertise)

Today, I made my usual chocolate chip banana bread muffins! 🍌🍞🍫 For this recipe I used 2 cups of whole wheat pastry flour, just less than 1 cup of brown sugar (you can use any sugar you like), 3 tsp baking powder, a dash of salt, a bunch of cinnamon, a little bit of nutmeg and cloves, 1 flax egg, a dash of vanilla, 1/2 cup almond milk (@almondbreeze you already know), 3 tbsp oil (I used canola oil because that’s what we have), 4 super ripe mashed bananas, and my favorite vegan chocolate chips from @traderjoes! Bake them at 350 degrees for about 25-30 minutes and ta-da! Muffins!! 💕😋👩🏼‍🍳 Check my story or “Food!” highlight to see the finished product!! 🌱✌🏻

So I finally tried the grits recipe by @mightbvegan and it was delicious! Of course, I’m terrible at actually following recipes so I threw my own spin on it, but adding the sauteed vegetables on top of grits was a great idea! I also added some @justforall chipotle mayo and @daiyafoods cheese into the grits because creamy cheesey grits are my absolute favorite!
