Build your own lettuce wraps! Place chopped aubergine, chicken and halloumi in a quick marinade of TABASCO® Green Sauce, runny honey, and olive oil. I just love it when food inventions go right. Tonights little whip up was a chicken, Danish style feta and spinach meatball baked in the oven. Served with brown rice and an avocado cream sauce. Meatballs: 500g chicken mince, big handful of spinach, 200g of Danish style feta, 1 teaspoon if onion, garlic and chicken stock powder @nutraorganics homestyle chicken broth powder is the best. Whizzed together until combined, scoop onto a lined tray and bake at 165degC for around 20-25mins. Avo cream sauce: 1 medium avocado, 125g cream cheese, 100g cream, whizz together and heat until warmed through. Served on rice. As featured in the @norwoodplace Magazine this quick, healthy dish is fabulous dinner inspiration 🐟 The beautiful salmon is from Seafood On Parade • Atlantic Salmon, Soba Noodle, Sesame, Ponzu & Asparagus, serves 4 • 4 x 200g skinless boneless atlantic salmon fillets 1/2 cup ponzu sauce 2 tbs grated ginger 1 tbs sesame oil 270g soba noodles 2 bunches of asparagus, woody ends removed, cut into 1/3rds 4 spring onions finely chopped 1 packet roasted seaweed snacks to garnish (cut into strips) 1 jar Green Street Kitchen Kimchi - Thai chilli + galangal • Preheat oven to 220 degrees Celsius. Bring a large pot of water to the boil on the stovetop • Line a high sided baking tray with baking paper. Place salmon fillets on tray. Leave a gap of 2cm between each fillet • Mix together ponzu and ginger. Pour over salmon and bake for 10 minutes (medium-rare), 12 minutes (medium), 15 minutes (well done). Only pour over the marinade as you are about to bake the fish as the ginger will begin to cook the fish if done in advance • Once the water is boiling add soba noodles. Cook for 2.5 minutes then add asparagus for a further 30 seconds. Drain and toss through sesame oil • Remove salmon from oven. Pour the pan juices over the noodles and stir through. Try this sweet chilli chicken stir fry for lunch or dinner! • • • Start by heating two large frypans with 1 tablespoon of oil each. In the one pan, fry the cubed chicken until it is nicely cooked with a hint of a browned exterior. Season it however desired (salt, pepper, cajun, etc.). In your second pan, add onions and minced garlic along with vegetables of your choice (bell peppers, broccoli, mushrooms, etc.). Sauté the veggies for a few minutes until they soften.  Once everything is cooked, add the chicken to the pan with veggies, along with the chilli sauce. • • • Enjoy with quinoa, rice, or on it’s own!

What I eat in a day... One of the questions I've been getting the most about Plant-Based Beginners is "what am I going to be eating?!" . I thought I'd ease your mind by showing you a sample :) . 1)Wake up with Lemon Water I like to start my day with something warm and hydrating. I find that warm lemon water is very easy to drink. 2)Green Drink once hungry I do a green juice daily, but you could do a green smoothie instead. Some days I do both. I use green drinks to 'up' my veggie intake in an easy-to-do manner. I like to keep things light and fresh in the morning, so I have loads of energy to get work done! 3)Mid-Morning Protein Shake or a Fat Burning Latte If I start with green juice, and don't have a green smoothie, a lot of times I'll have my fat burning latte, or if I'm running hot, I'll have a cold protein shake. 4)A Big (Kale) Salad for lunch I love a good kale salad. The trick is making sure you massage the kale with some lemon juice or salt, so it allows the kale to break down and soften, otherwise you kinda feel like a horse trying to eat it LOL ...it gets old fast! 5)Snacking on more Veggies (+ Hummus) When it comes to thriving on plants, the more you can use your intuition the better. So many eat out of habit, or emotions. We'll dive into this in Plant-Based Beginners, but I highly recommend slowing down before snacking and asking yourself if you really need something, or if it's just out of habit. 6)Dinner - Fully Loaded Pizza Dinners on a plant-based diet can be anything, but I do love me some pizza! You can still have pizza on a plant-based diet (and lose weight!). The real question is... Pineapple on pizza?! #ISayYES! 7)End the day with a Shot of Aloe And most nights you'll find me in the kitchen with a shot... of Aloe Vera that is ;) . That's it! What I eat in a day on a plant-based diet! . QUICK dinner inspo... Zucchini chicken pesto bake 😋 As much as I love home cooking the thought of making a meal at the end of the day is sometimes the last thing I want to do. But this meal is so easy & can literally be done in 30mins. • 1x box of brown rice pasta 🍝- I like to mix things up, sometimes I have pulse pasta, or regular or brown rice. Variety is key 🔑 • I took the advantage of @woolworths_au having pre- spiralized zucchini #lifesaver #timesaver & used two packets to add in after I cooked the chicken 🍗 • I cut one tray of chicken thighs- I find the breast can be quite dry & bland so prefer this cut of meat • 1x teaspoon of garlic paste • 1x tub of Red Rock Deli pesto • Sprinkle of cheese 🧀 & baked till golden. 1. While the pasta was cooking I browned off the chicken with the garlic 2. Added the zucchini & pesto to the chicken 3. Once the pasta was cooked I added to the pesto chicken & mixed it all together. 4. Added it all into a baking tray, sprinkled it with cheese & @myhemple hemp heart.... & thoroughly enjoyed it 🤗 ***** If you are making this for bubs who are onto solids, remember to not add salt until you have your own serve. Puree or mash it to the consistency your child is ready for or serve as is for baby led weaning 👶🏼

