I feel like I've been on a roll this week making some of my favorite dinners! Tonight I made a favorite dinner from childhood that my mom used to make-- pounded chicken breasts in a creamy Dijon mustard sauce. I looove this one, and that sauce with the sauteed shallots is mmmm mm! Haven't had this one in forever and I've missed it! It calls for a bit of heavy cream but I used some plain yogurt and a little cashew milk and it worked like a charm.
