I've gotten really into trying my hand at Mexican cooking. I know lots of people who think - why cook Mexican when you can get a better version of whatever you're making outside your door? But I like the challenge, and I love that I have all the amazing ingredients just steps away.
This week - Chile verde with pork leg (super saucy), chicken tinga de pollo (shredded chicken sopping up all the tomato/chile goodness, my 2nd time cause it was sooo good the first), and homemade enchilada roja sauce for some fast cheese enchiladas after a long day. What’s cooking on your stove? 🍳
