I’ve taken my unhealthy obsession with beets and horseradish to a disturbing new level in this Creamy Beet & Horseradish Salad. Recipe below and on the blog. — Creamy Beet and Horseradish Salad Serves 6 — Ingredients: 2 pounds beets, trimmed and scrubbed 1 teaspoon olive oil 1/2 teaspoon sea salt 1/2 cup mayonnaise, homemade or Whole30 approved 2 tablespoons* fresh horseradish, finely grated 1 shallot, minced 2 teaspoons Dijon mustard 1 teaspoon white wine vinegar 2 tablespoons tarragon, chopped 1/4 teaspoon black pepper For Garnish 1/4 cup unsalted roasted pistachios, crushed — Instructions: Preheat the oven to 400°F. Place the beets on a large piece of aluminum foil. Drizzle the olive oil on top and sprinkle them with sea salt. Wrap the foil tightly around the beets and place on a baking sheet. Roast for 65-70 minutes, or until they pierce easily with a knife all the way through to the center. Once the beets are cool enough to handle, rub the skins off using a clean towel or cloth and cut them into cubes. In a large mixing bowl, combine the remaining ingredients. Add the cubed beets and toss to coat with the dressing. Garnish with the pistachios before serving. Recipe Notes * I prefer a little more horseradish in this recipe (closer to 1/4 cup), but I would start here and adjust to your taste.

Try our ORANGE, AVOCADO & CASHEW SALAD to pair with some chicken or just to enjoy on its own. ——Ingredients—— (2 servings) * 2 large orange(s) segmented * 1 large avocado(s) diced * 1/4 cup(s) cashews, raw * 3 cup(s) spinach or arugula or watercress * 1 tablespoon(s) olive oil * 1/4 teaspoon(s) sea salt to taste * 1/8 teaspoon(s) black pepper to taste * 2 piece(s) chicken breast(s), boneless skinless (4-6 oz) grilled sliced (optional, if served as a side) ———Instructions——- 1. Prepare both oranges by cutting off the rind and outer membrane and slicing out the wedges of fruit between the segments. Do this over a bowl and set the remaining juice aside. 2. My go-to snack (or mini-meal) these days! Sardines mashed up in a crapload of mayo, sea salt, and kelp flakes on @jilzcrackerz. . It’s actually pretty challenging to get in enough fats for Keto so I’m learning to do things like use more mayo than I would normally use in things like tuna salad. . Also minerals...I’m no expert but on Keto, so I can’t tell you what to do, but I do know it’s incredibly important to replace elecrolytes whole in ketosis (namely magnesium, potassium, and sodium). I already run chronically low on blood sodium so this is something I watch closely. I’ve been diligent about adding in more sea salt everyday and my bloodwork in the hospital last week showed it’s almost normal (my blood sodium hasn’t been normal in years!)

Try this amazing STRAWBERRY COCONUT POPSICLES recipe by @beamingbaker ——-INGREDIENTS—— • 2 medium bananas, sliced and frozen • 1 can full-fat coconut milk (13.66 oz.) • 1 cup frozen strawberries • 2-3 tablespoons pure maple syrup ——-INSTRUCTIONS——- 1. Add bananas & coconut milk to a blender. Blend until smooth, scraping down sides of blender as needed. Add strawberries & maple syrup. Blend until smooth, again scraping down sides of blender as needed 2. Pour this mixture into a popsicle mold. Make sure to leave about ¼” of space at top of the mold to allow popsicles to expand in freezer. Insert popsicle sticks, or follow instructions for your mold. 3. Freeze for 6-8 hours. 4. Remove from freezer. If needed, allow to thaw for a few minutes. Optionally, run popsicle mold under a bit of lukewarm water to help them loosen. 5. Place popsicle mold on a flat surface & wiggle popsicles out. Enjoy! Try this super easy Cauliflower Scramble! 🍳 YES its textured AND tastes like scrumptious eggs, plus exceeds the nutrition profile👩🏼‍🍳 . {Sauté leeks (or if you prefer onions/peppers) in veggie broth & add some coconut oil if you like a little healthy fat in a large skillet.} {Cut ends off 2 cups cauliflower (preferably thawed from frozen as it’s already blanched) and cut into 1/4” florets (added some leftover broccoli) save the stems for something else - if you leave them on you won’t achieve the eggy texture.