Baked up some butter-pecan cookies but made them with almond flour! So you could def say they were very buttery and very nutty! . . . . In case you didn’t know, almonds and pecans actually aren’t nuts! Today I ate everything I wanted, including fun Thai rolled ice cream topped with fruity pebbles. I haven’t tasted those in a long time- so it was a fun surprise, a little sprinkle of childhood 🎠 Just now, I walked my dog because I wanted to stretch my legs, not as a compensation for anything I ate. Boys and girls, let me tell you- I NEVER thought I could find this balance. I thought I was beyond help, I would always be tied to diet culture due to my profession—yet, here I am, enjoying low-stress eating (and still being an awesome dietitian). It takes work and practice, but you can get to this place too 🌸 You don’t have to diet, cut out food groups, exercise like an Olympian, or take weird pills/herbs that make you sh$t your brains out or turn your pee orange. 😱 You don’t have to constantly be trying to eat perfectly for “health” Or ELSE. And a special shoutout for those of you healthcare peoples- you don’t have to look a certain way to be an AMAZING & COMPETENT provider. Your body size has nothing to do with your ability to support patients/clients/etc...don’t let anyone tell you different. #repost "Before weigh-ins for the PDX Winter Barbell Open and the PDX Barbell Club. @the_strength_dietitian Marquis Scurlock has this cut on point! I had a long ways to go in 12 wks, and he helped me not feel like total garbage. I started at 93kg and had to get down to 82.5kg. I highly recommend this incredible man to help anyone with they’re dietary needs. Even in a deficit, I made strength gains. Weighed in at 80.5kg, 2kg to spare! I feel strong, stoked and I can’t wait to break that damn platform! Let’s GO!!!"

Simple zucchini and corn fritters for a #delish breakfast. Add a poached egg and it’s just about perfect. . We should be trying to find yummy ways to increase the vegetables in our meals and breakfast should be no exception. . Grate up some zucchini, add some corn into your fritter mix. These Fudge Brownies are to die for! The picture does not do justice to how good these were. Fudgey, rich, and LOADED with nutrition. They are high in protein, iron, fiber, zinc, Vitamin B6 etc. And you'll be surprised how good they taste. They're simply delicious! Plus they are vegan, if that's what you dig. :) Vegan High Protein Fudge Brownies Ingredients: - 1 1/4 cup rolled oats - 200gm/ 1 can chickpeas or black beans, cooked, rinsed and drained - 1/4 cup avocado oil/ olive oil - 1 1/2 tsp vanilla extract - 1/4 tsp baking soda - 1 tsp baking powder - 1/4 tsp salt - 1/4 cup cacao powder - 1/2 cup date paste or maple syrup - 1/3 cup grated carrots - 1/3 cup chocolate chips (optional, I haven't added any) Method: Blend all ingredients (except chocolate chips) in a food processor for about a minute until batter is a smooth consistency. You may need to stop the food processor once and scrape down the sides. Once the batter is one consistency, remove the blade. Stir in the chocolate chips. Spread the batter into a loaf pan lined with parchment paper. Top with additional chocolate chips, if desired. Bake at 350 degrees Fahrenheit / 170 degrees Celsius for 25 minutes. Let the brownies cool in the pan on a wire rack. Once they are cooled completely, cut them and store in an airtight container for up to 3 days... that is if there's any left! --------------------------------- How to make Date Paste: - 6 pitted dates - 2 cups water Combine dates and water in a small saucepan and bring to a boil. Let boil for 10 minutes with lid on. Remove from heat and let it cool for 10-15 minutes. Place dates and 1/4 cup of liquid in food processor and process until smooth. (You may need to stop and scrape down the sides 1-2 times.) Store in a small mason jar or another container with a lid for up to 7 days.
