I was never a healthy or mindful eater. I grew up knowing that food was a means to fulfilment not nourishment. As a result my health suffered. I slowly started changing the way I ate and cooked. It's the small steps we take every day that change us I feel.
My very healthy and delicious breakfast today is these gorgeous bowls of overnight apple, beet, coconut, chia seeds and oats topped with beet chips.
This recipe is dairy free, gluten free, nut free and sugar free.
Since the apples, beets and coconut are all naturally sweet, I did not feel the need to add additional sugar. .
My simple recipe follows:
3 cups light coconut milk
1 cup rolled Oats
1 small roasted beetroot (grated)
1 tbsp @hunterfoods chia seeds
1 tsp dessicated coconut
1 apple grated
Add oats, grated apple, grated beet and
@hunterfood chia seeds to the coconut milk.
Next morning, you may need to add some more coconut milk if the mixture gets too thick.
Serve chilled in bowls.
Top with dessicated coconut, fresh mint and @hunterfoods beetroot crisps for added crunch.
Feel free to replace coconut milk with any milk of your choice.