} {Throw cauli in skillet with a couple cups of veggie broth - season to taste with curry powder, turmeric, sage/other herbs, & salt/pepper - put top on to steam.} {Once tender mash with wooden spoon as if you’re scrambling eggs. The summer heat was here in full force today and I’m loving it! I’m one of those people that somehow manages to feel cold when it’s 75* outside, so these hot, 95* days are pure bliss to me. ☀️☺️ But even with my disdain for chilly weather, the hotter temps still come in second place to my favorite summer thing-and that’s the food! It’s all those local veggies, fresh fruits and grilled or bbq’d anything that make it my favorite. The food is literally so fresh that you can taste summer with every bite. And since a lot of us would prefer to skip the heavy meals when it’s hot outside, lighter and fresher is a good thing. So for dinner tonight, I decided to take full advantage of fresh produce and grilling season by making a strawberry spinach salad with @kitehillfoods Almond Milk Cream Cheese & pecans(the cream cheese is so good, you don’t even need dressing🤤), garlic + herb white sweet potato fries and grilled bbq chicken. For the bbq sauce, I mixed together: 1/4 C @kcnaturalproducts Mastodon BBQ Sauce; 3 tbsp @sirkensingtons Spiced Ketchup, 2 tbsp Koop’s Organic Yellow Mustard, 1 tbsp @traderjoes Coconut Aminos and about 1 tbsp @365bywholefoods 100% Raw Maple Syrup. Last night I was not sure what to make for dinner. I had ground beef I. The fridge and zucchini that needed to be used up so I made zucchini taco boats. . I cut two zucchini in half, scraped them out, put the ground beef, insides of the zucchini, and taco seasoning, and a little tomato paste in the @instantpotofficial. I used the sautéed function then set it to manual for 4 minutes. While that was cooking I put the zucchini halves into the oven at 375 for about 10 minutes. I manually depressurized the instant pot. Scooped the meat/zucchini into the boats and put them back in the oven for approximately 30 minutes. . It sounds more complicated then it was. Smoked haddock tacos filled with ALL the veggies 🌈 🌈 prepped and cooked this in under 20 mins. You know when you don’t want a meal to end it’s THAT good?? This was a prime example 🙌 I chopped mango, pepper, avocado, cherry tomato and limes and served with rocket leaves. Then panfried the haddock with some garlic and coriander and served in corn tortillas with a drizzle of yoghurt mixed with hot sauce. #fishtacos

A yummy fail tonight. Cooked garlic in coconut oil, added ginger and mushrooms then some broccoli. Added cauliflower rice, spinach, kale, celery, coriander and some coconut aminos and cooked it all up until cooked. Added a couple of eggs on top- I was hungry! Good squeeze of lime, dash of fish sauce and sprinkle of chilli flakes. After a few days away from home and our normal routine I did not feel like cooking last night. I ended up making this very easy meal and it did not disappoint. . I roasted Japanese sweet potatoes I. The oven, Brussels Sprouts in my @breville, and cooked the chicken thighs on the stove in my new favorite @greenlifeus pan. As always I served it all over a bed of arugula. . Bone broth day! Actually bone broth dayssss...since this will be bubbling and getting delicious and nutritious over the next 3 days. Do you make your own bone broth? I keep a gallon ziplock bag in my freezer and collect bones over a few weeks and when it’s full, it’s time to make a batch. Thank you for the share of my recipe @iquitsugar recipe below 😀 ・・・ RAW CHOCOLATE CHEESECAKE 🍓 I am thrilled with how this turned out! creamy, chocolatey and light. This paleo, vegan raw delight is a little masterpiece from my kitchen to yours ❤️🌿 Base: 1 cup natural almonds 12 dates 1 tablespoon dried coconut 4 tablespoons of cacao 1 teaspoon vanilla extract Pinch of himalayan salt 4 tablespoons of melted coconut oil Blitz to doughy crumb Line the base of spring form