When you wake up to a gloomy morning and you know you can take a portion of bolognese out of the freezer for dinner tonight 🍝 A good bolognese (this is the red wine and mushroom version from my blog) is one of my favourite things to batch cook. We usually have half of what I make and then freeze the other half for later; I do this a few times over the course of a month with different things like soups, casseroles, curry etc. Variety builds up. Eating healthy doesn’t have to taste bad...ok truth..I ate a whole row of them so not sure how healthy it was😜but couldn’t help it they were so good! This will for sure have to be the next episode of cooking with Keegan😋 . Slice zucchini very thin long way. I used my spiralizer slicer attachment. Sauté whatever veggies you like...I used garlic, spinach, mushroom, and onion. Add veggies to ricotta and Parmesan cheese. Put 1 Tablespoon of ricotta mixture and roll zucchini place in dish with sauce(I always use Rao’s;)on the bottom. Wednesday: PORK & SAGE KOFTAS/burgers/patties 🤷🏻‍♀️with roasted new potatoes and veg.. ~ ~ Very simple dinner tonight, totally fuss free.... (This mama is heading out to a friends house later to discuss and plan a girly holiday next year!! 🤗🤗🤗🤗🤗💃🏼) ~ ~ I realise I did burgers on Sunday (My Lamb, Mint and Feta burgers, for those that missed it scroll back a few posts!) so tonight instead of burgers I made koftas!!! Not that there’s any difference here to be fair other than the shape!...these would have been good as meatballs too with a tomato sauce over the top and served with spaghetti...just to give you another serving option! In fact I think @gemcwade has just made something similar tonight so check out her post too! ~ ~ Anyway back to these all you need is: • 450g pork mince • 1 Apple grated • 2 tbsp fresh chopped sage • 1 small onion finely diced • 2 garlic cloves - crushed • large splash of Worcestershire sauce • 1 egg • 1 handful of fresh breadcrumbs • Salt and Pepper ~ • Simply mix it all together, then grab a handful of the mixture and form into any shape you see fit!!!....meatball, koftas, burger, pattie. • lay onto a lined baking tray and pop into the fridge to firm up for 20 mins. • When ready to cook simply pop under the grill, turning occasionally until browned and cooked through... • you can fry these too if making meatballs and tomato sauce! ~ ~ Right yep need to get a wriggle on and get to my friends - there are holiday plans to be made!!!!! 😜🤗 ~ ~ Tomorrow on the meal plan we have chicken skewers with chorizo couscous so stay tuned for that! Cheers @aldiuk for this salmon wellington 😍 Everything about the puff pastry-wrapped-cheesey-salmon is divine... except the calories in it 😭 391 calories for a quarter of this bad boy and as I certainly did not fast this morning (suffering with a cold which sends my appetite through the roof) I had to allow myself JUST ONE MEASLY QUARTER 💔💔 • If you swipe ⬅️ you’ll see the beast I live with has got the mammoth portion I could so easily devour rn. LOOK AT MY ANAEMIC PLATE. BUT I have some kcals left which I may use to treat myself to some ice cream. • PS look at the crispness of them tatties, maybe I’d make a good housewife after all 🤗 • For anyone who cares here’s the nutrition breakdown 💁🏼‍♀️ Calories: 636 Carbs: 68g Fat: 29g Protein: 26g

Okay so I might not be winning any awards for food photography but I really wanted to share tonight's dinner as it's probably the first time I've ever created something that looks vaguely like the photo in the recipe. I signed up for a trial of @goustocooking a couple of weeks ago and I'm really loving getting home from work and cooking up a storm. This has been my favourite dinner yet - fish katsu with amai sauce and ginger slaw. It was absolutely delicious 👌🏻 The only problem is I end up using every pan and utensil in the flat... it's a good thing I have a dishwasher! The recipes are for two people so I always have the leftovers for my lunch the next day, which also saves me buying sarnies at Coop. 🥣🍁 Idag blev det en höstig nötfärssoppa till middag med en klick créme fraiche på toppen. Kidsen älskade den!! 🙌🏻 /// Recept kommer här: Fräs en finhackad gul lök i lite olja/smör i en stor kastrull/gryta. Tillsätt paprikapulver ca 2 msk, 1/2 tsk kumminfrön, 2 finhackade vitlöksklyftor och låt allt svettas någon minut. Tillsätt sedan 400 g nötfärs, fräs tills färsen smulat sönder sig. Slå över ca 1,5-2 L vatten och 400 g passerade tomater. Tillsätt ca 4-5 msk oxfond och en grönsaksbuljongtärning. Skala 7-8 potatisar och dela i mindre bitar. Skala och skiva 2 stora morötter. Tärna en röd paprika och klyfta 2 tomater. Tillsätt allt i soppan och låt soppan koka tills potatisen och morötterna blivit mjuka (ca 10-15 min). Smaka av soppan med svartpeppar, lite socker, en skvätt balsamvinäger och salt samt toppa med lite persilja. 😍🥣🥫🥕🥔☘️
