Holiday weekend means meal prep is moved to Monday! This week has been filled with family, friends, snow and some much needed sunshine! And this meal prep took 20 minutes to throw together and is packed with nutrients. I love a good stir fry 🥢dEATS 👇🏼 Happy Monday! • • • dEATS—> 1 lb ground turkey cooked with minced garlic, 1 tsp ground ginger, s&p, 1/8 cup low sodium soy sauce and 1 tbsp coconut aminos, with Asian stir fry veggies (bell peppers, onion, corn, snap peas, broccoli and carrots all pre mixed in the refrigerator section at Trader Joe’s) and cabbage. Brown the meat and add in veggies and sautéed with a little coconut aminos and low-sodium soy sauce for about 5-10 minutes. I went back to the doctor today and this time they actually tested me for influenza. Yep, I’ve got it along with ear infections and a sinus infection. A friend dropped off more soup ingredients yesterday so I was able to throw it all in the instant pot and let its do its thing! I’ve got essential oils, elderberry tablets, oscillococcinum, prescription meds, and my cute pup keeping me company since I’ve quarantined myself all weekend. Whether you’re a busy professional, juggling a career and a personal life; a parent with little humans to care for; or someone that doesn’t want to be a slave to your kitchen (or all of the above 🙋‍♀️) quick, healthy meals can be your best friend 🙂 Here’s one that takes 10 m to prep and cook, and tastes sooooo good! Ingredients- broccoli, kale (fresh or frozen veggies), @betterthanfoods rice, @traderjoes Argentinian shrimp, @organicvalley ghee (you can use oil or butter if you chose), @coconutsecretofficial coconut aminos, fresh finely chopped garlic, @simplyorganicfoods spices (or whatever you have on hand). Prep: 1. Wash and soak the “rice”, 2. Add a tblsp of ghee to a heated skillet 3. Once ghee is melted, add shrimp, & cook for approx 3 m on each side (remove form skillet and set aside) 4. Add a bit more ghee to skillet, and add chopped garlic (lower heat not to burn it) 5. After 2 m, add kale and broccoli and sauté for approx 5 min 6. Pat dry “rice” with a paper towel and add to your veggies, add coconut aminos & spices of choice (I added garlic, paprika, Himalayan salt), sauté for approx 3-4 m 7. Add in the shrimp and combine 8. Add fresh herbs if you choose; I added cilantro. A study of the most beautiful edible flower, the artichoke. I've made them over the years, always finding myself frustrated by how little food you get out of all that work that goes into making artichokes. I keep coming back to them because they are like those mythic sirens and I am but as weak as Odysseus, who at least had the good sense to have his crew tie him to the mast of his ship to avoid drowning. Nope! Like a good little zombie, I find myself picking these beauties up and taking them to my ear, squeezing ever so gently to hear that squeak that lets you know they're fresh. People look at me like I'm mad, which is true on some levels, but it's a tried and true method of detecting the good ones from the bad. I steamed the ones in this bowl after I photographed them. Made a lemon and butter sauce and dipped, realizing that I really need to change up my artichoke game, though I've had them a couple of different ways. I want to stop being such a killjoy about deep frying and make them in the Roman Jewish style next, I say to myself and run off to the kitchen, realizing I don't ever have large vats of oil on hand. Damn my healthy upbringing of contained extravagance. There's a time for austere measures and then there's a time for screwing the ingrained doctrine of trepidatious prudence. If I were Auntie Mame (the Rosalind Russell version, not Lucille Ball), I'd have the Butler run out and get me my jug of oil, however, my butler/hubby is taking a day off of running around for my Instagram projects. I'll just go to the fridge and peak in on the fresh batch of artichokes I picked up yesterday, and talk to them about their fate as greasy treats. What would a #KoolMomsEatKale page be without a #KaleChips post? This super easy snack is low in #calories and fat but full of #fiber, #iron and vitamins A and K while still satisfying those crunchy cravings. 👉🏻 I took a bag of prewashed Tuscan Kale (regular kale works too) and put into a plastic bag. 👉🏻 sprayed some olive oil, sprinkled in nutritional yeast and smoked paprika to taste 👉🏻 sealed bag and massaged kale to coat. 👉🏻 spread onto baking sheet and put into oven at 250 for 30 minutes 👉🏻 increased temp to 300 for another 10 min or until crispy 👉🏻 let cool completely. Last night I made @bonapetit’s roasted squash and grains with honey tahini sauce (link to recipe in comments). What I usually do with recipes is read them a few times and then go into the kitchen and make it my own.