pan with baking paper, spray entire tin with coconut oil spray. Tip base mixture in and with wet hands press evenly to form cheesecake base. Roll a glass over for nice flat finish. Pop in freezer. Filling: 2 cups raw cashews (soaked overnight in water in fridge. I soaked my for two days, longer the soak the creamier your filling) 1/2 cup rice malt syrup 1/2 cup water 3/4 cup cacao Tablespoon of vanilla extract 2 tablespoons of lemon juice 1/3 cup coconut cream 1/4 cup coconut oil (no need to melt) Pinch of himalayan salt Blitz together for a few minutes until it is really creamy and smooth. I have a mini processor so I split ingredients into two batches. Pour filling over base and set in fridge for a few hours. Run a knife around the sides to separate then open the spring form pan and lift out. Run a large knife under the baking paper to lift cake off and peel half the paper off, pop on serving plate and slide paper out. Top with fresh berries and grated organic 70% or darker chocolate. Going out to eat on a #Whole30 is not that easy, unfortunately. I know some restaurants that are more amenable to modifications and fortunately @busboysandpoets is one of them. First, I checked out the menu - salads and burgers (no bun or cheese, obviously) are good options. Then, I determined how I could modify to make an item #whole30compliant and what sounded best to me. Finally, I packaged up my own condiments (in this case @primalkitchenfoods ranch dressing and @tessemaes ketchup) in tiny containers to bring to the restaurant. It feels a little silly, but I'd rather bring my own dressing (or other sauce) than have bland food! This delicious treat is amazing but may also be a little tough on the belly for my IBD friends. I tend to stick to just a handful or two. More than that, and my body says no thank you. - - My father-in-law has a giant garden, and kale is his favorite vegetable. We eat it as salad, in green juice, in soup, and as chips! He’s found ways to grow it almost year round. - - My in laws make these chips by tossing them in olive oil and seasoning. They lay them on a cookie sheet lined with aluminum foil and bake them at 250 until they are dry and crispy. Sometimes this only takes 30 minutes, sometimes several hours. But they sure are good! Fancy dinners don’t have to be hard! Lobster tails were on sale so decided we should treat ourselves. Use kitchen scissors to cut the lobster tail and prop up the meat above the shell. Top with @fourthandheart ghee and @traderjoes smoked paprika then broil in the oven until meat is no longer translucent. About 6 - 10 mins depending on the size of your lobster tails (these 4 oz ones took 7 mins). On top of some arugula and aged balsamic. This is one of the many reasons I love summer. It’s Monday and I wanted you to have a really great week, so I made you this Bacon, Pineapple & Sweet Potato Hash. Small issue though- I kind of ended up eating all of it, so I need you to go ahead and recreate it using the recipe below (or link in my profile). Thanks in advance, and have a great week. —- Bacon, Pineapple & Sweet Potato Hash —- Servings 4 —- Ingredients: 6 ounces sugar-free bacon chopped 2 pounds sweet potatoes peeled and cubed 1 medium red onion diced 1 jalapeño seeded and diced 2 cups fresh pineapple cubed 1/4 cup fresh cilantro chopped 1/4 teaspoon cinnamon 1/4 teaspoon sea salt — Instructions: In a large skillet, cooked the bacon over medium heat, occasionally stirring. Once crisp, use a slotted spoon to transfer the bacon to a paper towel lined plate. Reserve 2 tablespoons of the fat in the skillet. Add the sweet potato to the skillet and stir to coat in the bacon fat. Cover, and allow the potatoes to cook undisturbed for about 10 minutes. Remove the lid and stir in the onion and jalapeño. Cook until the onion is tender, about 7-8 minutes. Add the pineapple, reserved bacon, cilantro to the skillet. Season with salt and cinnamon. Continue to cook for another 2-3 minutes, until the pineapple is heated through and the potatoes are completely tender.
