Roasted butternut squash, wilted baby spinach & red onion. Cooked all in Pyrex on convection bake 400° for about 40 mins. Used combo of EVOO spray & 1/2 tsp EVOO, garlic salt & black pepper. Don’t expect complicated shit in the kitchen from me 🙊🤣 Baking is a whole other story 💁🏼♀️👩🏼🍳
Let’s talk about butternut squash for a sec. It gets its orangey-yellow hue from carotenoids. Carotenoids are plant pigments responsible for bright red, yellow and orange hues in many fruits and vegetables. Carotenoids also act as antioxidants in the human body. They have strong cancer-fighting properties, according to the Physicians Committee for Responsible Medicine. Some carotenoids are converted by the body to vitamin A, which is essential to vision and normal growth and development. Carotenoids also have anti-inflammatory and immune system benefits and are sometimes associated with cardiovascular disease prevention.
