Many of you know that I’m all about natural health and wellness, clean eating, a chemical free lifestyle, gut health, essential oils...and I could go on but you get the picture. I’m also a pediatric occupational therapist and I homeschool my two kids. This lifestyle started for us about 15 years ago and continued to grow when I had my daughter 11 years ago. I’ll save that story for another day 😀. As I was cooking some okra today from my parents’ garden in our cast iron skillet I started thinking about all the things we do and why we do it. Some days it would be so much easier to just cook something from a box or go to a fast food restaurant. On those days like today, when all I wanted to do was come home and take a nap 😜. But the reasons why I can’t do that, go back to the story that I’ll save for another day. Granted, there are days that we do go out to eat and don’t eat organic, and days that I do pop some organic chicken nuggets and fries in the oven and call it dinner 😀. But for the most part, we are cooking from scratch and have at least two vegetables for lunch and dinner and usually one for breakfast. Side note: I can’t get my kids to eat okra yet but I’m working on it 🤣. My daughter will eat it when we make okra and tomatoes, but not okra by itself. And I love cooking with cast iron; you get a little iron in your food from it and many people could use a little extra iron. Also, the vegetables seem to taste better cooked in cast iron!! Carbohydrates are not bad, they have an extremely important role in human physiology. With that being said, we drastically over consume carbohydrates. I’m not just talking about processed foods or refined carbohydrates. I am also talking about healthy fruits and vegetables. For 2.5 million years we ate seasonally and locally, only eating what the environment provided for us. There is NOTHING normal about eating bananas, which originated in Malaysia, in the middle of the winter. For the most part, fruits and starchy vegetables grow in the late summer and fall seasons, designed to raise insulin levels and help us store body fat for the long winters, where food may not be so abundant. However today we have a sample of all the worlds fruit, 365 days out of their year. Lola doesn’t like chocolate 😱 but she loves Nutella. But Mo won’t buy Nutella because sugar 😱. Life is full of hard things. So I found unsalted hazelnuts and we made our own! I actually ran across@toneitup ‘s recipe right before I threw this in the blender. It’s delicious, so toasty and yum. I added about a teaspoon of maple syrup per my kids’ request and next time I might hold off on the coconut oil and make sure I actually need it but with way you can’t go wrong!
