900 grams of potatoes, peeled and cut into large cubes (5 mm)
1 tablespoon of olive oil
1/2 teaspoon salt
1/2 teaspoon ground black pepper
4 salmon fillets (around 170 grams each)
1 tablespoon fresh parsley, chopped
For the sauce with orange:
1 shallot, finely chopped
4 branches of fresh thyme
3/4 cup dry white wine
1 tablespoon white wine vinegar
1 tablespoon of orange juice
1/2 cup butter without cold salt, diced
1 teaspoon orange zest grated
A pinch of salt and pepper.
Mix the potatoes with the olive oil and half the salt and pepper.
Arrange them on a foil lined with a sheet of baking paper, and take them to the oven at 220 ° C, turning them once, for 20 minutes.
Sprinkle the salmon with the rest of the salt and pepper. Move the potatoes to one side of the pan and arrange the salmon on the other half.
Take it to the oven until the fish crumbles easily when you try it, and the potatoes are crispy and golden, about 10 to 12 minutes. Sprinkle the potatoes with the chopped parsley.
To prepare the sauce, place the shallot, the thyme, the wine, the vinegar and the orange juice in a saucepan and bring them to a boil; boil until reduced to 2 tablespoons, approximately 5 minutes.
Discard the thyme. Reduce the fire to low; add the butter, one cube at a time, beating until it is melted before adding the next cube.
Add the orange zest, salt and pepper. Cover and keep warm.
Add the wine and orange sauce just before serving the salmon and potatoes.
