AND impress everyone on the next cooking party 🎈🎉 ⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ 1️⃣ Sweet potatoes and our normal white potato 🥔 have except the name - not a lot in common from biological standpoint. They both belong to completely DIFFERENT botanic families 🌿⠀ 2️⃣ Really cool is that sweet potatoes are PACKED 💥 with rich vitamins and fibers. Before I start naming all benefits here, simply remember: HEALTHY AF🕺🏼⠀ 3️⃣ The leaves are edible! Even if we never see sweet potato 🍠 LEAVES offered in the supermarker.... the green parts are healthy too.⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ That‘s it for now. Vegan butternut squash soup 🥣 Had to make a vegan butternut squash soup a couple weeks ago and I loved it! @thespruceeats has a great recipe - I just added my own spices! 🌶 Ingredients: * 2 tablespoon olive oil * 4 large garlic cloves (finely chopped) * 1 cup yellow onion (finely chopped) * 2 celery stalks (chopped) * 2 large carrots (finely chopped) * 8 cups chopped butternut squash (peeled, seeded and chopped into 1-inch cubes) * 4 cups vegetable stock * 1 tsp cumin * 1 tsp coriander * 1 tsp curry powder * 1 tsp old bay seasoning * Salt and pepper to taste Directions . * In a large stockpot over medium heat, heat the olive oil and sauté the garlic, onions, and celery, stirring often, until soft and fragrant, about 5 minutes. * Add the carrots, butternut squash, and vegetable stock. * Bring to a boil, then reduce the heat to low and simmer until all of the vegetables are tender, about 30 to 40 minutes. * Working in batches, transfer the soup to a blender and process until smooth. Return the soup to the pot. * Add your spices, stir, and enjoy

Oatmeal Muffins (Zucchini, Blueberry) 1/2 cup oven-roasted, quartered zucchini (about 4 oz) 1 whole egg 1/4 cup fresh blueberries 2 packets Stevia** 1/2 cup instant (quick) oats In a small bowl, mash the roasted zucchini. Beat the egg in a cup with a fork and add it to the zucchini together with the balance of the ingredients. Combine well and divide evenly among 6 muffin tin cups. Bake at 175C (350F) for about 15-20 minutes, or until the egg sets. Yields: 6 servings **TIP: This recipe lends itself well to batch-cooking / freezing **You may wish to increase the sweetener Approximate Nutritional Content per Serving Total Calories: 46 Net Carbs: 7g Fat: 1.3g Protein: 2.2g Again, I am having some fun experimenting with the readily available ingredients here in Cafayate (though the fresh blueberries are a bit of a rarity at this time of year) which also agree with my current digestive system status. Cookies make the world a better place🍪🥛 #levander #levandercookies with #lemonzest 🍋 - 2 evőkanál lemorzsolt levendula - 200g olvasztott vaj - 100g porcukor - 300g finomliszt - 1 csomag vanilliás cukor - 3 teáskanál vaniliaaroma - 1 teáskanál sütőpor - 1 egész citrom lereszt héja A porcukrot keverjük ki a vajjal, majd adjuk hozzá a többi hozzávalót! 10-15 percre tegyük be a hűtőbe az összeállt tésztát, majd lisztezett felületen nyújtsuk ki és szaggasunk belőle tetszőleges formákat! Süssük 20-25 percig 150fokos sütőben!
