chocolate date cookies 🍪
so I have been doing some extra research to find out what some peoples diets involve & exclude. I came across the Keto diet. This diet allows you to eat more fatty foods, (good fats) vegetables, meat and less carbs. I found it very interesting to read up about it.
I found some recipes of sweet cookies and some Keto bread 🍞. I gave then a go & I think they turned out pretty tasty!!! My only one concern is that the dates don't follow the Keto diet, but that's okay because if you're following the Keto diet, just remove the dates and replace them with some cacoa nibs! (I couldn't as I didn't have any, therefore I used the dates) 🍪🍫🍴☀✅🔥 To make these delcious healthier treats I used the following ingredients:
(but remember be creative and put in whatever you think will work!!) >>>>>>>><<<<<<<<<<<< + 1tsp cacoa powder + 1tsp chia seeds
+ 1 1/2 cup of almond meal/flour + 1 tbs nutellux + 1 egg
+ five dates cubed
+ 1 tsp vanilla extract 🍪🍪🍪🍪🍪🍪🍪🍪 I set the oven at 180• & combined all of the dry ingredients together, before adding in the wet ones(except the dates!!!) I used the side of the spoon to mush the nutellux into the dry ingredients and this formed a lovely consistency for cookie dough batter!! I carefully rolled up the mixture into balls and placed a good amount of date peices on top, while pushing them down into flat cookies.
I than placed them into the oven and cooked them for roughly 15 minutes. (it may vary from your oven to mine, so cook accordingly, or until soft/hard to your liking!) 🍪🍪🍪🍪🍪🍪🍪🍪 I highly recommend the dates, but if you're following the Keto diet, I apologise, but replace them with some cacoa nibs. The biscuit themselves are very tasty, but they are a little bit dry, so ensuring you have some sort of "wet" ingredient (eg: dates, cacoa nibs, regular chocolate chips etc) they will go down a treat!
